00:07previously i'm going to send you to the stunning scottish island onyeka took the lead we do 2.860
00:14okay and her team scored a top-notch ticket price the executives coming tomorrow have very high
00:19expectations but chaos in the kitchen you've been using crumble instead of breadcrumbs left a bad
00:25taste i'm pretty much underwhelmed at the moment one birdie's tour team focused on fun but left the
00:32kitchen in limbo this food has been waiting here for absolutely ages in the boardroom a win for the
00:38girls left verdi in hot water you went out and lost me bloody money i can't believe it but ollie
00:46you're amongst eight colleagues quite a few of them didn't know what you did got sent packing
00:51you're fired now 17 candidates remain to fight for the chance to become lord sugar's business partner
01:094am good morning good morning lord sugar would like to meet you at the royal exchange in central london
01:16the cars would be outside in 20 minutes thank you guys wakey wakey good morning we've got 20 minutes
01:27we're going to the royal exchange get ready asap thank you all right girls let's get this
01:34what's the royal exchange i'm pretty sure it's in london all i know is that we've got to smash it
01:40i think now
01:41that we've won the first task girls we've got the momentum to keep winning again we're ready we're
01:46ready absolutely
01:57let's just make sure we're doing everything we can to beat the girls this time because i'm
02:00not i'm not sitting in that ball guys honestly we need to turn the tables now we may have lost
02:04the battle but the war's just begun oh i like that i like that i like that today is the
02:09day of always
02:10if you get the victory opened during the reign of elizabeth the first the royal exchange
02:20in the heart of the city's commercial district for over 450 years
02:35good morning good morning sugar this was london's first purpose-built center for trading stocks but
02:45it's now home to an incredible array of luxury restaurants and eateries one of the biggest trends
02:53in the food and drink industry right now is the rising popularity of mini cheesecakes
03:00so for this task you're going to create and manufacture mini cheesecakes to sell to the public
03:08tomorrow i've also arranged each team to meet a corporate client who are looking to place a bespoke
03:16order and it's going to be down to you to negotiate a price now the team that makes the most
03:22profit will
03:23win and on the losing team at least one of you will be fired okay everything clear
03:30yes yes off you go teams have two days to design and produce one cheesecake for their corporate
03:38client yes yeah it's nice and another to push to the public oh i'm excited girls i do love a
03:46good
03:47cheesecake yeah first job choose a leader so is there anybody who would like to put themselves forward
03:54for project manager i'm happy to manage the kitchen side of things but i'm okay not being a project
04:02manager but i if no one else is stepping up i'm happy to manage or be in the kitchen for
04:07this
04:07because i have made cheesecakes i mean i've got zero experience with food and selling food i don't know
04:14if i'd be any good okay so i would like to put myself forward as pm then i don't have
04:18much industrial
04:19manufacturing experience but i do have attention to detail which i think would come in handy here
04:24if you guys are happy with that yeah i feel like i had to put myself forward because nobody else
04:29was
04:30interested in being project manager so i thought i'd take one for the team across the hall i understand
04:36how to set up a production line already elected chief of cheesecakes i feel confident that i'm the right
04:42person to lead you guys for this task professional pie maker phil focuses on flavors
04:47it's okay guys i'm thinking the fruit okay can i can i just chuck in my preference personally from
04:53a consumer's point of view if i had a choice of fruit or chocolate sort of caramel that kind of
04:58vibe i'd always go down that route personally guys i think one thing about savory i like though
05:02is the whole trend about 40 of people consuming less sugars yeah who's gonna buy that who's gonna buy
05:08a savory look at boys one at a time boys one at a time i'm happy with chocolate i think
05:14just
05:15just to crack on phil obviously we've got the design you're the you're the project manager mate
05:19you make the decision guys everyone in favor of chocolate yeah yeah yeah
05:24i mean in terms of taste and stuff like that i prefer fruity yeah fixed on fresh flavors
05:31next for the girls lock down a location to sell from tomorrow so i've been to two of them yeah
05:38um and
05:39my my initial feeling is we should go for greenwich you know for greenwich it's one of the fairest
05:44location from the kitchen i know with the amount of people that go there it would be so much yeah
05:49yeah i put that down too i was like greenwich is definitely i mean the time difference is half an
05:53hour from other locations i think we can make that back up we'll make it over the amount of people
05:58in
05:58there it's ten times is anyone happy with um yeah the project manager decided to go with greenwich
06:05because it's got a lot of people and a lot of footfall but it's also very far away from their
06:09kitchen let's hope they've made the right decision paul b i'd like you to be the sub team
06:14thank you very much you're going to be working with jack asif and steve priority the pie man phil
06:21the most important thing i want to get across before we split up is price nail the numbers
06:25i think for the cost to the corporate client would be bottom in four pound top end eight pound
06:31if we're going to go cheap and cheerful then yeah i think that price will make sense if we decide
06:35that
06:35we want to we think a bit more luxurious then we can probably even push that price up a bit
06:39but i'm
06:39guessing the range i've given you i think eight pound if you're paying eight pound for that that would
06:43be top in um so we're going to obviously rely on you guys doing the best you can with that
06:48information
06:50the pricing that he proposed for the corporate client seems a little low i think we could be a
06:55bit more ambitious there we'll see when we get to the corporate client what we achieve lastly we knew
06:59our mistakes from the last one i don't want to be in that firing line again any hiccups let's not
07:03cry
07:03about spilt milk and crack on yeah on the corporate team rachel's going to be the sub-team leader with
