00:27In a bowl, I crack 3 large eggs or 4 small ones.
00:39I add a glass of plant-based milk or simply water.
00:48Then a tablespoon of vinegar.
00:50This is what will allow the bicarbonate to react and have a well-aerated texture.

01:01Rice flour, chestnut flour, buckwheat flour, starch and half a teaspoon of bicarbonate.
