Step into spring with this easy blender soup that showcases fresh asparagus. 00:00It is time.
00:01Today, my mom is going to help me make a chilled asparagus soup.
00:04It's her favorite.
00:05So you're going to blanch the asparagus tips.
00:09And boiling water for a couple minutes.
00:11And I'm cutting up three big bunches of pencil asparagus for this soup.
00:15There.
00:16It's a nice green soup, doesn't it?
00:17Yeah, so beautiful and tasty.
00:20So now right into the iced water, mom.
00:22So it stops the cooking.
00:24And we're going to saute the onions until they are tender.
00:28Four teaspoons of coarse salt.
00:31And about a half a teaspoon of freshly ground black pepper.
00:34Oh, yeah.
00:35Get the pepper.
00:35Okay, there.
00:36And we're going to add six cups of homemade chicken stock.
00:40It is time.
00:42Okay, so let that come to a boil and then we'll cover it.
00:44Okay, so here we're ready to put these in the blender and make the wonderful puree of asparagus soup.
00:53We have lots already made in our beautiful ironstone terrine.
01:00So this soup is either hot or cold.
01:03And it's served in a large, shallow soup bowl.