07:09amina no onyeka and flo looking to maximize markups on their mini desserts let's touch on pricing really
07:17quickly the girls what do we think yeah on the on the on the math side of things we need
07:23to be
07:23having an 80 markup yeah so for the corporate side we should look at about the 10 11. so if
07:28we start
07:29up there yeah if we do negotiate down hopefully we don't get too low so just to clarify then in
07:35terms
07:35of the numbers for the corporate team let's try and hit the 10 pound mark i know that's quite high
07:39but
07:39let's try and hit that gauge it if it could go a little bit higher yeah um just have a
07:43read of the room
07:44is everyone happy happy yeah absolutely cool guys let's do this let's go let's go 11 a.m today
07:53half of each team will create their sweet treats while the rest attend meetings laid on by lord sugar
08:03flo do you have any experience pitching to corporate clients yes the previous job used to
08:07pitching to all sorts of clients in the corporate world so i'm more than comfortable to do that again is
08:12there any point you want me to step in or do you want me to just intact like you tell
08:16the only
08:16thing not to come in on is when we're negotiating okay east london look at all of this there's so
08:26many flavors at the test kitchen designing desserts to sell to the public day one we said we wanted
08:3280 percent markup the girls so strawberry is 60 pence per 100 grams mango is 90 pence per one
08:37if i was going to go with choice it'd be strawberry i think strawberry cheesecake when we go oh do
08:44you
08:44want a strawberry cheesecake it's just boring to make it a bit edgy i don't know mango mojito vibe so
08:52oats a bit of mango mash that up a bit of that up a little bit of mint you know
08:57we can be oh it's
08:57a sunday yeah mango mojito is really good i just think people will go for it just to point out
09:03the
09:03mint is 175 okay but if we're just doing it as a topping we won't need as much yeah that's
09:09incredible
09:09i like it and i hate mango and it tastes really good oh my god that's actually really nice i
09:15really
09:16push the mango obviously adding the mojito vibes as well so it's a bit on trend but also it's still
09:22cost effective and most people like mango on the other team we're going to have the simplicity
09:28making it slick and elegant experimenting with chocolatey cheesecakes so how i see this we've
09:33got the white chocolate fills half of the boys kind of feels a little bit more premium i see a
09:39pink
09:39filling just one just one if we maybe go more ready than just pink no i'm not happy with that
09:45red
09:45doesn't say quality it says tack phil look guys look i'm a massive fan of biscoff right and guys look
09:52try this tree yeah think about think about this right this this filling with some white chocolate and a
09:57hint maybe of that cut half halfly cut like this no i am a little bit concerned about it being
10:02too
10:02sweet guys i'm gonna go white chocolate and cranberries on top what about the popping candy just to give
10:07it a little bit of a i don't know about that that that popping candy could work let's try it
10:14do you know i love the way that pops in your mouth i got the impression that verdi wanted to
10:19take
10:19over i got the impression that he didn't trust me we've gone with a simple item it has to be
10:23done good
10:23and that every single one has to look absolutely perfect so just to clarify guys we're going for
10:27190 units of this cheesecake that's roughly about 210 pound okay so our cost per unit at the moment is
10:32about is it's about one pound 20 pence ish how many cheese cakes we aiming for for sam raj felusha
10:40and
10:40moora i think we should be aiming for 225 as much as we can sell and make next on the
10:46menu let's go
10:47the figures let's make this work maths so the pre-mix that's 80p by 225 is the cost 90 grams
10:54by 225
10:55is right just yeah how many grams are in a kg 100 100 so that's not there's a thousand thousand
11:02but that's a lot of kg i know but look how much we're making right every one kg think about
11:08it
11:09we are making 200 200 i know that's what i'm saying so every one kg just let me finish two
11:14thousand
11:14grams makes only 20 cheesecakes that's all yeah so it's two thousand grams is going to make 200
11:23cheesecakes no it's not we need 90 times 225 yeah we need to know what to order but i can't
11:29hear all
11:29the chat and i do think we're getting it wrong so i'm just going to think in my head i
11:34know raj is trying
11:35take over figures but i'm also trying to calculate in my head so i'm just jumping in i feel like
11:40it's
11:40better than coming out with no figures or not the right right amount of mixture for tomorrow so it's
11:45actually 20 20 kg okay so we have our cheesecake ingredients totaling 252 pounds and 65 cents totaling
11:53about one pound ten each central london corporate client for the boys team right guys just to be clear
12:03i'm going to come in with the introduction top drinks brand innocent so we'll start with 995 and
12:09see where we lead to but knowing this client very big on fruit sustainability what do you guys think
12:16i honestly think go with the indulge rather than being innocent let's just not pigeonhole ourselves
12:20let's say we are a sweet specialist cheesecake company we don't have to say we're chocolate
12:25specialists anything like that then we can fact find from the client and then we can make it bespoke
12:29for them yeah right let's go and get a deal come on let's go across across town it's to celebrate
12:40um
12:4110 years of us being here on the south bank the girls get the lowdown from the london dungeon
12:46so the brand is scary fun something fun something yeah yeah now in terms of our um of our cheesecake
12:53um cover the fact that obviously we are a premium cheesecake um producer um for 50 we um look at
13:0015
13:00pound per cheesecake essentially looking at 750 um for the full order that's a little higher than we had
13:07anticipated how important is that sort of bespoke and premium i guess sort of treating your staff obviously
13:14really important but we we do have budget so i'm happy to do a slight reduction on cost um but
13:20obviously
13:20we do source the most premium ingredients so if we can settle on 700 that would be fantastic
13:27it's a bit of a stretch still okay well we look it's it's obviously challenging for us but you know
13:32obviously we've got to i've got to pay my staff but um we're making them fresh in the morning 6
13:37.90 is
13:38honestly the last we can go how much is that okay it's about it's about 13 down 50. okay but
