19:19massive and I'm just thinking there's a little bit more for the guests to do and I just think
19:22there'd be a lot more going on is there any way we could combine the both the the bread making

19:29a thousand and then we'll pay the 3,000 for this so be 4,000 for both activities sure happy

22:49they came to us and said it was going to be 2,000 dirham it's just for the bread alone

22:53to us and said it was going to be 3,500 dirham for the coffee making experience and you hopefully
22:59pleased to know that we got a combined of 4,000 dirham okay and listen you know it was a
23:05risk I hope it
23:06pays off because we really really need to make sure that we have these huge profit margins after hearing
23:12that they spent an additional amount of money on a bread experience as well as the coffee in hindsight
23:17we could have just gone ahead with the drum option and the fact that they went ahead and added that
23:21on
23:21without consulting me does leave me a little bit nervous 9am while half of each team head off to keep
23:32corporate clients happy the rest are on catering duty with any kitchen once you've got a rhythm once
23:45you've got a system you can just smash stuff out quick and easy and that's the secret to running a
23:50good kitchen because if you are running around like loose chickens and just all trying to do
23:54everything that's when it becomes chaos we'll be all right sure we'll have a few practice runs as

40:00feeling about the uh reception to the food from the clients um i think they were disappointed they were
40:07disappointed why were they disappointed i think they expected more okay um danny you you ordered
40:14water and juice yeah yeah we did rather frugal from what i could understand considering
40:21you're about to take the people out into the desert yeah so we basically allocated three drinks for three
40:26courses which i thought was ample but i was never under the impression that it would be announced that
40:31the drinks were limited you know you're in the desert of course did they complain about that also yes
40:37they did yeah you had to buy additional though we did buy additional yeah how much did you pay for
40:41the
40:41additional water there uh she did charge us double i was keen to try and negotiate it down
40:45what's that 60 dirhams in total but that's dearer than the oil they pump okay let's move over to
40:54apex victoria uh and so how and mani you were the corporate team what kind of price point did you
41:02come up with uh before we went in we had a price point of 3500 the max i started off
41:07the negotiations
41:08then i went down to 3000 i believe they were up about 1300 this point victoria did step in
41:13um and bring it down to 1850 they raised their 1300 to 1600. oh i see and that's what was
41:21not so
41:21much a negotiation more a surrender then in a way yes um i i think um i was kind of
41:27ready to go a little
41:28bit high with it but victoria was keen to close there she'd um started saying that she didn't want
41:33um she'd gone over the budget and that that was going to be her final price and she didn't want
41:37to move from that hmm who was negotiating for the food yeah me and megan it was us too so
41:44you've gone
41:45out like a couple of kids saying oh my mum and dad said i can spend what i want like
41:50kids in a sweet
41:51shop yeah we were very aware of the fact as well that you know we agreed in the morning briefing
41:57that
41:57it was going to be luxury you spent the equivalent of a thousand pounds on food and beverage yeah geez
42:03okay now tell me about this dj that you got yourself so the dj we thought the guests were turned
42:09up at
42:10five o'clock um so your negotiation all went wrong when you asked him his hourly rate instead of saying
42:15i need you for half an hour and starting from there so you paid him for four hours work he
42:22did about
42:2210 minutes from what i heard is that right that's correct yeah i assumed that he would probably do
42:27about an hour um but because of the way that what's his name this bloke dj brooklyn i might give
42:32him a uh a partnership yeah right and you knew his recommended retail price was 5 500 you paid 6

