Simply elegant, just like Martha! In this video, watch Martha Stewart make a delicious meal of chicken en papillote with steamed chicken, asparagus, olives, and artichoke hearts. Cooking en papillote involves placing food in a packet of parchment paper, then baking it in the oven, allowing you to cook food without fats or oils. All you need is parchment paper and a baking sheet!

00:00I'm going to show you how to steam un papillote chicken breasts. First make a little bit of sort
00:06of like a vinaigrette. A tablespoon of Dijon mustard, two tablespoons of red wine vinegar,
00:13a big pinch of salt, pinch of black pepper, and a big pinch of sugar. Add about five tablespoons
00:21of olive oil to make the packages themselves. Five or six very thin asparagus, the beautiful
00:28chicken breast, a little bit of salt and pepper, and you can put a spoon of the dressing. Some
00:35tomatoes, some kalamata olives, steamed artichoke hearts, some basil leaves, and a little bit of
00:43feta cheese crumbled. And now to make the package, fold this in half. Go around like this and it'll
00:52kind of hold itself in a half moon shape. That will enable the food to steam and cook. Transfer
01:00this to a 350 degree preheated oven and cook until puffed. I think our chicken is done. They're
01:10puffy. And this is how you would really serve it to your guests. Tear back the parchment,
01:15revealing the beautiful food. Doesn't that look really pretty?