13:44we're
13:44expecting something amazing don't you worry flo aimed to get a great price from her corporate client
13:51and she did that but in doing so she set the expectations really high now they've just got to
13:56deliver heading up the boys pitch sorry what was your name katie katie and sam so nice to meet you
14:03yeah brilliant to meet you company director paul b i know you guys are more innocent but we like to
14:10indulge you know we specialize really in chocolate cheesecakes and that's our kind of our main thing
14:16we're all about helping people get more fruit and veg into their diets yes so hearing chocolate makes me
14:23i get that but obviously coming from our side and it's all good and well having you one or five
14:27a day
14:28but life is all about balances and i'm really hoping that the chocolate theme will just give you that
14:33little bit of a naughty kick that you're after we're quite focused on fruit and veg obviously yeah could we
14:39maybe have chocolate and fruit together our brand is about fruit and veg so for us it's a very clear
14:45brief yes that we want to celebrate fruit and veg so can i just jump in there and say that
14:49if you
14:50want some element of fruit in there then we can definitely see what we can do around that so the
14:53starting uh price for our bespoke packages is nine pounds 95 per cheesecake no absolutely not it's five
14:59pounds 50 for the 70 cheesecakes i'll tell you what how about for six pound 50 okay which is kind
15:05of in the
15:05middle do it for six pounds you make the 70 75 how's that it's a good deal six pounds and
15:1075 there
15:11we go uh 450 pounds total i believe that's fantastic thank you very much it was a car crash they
15:19kept
15:19pushing chocolate to the client who didn't want chocolate i mean you don't need to know much about
15:24this client except come into their office and see his fruit and vegetables everywhere why would you offer
15:29chocolate to a client that said no not once not twice but three times that was there they were a
15:37tough customer in some way i i i don't actually think that went well at all do you know i
15:41think
15:42that was an absolute car yeah i do you why was that i think i think so i think i
15:45think we started
15:46started off by insulting the client um and then i think from the price perspective obviously remember
15:50to be managing it it's gone from we were nine pounds it's gone straight down to six pound 50
15:54that's that's my opinion yeah no i fully take those there's some things in there that you know
15:58maybe i didn't pick up on 3 p.m 50 cheesecakes just under 14 pounds per cheesecake while felucia gets
16:10feedback from her corporate team their branding is red and they really want it to be fun scary also
16:17checking in with his sales squad we managed to secure a deal project manager phil 75 units
16:23um six pound ago it started off at 9.95 but the client was then at five pounds it was
16:31a bit of two
16:32in and fro in i believe um asif you came in at six pounds 50. that was i mean that
16:37was you you came in
16:38at 650. oh was it and then they said they said they weren't budging on that listen paul i just
16:43need you
16:44to give run me through the the hard facts there was a smoothie company with a lot of fruit and
16:49veg ethos
16:50okay the six pound was a bit lower than i was expecting yeah i would definitely concur with
17:05that because we're looking at four to eight but this is a corporate dude we could have pushed them a
17:08bit
17:08promised them something pretty special
17:12five p.m
17:17tasked with creating a cheesecake to match the premium price point i thought it was chocolate
17:25for lucia's half of the girls we've got our filling in here we've put a bit of popping candy and
17:31i think
17:31the red should go in with the popping candy do you want to mix the red in yeah let's give
17:35that well
17:36is it too much what do you think so i can't do anything but truffle somebody else let me have
17:40it okay let me try it let me try it one second guys 14 pound cheesecake i'm at a restaurant
17:4614
17:46pound cheesecake absolutely not okay can you try the fig in here please no put the fig in here so
17:53it just
17:53you know guys please can you put the fig in there and can we try the fig what about a
17:58malteser like
17:58what about a malteser yeah crushed maltesers let's not let's try and keep it simple yeah also can't keep it
18:05simple because it's 14 pounds one second i think you should go with a fig as the main ingredient look
18:11and then i feel like the client is looking more for show rather than rather than taste did not specify
18:17taste felucia outlined to her team these cheesecakes need to look good but not necessarily worried about
18:22the taste if i was going to pay 13.80 for a cheesecake i want them to look good and
18:27taste amazing
18:31i highly recommend that we use the dried dragon fruit uh possibly avocado cooking up a concept for
18:39their health-conscious client the boys what about guys mashing the avocado piping it into the core
18:45you've got a green core on a white on a white cheese it'll create a beautiful consistency i think
18:50we need something to complement the uh dragon fruit dried apricot dried apricot small diced dried apricot on
18:55top it's giving us the orange we've got the purple slice it through we've got the green listen i'm
18:59looking at this table and i can't think of anything else which is going to enhance this product can we
19:02see the colors yeah can you see the innovativeness bang you know i think we've pulled a bit of a
19:07masterstroke there quite unique ingredients dragon fruit apricot an avocado filling i hope it tastes
19:16better than it looks how's that tasting for you know it's quite nice paul what's our overall cost for
19:21this please 194 pound and 50 pence cost per unit is approximately two pound 40. i'm really pleased with
19:27that 6 p.m we're gonna make these at two pounds per cheesecake is everyone happy with that yes recipes
19:35prepped let's go tomorrow teams must push cheesecakes to the public and deliver on promises to corporate
19:49clients 3 a.m come on guys let's get up up up up right morning campers it's early doors and
20:05we're
20:05going cooking all right cheese caking are we excited sounds good mate for both teams when you're
20:16putting the filling in the tins you can either put it in by spoon or you can use a piping
20:20bag an early
20:21morning master class in making cheesecakes to make the base you need to crush biscuits so they're really
