Ground beef over white rice, cooked in bulk and eaten the same way meal after meal, is all over social media right now under the name boy kibble. The protein is a solid choice, and I have no problem with the beef at all.

The white rice is the issue. Researchers who combined several large studies in 2012 saw type 2 diabetes risk rise with each extra daily serving of white rice, and a bowl you eat several times a day adds up fast. Constant rice means constant spikes in blood sugar and insulin, which is exactly how insulin resistance builds.

You don't have to give up the easy routine. Keep the beef, replace the rice with vegetables, and you've turned a trend that pushes insulin up into a meal that helps you reverse insulin resistance.
