01:08you can definitely skip the part na igigisa mo pa siya.
01:11Pero again, like I always say, na kung mapapansin nyo rin dun sa style ko,
01:16when I'm cooking any dish na may sabaw,
01:20if I can turn it into a brace, or gusto ko may searing muna,
01:24I always take the opportunity to do that.
01:27Because, in my experience, in my professional opinion,
01:31it gives you a deeper flavor doon sa dish na ginagawa natin.
01:36Imbis na bland lang, straightforward lang.
01:38At least dito may mga complexities tayong matitikman.

01:43Also, when you're using ingredients like duck,
01:57whereas hindi mo sure kung papano ito pinalaki,

02:07this process would actually mute yung ganong antowards or hindi masayang or masarap na flavor.