20:27fine if you've got chunks of biscuit it's not going to press into the base as well and it's more
20:31likely to
20:31break and crack cooking up a strategy project manager phil the first thing we're going to do
20:37is we're going to set up a little production line we're going to be crush all the digestives yeah i
20:41just make a suggestion put it in a piping bag and smash it with a rolling pin well i don't
20:45want to
20:45break them pipe bags we've only got four okay so use uh metal bowls with the rolling pin but once
20:50we've
20:50got our production line we're getting our biscuit bases baked off make sure that they're compressed i'll make
20:55sure everything's ready for the filling and that should be the easiest side of it but we need to think
20:58smart and be nice and quick and efficient please no messing around we've got tight deadlines we have
21:02to get this done absolutely working on a gory garnish for their corporate order make the pretzels black
21:12the girls i just ate one oh my god teeth stain teeth stain felicia no no to the black pretzels
21:22teeth
21:23stain does it we just tested it even your tongue's gone black okay okay but is that not an experience
21:29with your tongue out is that not an experience what for them to have died yeah that's for 30 seconds
21:34corporate team yeah you guys listen to me for one second yeah the pretzels have too much dye on them
21:39right i know this is a stretch but is there a way we can play off the dye being a
21:42part of the dungeon
21:43weird experience if their teeth go like black a little bit or anything like that no no i think that
21:49it's a corporate event we can't have people's teeth dyed
21:53guys does everyone know what they're doing smash them up boys smash them up in charge of biscuit
21:59bashing three of you should be doing the bases paul you're making sure they're cooked
22:03paul yeah yeah no worries company director paul b all right you good have you crushed them down yeah yeah
22:09proper crush it down that's fine mate how's that looking by the way very yeah that's brilliant
22:15how many trades have we done paul this is our second we're on to our second train well just work
22:20out an efficient way of doing it so we can do it the same every time because we have to
22:23go faster
22:24just a quick one guys just before i throw them in can you get a rolling pin and just really
22:27crush them
22:28down paul i asked you to press them down before yeah yeah we have with hands yes you've got the
22:32skills to
22:33make sure they're compressed just please make it sure it's done i can't be everywhere please yes chef
22:39can that pink go any darker do you want right while felucia's team finesse their filling i'm not
22:46gonna lie it looks more pink then make it darker across town oh come here cheesecake mix made
22:56right guys i'm finishing with this anyone needs a hand if anything music man trey moves on to the base
23:03trey my concern is getting these in and out the oven is the biggest challenge i think we need to
23:08create a more efficient system with this i know it is it is efficient well how how would you make
23:12it more efficient i don't know come on maverde then don't listen come on maverde do as he last have
23:17a look at it if you could suggest a better way of doing it no no but asif is pouring
23:21it into the
23:21trays and then paul is making sure it's all dabbed down or controlling it's because it's curved would
23:25that not then give it a concave thing just as long as it's compact but the brother thing is concave
23:30i'm thinking if we can get like a cup or something sweet i'm looking for efficiencies
23:33okay what i said is go in and do what they're doing understand what they're doing in five
23:36minutes and then give feedback so one thing is i totally get what you want to change it in five
23:39minutes give it five minutes but first off don't just upset the boat because we need to get that done
23:44i'm always looking for creative solutions to problems all the time because if it comes out of the
23:47oven wrong we won't have time to go back that's my main concern guys try and use this oh man
23:53that's so
23:53much better that's what i meant about efficiency
23:58in the girls kitchen does that look all right trying to prioritize cheesecakes for the public
24:04at the moment we have enough um biscuit done for 204 yoga instructor maura so right now i think we
24:12need to get piping okay okay has anybody got a spare pair of hands this is going to take a
24:17lot of time
24:17okay guys we don't have long left on the corporate order so raj can i move you over to the
24:22corporate side
24:23can you help them instead please rachel can you jump back over and ask them how they're making
24:26those trays solution i'm just gonna say we do we're gonna need more hands here yeah i know they've got
24:33to get out in 40 minutes we've got a little bit more time corporate order is priority one so give
24:36me
24:36one minute right this team are spending an awful lot of time perfecting the corporate order i get it
24:43there's a lot of money there but they've also got to make 225 cheesecakes for their public order
24:49they've got less than an hour left they better hurry up just get them done as quick as we can
24:54because i think what's going to happen is we're going to run out of time
24:58take that lump away take that lump away please there's a lump take it away thank you
25:01in the boys kitchen i think the dragon fruit is a nice touch mate i think that looks banging
25:07the big reveal of their corporate treat boys do you have a quick try and then we'll um get back
25:12to it
25:14oh heartbreaking why is it just crumbling i do know that the first couple of trays weren't
25:18possibly tamped down as well as they could sold the shooting the thing is we can give them a spoon
25:23when they're eating it out yeah i just say it's like a dessert like a little crumble like a cheesecake
25:27crumble who's responsible for packing the bases um paul was it all yours did something happen over
25:32here on this something did i know yeah it was a team it wasn't just one who were the team
25:36i think
25:36carol was wanting to know it was massive patting them down so asif was the one putting them yes or
25:41no no no were you patting them no no was jack patting them no no no okay paul emma paulby
25:47okay i don't think these figs are going to look good on the top like that really fiddling with their
25:55figgy puddings for lucia's girls i especially think they look quite cool i think the other
26:03alternative i think i think the filling will be quite cool and quirky enough that if you just have
