If you’re looking for a quick, hands-off way to cook one of autumn’s most delicious fruits, try Martha Stewart’s easy pear dumplings. In this video, Martha poaches the pears in white wine flavored with fresh lemon, cinnamon, vanilla, and sugar, then refrigerates them overnight in the thick, syrupy poaching liquid to absorb the delicious flavors. She then scoops out the bottoms of the pears and fills them with cinnamon sugar and butter for an extra layer of flavor and moisture before wrapping them in egg-washed pastry and baking until golden brown. Whether you’re serving this dessert for guests or family dinner, top it off with a drizzle of leftover poaching liquid, add a dollop of whipped cream, and enjoy.

00:00Poached pears are so delicious, flavored with cinnamon and vanilla encased in a light flaky
00:06pat brisee. They're delicious. Now we want the skin of two lemons. Cut the lemons in half and
00:13you don't want any pit so use one of these little hand squeezers. Two bottles of a flavorful white
00:19wine. We're using an Italian wine made with organic grapes. One whole vanilla bean. Scrape
00:25out the seeds and make sure you put the whole bean casing too right inside. Two cinnamon sticks.
00:32Don't forget two cups of sugar. Now bring this to a boil on the stove before you add your pears.
00:38Just very carefully drop them in. We're going to cook these until they're tender anywhere from 30
00:45to 35 minutes. They have been chilled in the cooking liquid and then drained into a bowl
00:52then refrigerated overnight until they are really, really cold. And we want to scoop out the bottom.
00:59Just sprinkle the inside of the pear with cinnamon sugar and some unsalted butter. Just a few pieces.
01:07Place the pear right in the center. Brush the edges with egg wash. You want this to be secure and
01:15stay
01:15in place. And it's time to apply the final egg wash and get them into the oven. 400 degrees until
01:23they
01:23are a luscious golden brown. What a beautiful dessert.
