Martha Stewart’s strawberry hand pies couldn't be easier to make. A simple filling of fresh strawberries, sugar, and cornstarch is tucked into Martha's go-to pâte brisée, an all-butter pie dough, then brushed with egg wash and sprinkled with sanding sugar in this video.

00:00Look at these little hand pies. Now, wouldn't you like one or two of these? Very, very easy. Just
00:06cut up a pint or so of strawberries and sprinkle them with some sugar and one tablespoon of corn
00:11starch just to keep those juices from dripping out all over the pies. You need to roll your pastry
00:19out to 11 by 16. So we're going to cut. You can see when you work with pastry, the secret
00:26is
00:26work it cold. This is an egg wash made out of one whole egg and you just brush one half.
00:34This is
00:34what holds the little hand tart together. So you want to put these strawberries right here. Now just
00:40fold this over. Press with your fingers. Now brush the entire top with the egg wash and sprinkle with
00:48sanding sugar. Because it's coarser than regular sugar, it does give a nice crunchy texture to the
00:54crust. A little tiny vent hole in each pie. And this gets popped right into a 425 degree oven.
01:02Bake until golden brown 20 to 25 minutes. And you can see how beautiful they are.