26:09a nice little delicate like that oh what if on the top because these are all look they look very
26:16monstrous isn't it a monstrous place you guys were like it's but is it going to look edible are they
26:21going to be like for me i know it's monstrous but that's like i think maybe if they were cook
26:27on
26:27the literally on the top that's what's in my head i'm feeling concerned that it's not going to live
26:35up to that 14 pound price type i don't think it's going to look as good as they want yeah
26:40i'm worried
26:41guys what do you think considering where it was i that's pretty good oh that's fine we'll stick with
26:47this then boys if these are not in the box in 10 minutes we can't take them for the boys
26:52guys pack
26:53them out quicker please yeah we'll do it we'll do it we're on time don't worry cheesecakes checked
26:57off do it please everything needs to be boxed up high man phil ponders price they're a little bit
27:04messy and i would say a 10 discount with something which would be sensible okay so paul just just on
27:08that yeah if you were to go out in the shop be straight with me how much would you pay
27:12for one of
27:12them well the thing is we've already passed that bridge we've already sold these okay now is the
27:17question of how much movement are we going to give how much how much worse these look than what
27:21we hope they'd look right i'll promise if it comes to the case you're gonna have to be i'll do
27:24my best i'll do my best as i can okay but i can't promise the world it's really important to
27:29make him understand these are artisan guys they're not exactly they do not expect them to see
27:34perfection we've got 143 for the public they're all boxed up they're ready to go i think we should
27:38hit the road asap right go let's go 11 a.m while phil's public sales squad hit the road
27:48delivering their costly corporate order girls how do you think that went rachel's half of the girls
27:55so i feel a bit nervous going into them and i'm just hoping that when they see the product
28:01we won't we're not going to let them down to be honest because we set the bar extremely high
28:05and it's like they trusted us
28:10at a central london food market all right let's go boys this is our time to shine isn't it setting
28:15up
28:16shop fills half of the boys like it now you're ready to sell listen in terms of pricing six pound
28:27each
28:27two for a tenner are you sure you don't want to start from eight pounds or seven pounds no to
28:32be
28:32honest i've seen surprises from different vendors uh the like a burger or something looking at eight
28:37or nine quid i don't think we can be going in seven eight quid for a cheesecake yeah okay that's
28:40how
28:40i feel we're going to go for the first out listen let's see if we can get the ball rolling
28:43boys yeah
28:44let's do it sell time sell charm sell now let's go let's go let's go let's rock and roll
28:51i feel like in the kitchen phil might know what he's doing but when it comes to business and selling
28:56i feel like his pricing strategy is all wrong and i really feel like we should have started high and
29:00then came
29:01lower later right it's on the boards right let's go boys let's make some noise yeah
29:06still in the kitchen and battling a backlog why does the oven keep beeping i don't know i'm just
29:12ignoring it because i have to get the work done for lucia's girls okay is there any more trays that
29:16need
29:16piping yeah they're all in the fridge one second let me think raj is there any more mixture i'm doing
29:22it
29:22now okay that's fine raj leave that as is raj one second with the mint can you check with more
29:27of
29:28these before you add any mint everyone needs at least two leaves yeah presenting them well can
29:32you pull the bottom off as well yeah box them up fast get them in the fridge two at a
29:36time as
29:37quick as we can yeah you know the corporate team have left before us they don't have an hour
29:42and 15 minutes commute like we do we could have actually left a lot sooner cool awesome are we
29:47good to go yes yes let's do it let's get some lids on and get out can't wait across town
29:53that's going
29:53to be six pounds each okay if you want an extra little bit of drizzle that's only going to be
29:5750p
29:58churning out cheesecakes enjoy it's six pounds 50 for a lot or two for ten pounds thank you for that
30:04guys i hope you enjoy it the boys we're selling them two for ten pounds i don't eat pork are
30:12you a
30:12vegetarian i can do one for you for five pounds um no no no what's that what's that so basically
30:19what's happened is i sold two for ten pounds but one of them was a vegetarian so she couldn't have
30:24the gelatine so i had to sell one for five pounds just to make sure we definitely get the sale
30:28no
30:28mate let's let's keep it six pounds we've got enough customers if we've advertised two for tenner
30:33it's super tenner i would say if we're going if we're moving them at six quid we rub the deal
30:37off
30:37okay no no no i thought the ten pound was an option don't we want to make money no we've
30:41advertised it if you've advertised it you can't do it so listen listen we'll rub that one off we'll
30:46rub it off guys we want to make money okay scrub it off that only happens when we get late
30:50and we
30:50need to we're selling everything for six pounds no discounts unless we have to okay
30:55their pricing structure is all over the place trays charging six pound 50 each some are charging six
31:01pounds some are charging five pounds um it's a bit chaotic to be fair greenwich market all right guys we
31:10made it we're a little bit late but we need to just focus on sales while the girls finally set
31:14up
31:14shop let's get this sold we can do it yes all right guys let's go in central london how can
31:21we create
31:21the innocent of mini cheesecakes putting a healthy spin on their corporate order and i feel like we've
31:28really embodied that wow dental group owner paul m let's put avocado in the middle something different
31:35i'm sure you've probably never heard of that before yeah i must say the avocado in the middle
31:40seems a bit odd which is just an odd the thing with avocado is it's um i think you know
31:45it's it's an
31:46acquired taste base it's quite dry it's quite crumbly it looks like something a primary school class
31:56could have made steve well i mean what i would say is there are i guess a couple of ways
32:01we could
32:02approach this we discussed yesterday obviously uh purchasing the full 75 at 450 pounds yeah what