42:39dirhams yeah i mean the thing is the dj had been promised to uh the client so we had to
42:44deliver as best
42:45we could and i heard you did you came over a little bit seasick is that right a little bit
42:51yeah on day two when this food turned up uh mona didn't like the canapes she wasn't impressed i think
42:59she was more concerned about the service and the actual food itself they were quite keen to get some
43:04hot food um after they'd have sort of the canapes but i don't know by the time at this at
43:09this point i
43:10was sort of midway through getting it prepared and then i had to go i think you could have got
43:13you should have got some pellards from brighton yeah yeah i think by the time they got it they
43:19weren't particularly impressed all right let's see how we did so karen i know that your client spent
43:2816 000 dirhams on the away day but what did apex spend themselves well they spent a lot best food
43:36best experience lots of drinks 10 279 dirhams and that gives them a profit of 5721 dirhams okay
43:47was there any refunds well i don't think this will come a surprise to them um yes the client wasn't
43:54happy with the food service um and also a refund of 20 giving them a final profit of 2521 dirhams
44:03which is around 554 pounds right so tim your clients spend 21 000 dirhams on the away day
44:14um but what did affinity spend well they spent a lot less actually they spent 6370 dirhams on all of
44:24their outgoings right great gross margin was there any refunds well i don't think it will come as a
44:32surprises team the client gave them a lot of feedback and not much of it was positive they
44:37didn't feel they received the luxury service they were sold and asked for a refund of 60 percent
44:4560 percent giving them a final profit of 2030 dirham or approximately 446 pounds
44:54well you won i suppose that's my rules you're one i'm sending you team building where you'll be
45:05climbing up the 02 walking to the very top where you experience a spectacular view of london

46:30from the top guys i feel really good about winning this task it was a little bit of a shock

46:36going to lie but um i'm really glad we managed to pull through as a team we made it and
46:40we won
46:41another task as i think for me the issue started as soon as it was sold as a luxury i
46:55didn't say hey
46:56we're going to give you roll out a red carpet that's one thing i don't do is over promise the
47:02only reason we lost was because of the massive refunds and the only reason we got the refunds
47:07was because the experience was over promised so whose decision was it to order just three drinks per
47:13person i think what rubbed them up the wrong way is they were thinking they're gonna have this big
47:16luxury experience but to then be told oh the drinks are limited it's the way it probably made them feel
47:21as opposed to what they actually had the fact that danny decided that three drinks would be enough for
47:26a corporate client was a massive mistake whose idea was it to tell them that there was going to be
47:32a limit on how much they could drink it was actually my idea yeah and i stand by it i
47:37think it's a good
47:38idea to be transparent and honest with your guests i think the responsibility for the failure of this
47:43test actually lies with rochelle and joe the clients did not like the food and claim that we over
47:48promised and under-delivered
48:00could you uh send the candidates in please
48:16disgrace this is total disgrace one of the worst results in the tasks i've ever seen in
48:22this boardroom i think it all boils down to the fact that you got fixated on profit these people
48:29paid you 21 000 dirhams you went out and spent only six thousand so on the face of it oh
48:37sounds like
48:37good deal but they knocked you back by sixty percent i feel that i handled the side that i was
48:44in
48:44control of and i left it in joe's capable hands to handle the kitchen the hospitality side but the
48:49main issue was there was a huge discrepancy between the message we got in our morning meeting the mess
48:56mesh from there was we're keeping that eye on the bottom line the message the next day was they said
49:01they'd keep their eye on the bottom yeah that was the message from the morning meeting on the second
49:05day the message was we're going for luxury i at no point said go with cheap but i think a
49:10lot of
49:10people focus on profit in terms of the drinks and obviously scrimping on them it was a collective
49:15decision that we would provide sort of three drinks whilst they're eating that that would be more than
49:20enough they knew i mean i got look the the guy here even he was being sarcastic he was telling
49:26his
49:27team i don't drink too much take it slowly i think what they didn't like was the fact that they've
49:32been sold a luxury experience and then told that these drinks were limited i thought they would have
49:36no idea they just announced it to them then so i i did um low sugar but obviously so so
49:42you know simba
49:46where's your intelligence here these people have paid the equivalent of 450 pound a pop
49:52and then you tell them oh by the way uh you're only allowed two drinks of this and one drink
49:58of that
49:59that's it that starts off actually i'll actually sorry to interrupt but it wasn't simba's idea it was my
50:05idea to tell them to tell them that and i genuinely thought it was the right thing to do like
50:11how can it
50:11be the right thing to do i mean that immediately puts someone's back up yeah i'm not asking for
50:17non-perial i'm asking for water yeah the other thing is as far as luxury is concerned there was
50:24the drums um i actually wanted to do the drums because i thought it would be very traditional
50:28and authentic coffee was never going to be if you had the drums why didn't you do it because it

