00:01One of my go-to dishes, if you could tell, is curry.
00:07I think it's also one of the favorite foreign dishes natin mga Pilipino.
00:11Chicken curry is definitely a staple sa ating mga tahanan.
00:16But I like curry mostly because of the freedom that it gives me.
00:21It lets me play with different flavors.
00:25And the best example of it is the recipe we're going to do right now.
00:29So mostly, nung mga na-forage natin, yung mga available nilang ingredients dito,
00:34kung susundan mo, parang shade ng green.
00:37And today, we will be doing green curry, but we will be using beef as our main protein.
00:43But kagandahan nga dito sa recipe na to is the flexibility na pwede ninyong ipagpalit-palit.
00:51Pwede nyo gamitin sa isda. Definitely, pwede rin siya sa manok.
00:55I'm basically just prepping up yung pinaka-puso nung ating dish.
01:00We'll be doing yung ating pinaka-green curry paste.
01:04Main ingredients natin would comprise of ginger, garlic, and of course, any herbs na pwede nating magamit na may shade
01:13of green.
01:14Aside from our ginger, we'll be also using yung ating wansuy or yung ating cilantro.
01:21And as mentioned, kanina nung ating siyang pinipig, kailangan isama natin yung roots for the medicinal and of course, yung
01:30flavor na maidibigay nyo dun sa ating dish.
01:32Also, to give us a kick dun sa ating pinaka-paste would be yung ating siling haba.
01:39Meron din tayong nakuha kanina na siling labuyo or Thai chilies.
01:44We could also add that.
01:46Tatanggalin ko lang yung buto para in case hindi lang siya masyadong maanghang for someone na hindi mahilig.
01:55So I'll just remove that.
01:57And of course, yung ating lemongrass.
02:00Ang gagamitin ko lang dito is yung parang pinaka-dulo lang sa may root area.
02:06Tutulungan lang din natin yung ating blender by roughly chopping it.
02:14Traditionally, for a green curry paste, gumagamit sila ng mortar and pestle.
02:20You can definitely use that.
02:22But if you're up for the convenience, blender is not so bad.
02:27So we'll start our paste by putting in yung mga matitigas na ingredients.
02:32So I'll start with our ginger.
02:35Roughly chopped lang din, kagaya na ginawa natin sa ating lemongrass.
02:40And of course, yung ating lemongrass.
02:43And para tulungan din lang siya para mas madali niyang ma-puree,
02:47nalagyan ko ng liquid.
02:48Mga half cup ng ating kakanggata.
03:08Pag inamoy mo, labas na labas na yung aroma ng ating lemongrass at yung ginger.
03:12So we'll just add the rest of our coconut milk.
03:17And then, add the rest of our green ingredients.
03:20Start off with our siling haba.
03:23Next up, yung ating silantro or coriander.
03:27Stir it up lang.
03:31And reminder lang din po, since kasama yung roots, make sure na malinis na malinis ito.
03:38Also, our onion leeks.
03:45And also, some of our kaffir leaves.
03:51So tulungan lang din natin.
03:54Stir it up.
03:55And kung matatanggal ninyo na sa gitna, that's also fine.
03:59And let's give it a quick blitz.
04:12So, nakikita na ninyo yung ating pinaka-green curry.
04:17And, pinaka-uling ingredient yung ating green curry ay yung ating nyog.
04:23So, yung pinaka-sapal niya, isasama ko din siya.
04:27But, please take note na hindi ko pa ito napipigaan.
04:30Gusto ko lang na, syempre, mas maging creamy pa yung ating pinaka-based sauce.
04:35Kaya, yung freshly grated and hindi pa napipigaan yung aking ginamit.
04:40So, lagay lang tayo mga few tablespoons.
04:43So, let's just season it as well.
04:47Lightly season lang po, para hindi siya ma-over.
04:52Some salt.
04:54And pepper.
05:06So, let's just check yung consistency.
05:09And, I'm pretty satisfied na.
05:12Hindi siya sobrang mga tubig.
05:14Hindi din siya sobrang lapot.
05:17And I can proceed now with our beef.

05:54At sa paglilibot ko sa kanilang mahigit tatlong hektary na tanima ng iba't ibang gulay at herbs,
06:01nakakuha ako ng mga sangka para sa isang masarap na beef and green curry dish.
06:12So, ikakat lang natin yung beef natin ng malalaking tipak.
06:16Again, we're anticipating long process of cooking, so gusto mo magwithstand yung piece of meat na yun doon sa buong
06:23proseso.
06:24So, ready na yung ating beef. Ililipat ko lang yung ating curry.
06:37Ready na tayo mag-sear.
06:38Para lang din mas lumalim pa yung lasa ng ating putahe, ibabrown lang natin ng konti yung ating beef.
06:46Kapag isisear nyo yung inyong beef, kailangan hindi sobrang init.
06:51Kung makikita ninyo, marami siyang taba, so gusto natin lumabas yan.
06:57And yung mantika na yun would also add flavor.
07:05So, hanggang may narinig ko yung ganyang sizzle, that's a good sign na unti-unting nagre-render yung fat natin.
07:11Kaya sinabi ko kanina, huwag basyadong mainit yung pan.
07:14Pagsabayin nyo silang umangat yung temperature.
07:18Ayan, makikita nyo, andami na agad na dagdag nating mantika.
07:35Ayan, lumabas na yung iba pang mantika.
07:40Pwede na natin samahan ng ating mga aromatics.
07:43I'll start off with our onions.
07:48And kung makikita rin ninyo yung gilid, may magandang browning nang nangyayari.
07:55And also our garlic.
08:07And also, our curry leaves.
08:10So, lagay tayo yung mga ilang piraso.
08:15And yung ating curry powder.
08:16Kung wala man kayong curry powder, pwede kahit cumin powder lang yung ilagay ninyo.
08:21Mga about a tablespoon.
08:31And then finally, yung ating green curry paste.
08:57And season lang natin ang salt and pepper.
09:12So, aalalayan nyo lang ito ng stock para hindi siya masunog sa ilalim.
09:17And then hanggang fork tender siya.
09:19Pabalikan natin and we should be ready for plating.