32:08are you thinking about that i would do 45 at the six pounds and then i'll take the rest of
32:13them at two
32:13pounds is is there anything we can do on the team no that's not so all of this for 345
32:18pounds if we could
32:19do the remainder at 275 i think that's fair because the that 275 352 pounds that's a great deal thank
32:28you
32:28very much see you guys across town okay let's have a look okay delivering on yesterday's premium promises
32:40i'm a little bit thrown by the fig um it's not something i would necessarily associate with scary
32:46fun rachel's half of the girls i think we were going for like with it being open okay kind of
32:51going for the gory effect you set the bar really high yesterday with the expectation i don't think
32:58it's premium enough for that price point um what what sort of price point looking at it now were you
33:06were you expecting i think i would say around the eight pounds per per cake what do you think of
33:13the
33:13actual like taste of the biscuit base the taste is there brilliant it's nice it's a delicious fig oh
33:19yeah so hang on so we've got the buttercream delicious we've got the biscuit base delicious
33:23and we've got the fig delicious well at least it's delicious i just think some i think it's the execution
33:28on some of them that's let them down so fine i'm happy to reduce down to 12.50 but eight
33:34pound obviously
33:35will just be a stretch because of the effort and the staff that we had working on these for you
33:40i think
33:41the most i could go to would be 10.50 11 pound 25 and it's done we will we will
33:47give you additional
33:47five as well um with the 11.25 11 for the additional five perfect that's 11 pound for 50 which
33:54is 550 pounds
33:58greenwich market so it's 7.50 with the caramel sauce mortgage broker raj pulls in the punters
34:06oh it's absolutely stunning i promise you you'll love it you'll be back for more yes please two two
34:11two yeah come on oh three there's three of you come on any tips welcome the pound each tip yeah
34:1917
34:19thank you very much have a lovely day thank you oh yeah can i tempt you in any mango bojito
34:26cheesecakes
34:27yeah it's seven pound 50 but would you be happy to give me a small tip only if you're happy
34:32no pressure
34:32thank you very much cheers thank you can i be cheeky enough to ask for a small tip yeah yeah
34:3950p thank you
34:40very much thank you raj has got all of the audacity in the world she's asking people for tips you
34:47won't
34:47believe it this is not a four-star restaurant it's a cheesecake but you know what fair play to her
34:51she's getting the tips and she's making money across town we've just made the most incredible cheesecake
35:00how much is it six pounds each tuning in to the market and i want literally the whole family to
35:07have
35:07one yeah music man trey so that's five of those that's uh 32.50 okay guys can i just make
35:14a suggestion
35:14right can we push it up a bit to seven quid why are we doing that six kid when we
35:19could bit for seven
35:20maybe even eight because i think the price point is right try let's scrub that off and go for seven
35:24if we can boys let's raise it for 15 and see what kind of vibe we're getting okay if it's
35:31getting
35:31shot down we'll go back down to lucky so drop it off stick the seven on there let's get to
35:34work okay
35:36usually when you come to the end of the day we have started from a high price and we're thinking
35:40about lowering the price how are we hiring the price near the end of the day this is just not
35:46right
35:47so seven pound
35:51five p.m we have got so much left i know what should we do i don't know one hour
35:57till trading
35:58ends you just try and vlog cheap five or even a fiber of cheese i think a fiber for both
36:03teams
36:04we've got 30 cakes left so we need to sell them both now yeah let's go boys a final push
36:09all right
36:10guys who wants some cheese cakes one time only guys one time only so they're seven pound a piece
36:15yep perfect yeah would you like a cheesecake yeah we've got a sale come on come on come on
36:20the movie wig's gonna fly off in a minute do we have a deal of 65 pounds
36:24ladies and there's a deal we'll take 30. if we could do six pound 30 for a unit deal
36:30oh i'm buzzing cheesecake on the move cheesecake on the move all right ladies 10 minutes to go now
36:36that's 42 pounds for six two five pounds tempted one each one more to sell who wants the last cheesecake
36:45enjoy this is seven pound it's the last one of the day pretty much giving them away
36:49three over here guys two one okay come over boys boys we're all sold out that's it girls that is
36:59it
37:036 pm we did as much as we can do obviously with the time that we got here we didn't
37:08sell everything
37:08but i'm confident in the fact that we sold as much as we could in the time that we had
37:12today's did loads
37:13and loads of sales held our price for a long time only thing is we never sold the products out
37:18so a little
37:18bit of concern there how good is that that is unreal that is what you call that is what you
37:25call a power
37:26hour i think overall i'm feeling quite positive about our chances of success i'm not sure we've
37:30made a massive profit margin but i honestly believe that we couldn't have done an awful lot more
37:35more tonight profits digested tomorrow for one team the taste of victory
37:51you can go through to the boardroom now
38:12so for this task i asked you to create mini cheesecakes for you to sell to the public
38:18and a corporate client i think i'll start with the uh gentlemen first today so phil
38:26the pieman you wanted to be the project manager and um we've got paul b yes number two pieman yes
38:35right so you've got the pair of you in the kitchen yeah it's like einstein and stephen hawkins in your
38:42pub quiz i mean can't go wrong anyway is this your stuff here yes the one furthest away from you
38:50it was the one for the public that is the public one yes and this is the corporate one yes
38:58what's the difference they look very similar but the ingredients are very different they do look very
39:04similar to me i have to say anyway tell me what happened at the corporate meeting yes we went to
39:09see a leading smoothie company uh my proposition was we go in there as a sweet specialist so we can
39:14have the option of going down the fruit route um paul however i don't recall that one who was very
39:20set
39:20on the chocolate theme is this paul yes yeah i'll be straight with your lord sugar uh i'll fully take
39:26on