50:33profit it was always drilled back into me that we needed to make profit the one thing i wanted to
50:38do
50:38was make the team and that's one thing i did everybody in the team did you want the drums
50:43what i've seen you do so far avi is nodding your head like this you remind me of those little
50:47dogs
50:48that sit in the back at the back of my car in the back window you're going to say i
50:53wanted the drums
50:54but my decision was swayed by the coffee because this was a profit task so look um rochelle who

51:44with a high price comes high expectations you do not expect burnt food two glasses of water and a juice
51:51i mean you promise luxury you've got to deliver luxury what about joe ultimately joe was responsible for
51:59the food and the service and that was one of the main reasons the client was unhappy and requested
52:05such a big refund and simba alan the most stupid thing that happened on this task and there were a
52:11lot of things was simba telling the guests their drinks were rationed i mean as you said if that
52:17doesn't wind you up before anything started nothing will quite right i'm going to call them back in here
52:23uh at least one of them is going to be leaving the process today could you send the three of

52:46over promised and under delivered that's that's what's happened here and too much focus on trying
52:53to make a load of money and not using your brains where there is a balance of yeah profit but
52:59also
53:00delivering good service to your client our role was to keep the costs low their role was to keep
53:06the income high to give us that margin and that was our objective and we we smashed that my point

53:13never keep the prices low my point was negotiate to keep the prices low and i made that very clear
53:19profit was a huge part of the task but negotiation was also a huge part of the task and we
53:23negotiated
53:24very well on both terms rochelle what what am i doing here yeah good question i met the brief that
53:29you wanted so why am i here because you also made us look amateur by going to the client and
53:34saying to
53:35them i'm sorry but we only have a certain amount of water or juice available for you so no that's
53:40not
53:40true i said to them with your meal you get two waters and one juice and obviously actually joel asked
53:45me
53:45to go and say that to them and i took instructions because he's one that's in charge but you knew
53:49you
53:49charged them 21 000 dirhams you knew it because you charged them yeah so how why would you tell
53:55them you've got two glasses of water and one juice you must have known that was going to wind them
53:59up
53:59i just think we should have told them at the beginning and said if you want more not a problem
54:04we can get you some more and then i think it would have not been an issue yeah but we
54:07were hosting an
54:08event in the desert i just don't understand how it was never brought up that we will need additional
54:13water but we turned it on its head and fixed it and i was the one that had to go
54:17ahead and fix
54:17a lot of those issues and make sure that they were having a really good enjoyable time
54:21i created the summary it wasn't just you running around on their behalf i didn't say it was just
54:25myself but i'm saying okay we did simba you know who should be fired then unfortunately i think this
54:33task failed because it was over promised to the client and and therefore unfortunately it should be
54:40with the project manager the part of the tour that lacked and we got the worst feedback from was
54:46unfortunately the sub team i don't think that warrants a 60 refund like i'm not the customer
54:53he's the one paying the bill yeah and that wasn't the only thing he complained about and not the
54:58highest one anyway look i don't want to hear anymore i'm sick and tired of this at the moment so
55:02bitterly
55:03disappointed so this is the way i i see it rochelle you over promised and grossly under delivered
55:14simba you were part of that discussion with the corporate you must take some responsibility for
55:20over over promising and you joseph well you were responsible for the kitchen and ultimately that
55:28was one of the reasons for the failure of this task but rochelle you were the project manager
55:38and for that reason um you know ultimately the responsibility of the task lays with you
55:47um but joe the food was burnt and you told oh by the way you can only have two drinks
55:55and the service was poor so it is with regret joe you're fired it's been an absolute privilege to
