Martha Stewart’s poached cod recipe couldn’t get much simpler than in this video. Not only is it prepared entirely in one pan, but it can be cooked and on the table in just minutes, making it the perfect meal to add to your weeknight dinner rotation. The cod is gently poached for about seven minutes in a savory chicken broth with fresh herbs, potatoes, cherry tomatoes, red onion, red pepper flakes, and salt. A squeeze of fresh lemon juice, sliced sugar snap peas, and more cherry tomatoes add a vibrant finish to this healthy, low-effort dish.