39:27board that was a mistake on my part because they told you yes that we're all about healthy and all
39:32that
39:32type of stuff no i was i'll i'll and you kept going offering them chocolate i was banging the drum
39:39a
39:39bit lord sugar but it's like trying to persuade the vaticans to install a condom machine it was it was
39:46exactly like that so anyway how many did they want a lot of sugar they wanted 70 i made it
39:50to 75 yeah so
39:52so with it with the price um they were looking for they don't have to retire yet as it's got
39:56another five
39:57so we started at 995 they came straight in at 550 paul sort of came in and sort of went
40:03straight in with a
40:04six pound mark um and yeah it was a little bit of a shock to be honest i felt like
40:09i gave enough time
40:10look i mean we'll learn from flo in a minute how to negotiate i'm sure because she told her team
40:16to
40:16shut up right leave it to me and shut up anyway what did we end up agreeing six pounds for
40:2275 all right
40:23um now what did the clients say when you saw that thing they were less than impressed wonder why yeah
40:30we weren't surprised we we knew that when we were going in there it looks like rabbit
40:34so they they said look we think only a proportion of these are actually adequate so well look you sold
40:4145 at six pounds at your price and the rest you you gave them a discount yeah exactly okay right
40:48so you go to the market now yes and you start selling at uh six pounds yeah from what i
40:55understand
40:55from karen there was no objections they seemed to sell quite well yeah yeah so why not at an early
41:03stage put it i have a saying which says smell what sells yeah stick the bleeding price up i mean
41:10lord
41:10sugar one thing i recognized straight on that we could get much more money yeah in that it was all
41:14in the
41:14technique of how we sold it everyone absolutely loved it even though they didn't look absolutely
41:18amazing okay all right listen let's go on to you ladies now um felucia you became the project manager
41:25yes so this is your one yeah right this is the public one yeah yeah yeah okay before we get
41:32on to the
41:33detail of the kitchen right tell me what happened at the corporate meeting they wanted 50 units from us to
41:39celebrate their 10 year anniversary how many units 50 yeah flow you was negotiating i was yes i heard it
41:45was uh you were quite good in the negotiation and from what i could understand we should have asked you
41:51to negotiate brexit actually um because i think you did a good job um so we started at 15 pounds
41:58and we
41:58ended on 13.80 for you we actually got just under i did i heard those figures i had visions
42:05of a cheese
42:06guy a big round thing like that one that feeds eight i mean yeah yeah uh 15 pounds but go
42:13on carry on
42:14landed on 13.80 13.80 you left him with yeah yeah bloody hell and should negotiate more than brexit
42:21i think
42:22the client had very high expectations now i heard from tim that it was chaos in the kitchen
42:29essentially i made the corporate order p1 that was what i needed to get out of the door because
42:33it had the highest markup so in my head but we had the biggest market to go to so i
42:38felt like
42:39the the public team had been forgotten about at the end of the day if we're being completely frank
42:43it was just the cream with mango and mixed into one but it was the mass production no one second
42:49sorry there was four people on your team and there was four people on the other side i'm not too
42:53sure how many more people i could have given you uh no that wasn't that my point is my point
42:59is this
43:00you left the kitchen late didn't you yes therefore you lost time selling to the public yeah let me
43:06let me tell you something by the time you turned up at your location this lot had already sold 80
43:11quids worth to uh the public yeah and that's and you when you were late that is that was definitely
43:17the other side all right um who went off then from the kitchen to the corporates so we went to
43:22the
43:22corporate client and what'd they say when they saw and they were a little bit shocked i think they
43:26were slightly underwhelmed slightly but we did go in prepared for that this thing looks like a venus fly
43:31trap to me it's terrible i don't know whether it's going to eat me when i looked at it rather
43:37than
43:37than me eat it but um what did they say so they ended on is it 11 they ended on
43:4311 11 pounds so we took
43:44550 from them and they we also gave them five so you lost about you lost 140 quid we did
43:50yeah we
43:50originally agreed 690. okay um let's talk about what had the results now shall we karen um what did your
43:58boys spend um well alan they spent 422 pounds and 15 pence on ingredients right and what were their sales
44:08well total sales across corporate market and trade were 908 pounds which gives them a profit of 485
44:16pounds and 85 pence profitable okay tim same question how much did the girls spend on ingredients well the
44:24girls they spent less they spent 408 pounds and 42 pence right now what about their sales then well they
44:33sold a
44:33lot more 1143 pounds giving them a total profit of 734 pounds and 58 pence well done ladies well done
44:44that's
44:45248 pounds difference from my calculations and now from street food to high-end treat food i'm sending you
44:55for some decadent luxury desserts so enjoy and i'll see you on the next task okay off you go
45:13so they kicked your ass really um go off and i'll see you back uh and we'll discuss
45:21this in more detail thank you thank you oh my god oh we deserve this ladies as project manager i
45:42made
45:42sure everyone was doing the right thing at the right time and i think my strategy plus the skills
45:45won this task oh wow lovely i was a top seller yesterday um and i got some fantastic sales
45:54i think i stood out and i should have taken more credit personally nothing's gonna beat our
45:59cheesecake i swear to we were selling them at what 15 quid i'm gassed i knew we beat the boys
46:07because
46:08girls are just better they achieved 13 pounds they went in at 15 we were told to target eight pounds
46:23tops i think you're making it sound like i'm not taking any responsibility hey whilst you're proud
46:27of six seven eight pound in the grand scheme of things that is minuscule i wasn't listen i wasn't
46:32i'm not saying i'm proud of you i think on our side as if should be fired because he contributed
46:36the least um i know i made my mistakes but i've owned up to them i would have got eight
