There's nothing like the first taste of spring. In this video, Martha Stewart makes her seasonal spring risotto recipe featuring leeks, chives, and lemon zest, creating a dish bursting with fresh and bright flavors.

00:00You have a craving for a risotto, piping hot, studded with the first leeks of spring.
00:05Here is a perfect recipe. Heat 8 to 10 cups of chicken or vegetable stock.
00:10Saute two large leeks, the white part only, and this takes about six minutes.
00:15Now, the whole idea of risotto is that you use a short grain, plump, stubby rice called arborio.
00:22And now increase the heat to medium-high and saute the rice until it becomes opaque.
00:28Add about a half a cup of stock.
00:31Now, we're flavoring this risotto with springtime flavors.
00:35Leeks, chives, lemon zest.
00:38Add some salt, some freshly ground black pepper.
00:41Add two tablespoons of butter.
00:43And we're going to add some lemon juice, about a quarter of a cup of lemon juice.
00:47And add a quarter cup of chives.
00:50And add as much Parmesan cheese as you like.
