00:00Preparing meals in advance is what really changes daily life when you eat gluten-free.
00:04Today, I'm making 25 gluten-free protein pancakes that I can use all week like bread.
00:10Soft, convenient, rich in protein and ready in minutes when I need them.
00:15The key to healthy eating is organization. So let's get started!
00:19In a mixing bowl, I pour all the dry ingredients.
00:22Rice flour, buckwheat flour, lupin flour, which is easily recognizable by its color.
00:28And chestnut flour to add a touch of sweetness.
00:36I add a teaspoon of baking soda and half a teaspoon of salt.
00:41I mix all the flours well to obtain a homogeneous base.
00:46In another bowl, I crack 6 large eggs.
00:51I add 2 tablespoons of vinegar, that's what will activate the bicarbonate.
01:01And 2 glasses of water to start.
01:07I mix it well.
01:10I incorporate the flours into the liquid mixture.
01:17I'm making gluten-free pancakes with lupin flour.
01:20It is naturally rich in protein.
01:22I use them on toast, as a side dish, or even in a sandwich.
01:27These gluten-free protein pancakes are perfect for homemade batch cooking.
01:34Lupin flour absorbs a lot of moisture.
01:37So I adjust with a third glass of water.
01:45What we want is a cake batter texture, soft and slightly thick.
01:51I heat a little oil in a pan.
01:57Using a ladle, I pour the batter.
02:00I give them a shape suitable for the bread-grey.
02:02That's what makes them really practical for everyday use.
02:10I cover it with a lid.
02:12This allows for gentler cooking and, above all, very fluffy pancakes.
02:21When bubbles appear and the surface is no longer shiny, I flip the pancake.
02:25And I continue with all the dough.
02:27It takes me about 30 minutes to make 25 pancakes.
02:32This shape is ideal for gris pain.
02:34You can take them straight from the freezer and reheat them in a few minutes without any preparation.
02:41I put them in an airtight bag.
02:43I keep some of it in the fridge for a few days and the rest in the freezer.
02:47It's an excellent alternative to commercially produced gluten-free bread
02:51and perfect for a gluten-free, protein-rich breakfast.
02:54Simpler, more economical and above all with real ingredients.
02:59You don't need complicated recipes to eat well.