46:41pound plus i'm
46:42i'm confident on that me and steve had it in the back when you jumped in when we were negotiating
46:46you looked at me mate like a little lost puppy i couldn't even see you i couldn't even see you
46:51down from me mate we just started it seems as if paul b just didn't have a grip of his
46:55team
46:56he's jumped in on negotiations and all in all i think he's just had a really bad task
46:59nobody stepped in you're all giving it the big one you're all giving it the big one
47:03but nobody has stepped in i think jack and i was lucky we stepped in team leader phil a sub
47:10team leader
47:10paul both with decades of experience in making pies and we fell flat on our faces
47:26could you send the candidates in please
47:39right the girls they spent less than you they sold more than you in the market
47:44and they made a load of money on the corporate client paul b yeah paul you went into the corporates
47:52yeah and you started off by saying right well we want to sell you cheesecakes made with chocolate
47:58chocolate now don't blame me for that one initially when they said no don't you understand what we
48:04are what don't you understand what we stand for yeah no chocolate is not on the menu but nevertheless
48:10you went on saying well you know all that five a day stuff you know it's all very nice and
48:16all but
48:16sometimes you've got to treat yourself to a little bit i mean what was your thinking it was a mistake
48:22lord
48:22sugar no sugar can i just interject i i think that's correct and if it wasn't for my input into
48:29selling them the fruit dream then i don't think they would even know the 75 the confidence was low
48:35asif asif i don't think you sold the corporate just him no yeah it was me that interjected and started
48:41selling to them about how we could do bespoke fruit options for them i've got to say as well i
48:46don't feel
48:46like there was a very good reading of the room where did you get this avocado from so the
48:51instructions that we were given as a corporate client wanted a filled um they go together like
48:56colleen rooney and rebecca vardy i mean they just don't go do they um i don't particularly think it
49:03was amazing but we did taste it i i think it tasted not too bad i would say i would
49:08not have paid six
49:09pound for this when there's someone says they want a bespoke item it means it's something special
49:15lord sugar the girls managed to achieve nearly 12 pounds for a very similar product well what's
49:19that tell you about you the quality of the product was very similar but there's something they did
49:25that we didn't know but their their biscuit didn't fall apart well sugar this was described as something
49:31made by a primary school child by the corporates and that was very impressive that's that's
49:35disgrace in primary school children actually and it didn't help when you told him it was an acquired
49:39taste taste i tried to sell him off because he said what did you say you told him it's an
49:44acquired
49:44taste i tried to tell you as best as i could i was i was losing battle did you say
49:47it was in a
49:48quiet taste i did so are you actually yeah i mean you eight people here who put themselves forward
49:54in their cvs as intelligent uh clever somewhat entrepreneurial business minded and you screwed up
50:02it's as simple as that so look phil who are you bringing back into this boardroom uh so based on
50:08what i've
50:09heard in this meeting i'd like to bring paul b and asif back into the board what how please explain
50:16the decision well we'll do that later when you come back okay okay gentlemen listen it's not been
50:23good this has it you know what a horrible start in two tasks you know you need to up your
50:29game
50:29chaps anyway you lot go back to the house go thank you all right gentlemen um i'm going to have
50:44a chat
50:45with uh karen and tim and um i'm going to call you back in we're going to have a final
50:50discussion
50:50about this and i'm going to decide who's leaving the process today okay off you go thanks a lot
50:56so what's your opinion on paul b paul b's insistence that they had chocolate really ruined the meeting
51:13and it turned into a car crash they didn't order as many as they could have and they certainly didn't
51:18pay the price they would have so what do you think of phil listen phil's got a background in
51:23pies he should have all the experience for this but he priced them too low and they cost too much
51:28to make this is a profit making task and he didn't focus on that no and asif like his colleagues
51:35i'm not clear what he did i mean other than almost torpedo the corporate meeting by declaring that
51:41the cake was an acquired taste thanks for that could you please send the uh three gentlemen in
52:03right phil you are the project manager you are a manufacturer you make pies pies to me are the
52:12same as cheesecakes as far as i'm concerned there's no excuse there okay and this task failed diabolically
52:19right there's no other way to describe it i suppose literally i would call it a piece of cake for
52:23you
52:24lord sugar i think when you put yourself in a responsible position you're always going to be
52:28in the firing line i feel um not only on this task but on the previous task there's not been
52:33one bad
52:34comment from a fellow candidate towards myself i think that says everything that needs to be said i'm
52:38not worried about what they say about you i'm in the point i'm looking at figures numbers and results
52:42and this thing was made for you absolutely made for you there were some mistakes along the way i'm not
52:48afraid to admit that but i feel in my heart i've done my absolute best your best is not good
52:55enough
52:55was it um asif tell me facts what you did well sugar there are clear reasons why these two chaps
53:03on
53:03my left should be in the boardroom i still cannot fathom why i am here as a project manager you
53:08completely
53:10messed up the pricing strategy we would have won if the guide price was eight pounds as if phil you
53:15are in the industry this is not my industry i was there as a cog in the wheel in the
53:19kitchen helping
53:20you out were you happy with my performance in the kitchen yes or no uh your performance in the kitchen
53:24was it was okay exactly so okay is fine for a novice the fact that you've been on two food
53:30tasks
53:30and you've lost as a sub-team leader and a leader says it already what does it say it says
53:36lack of
53:36leadership you didn't do anything where i thought flipping as if did well he did that he got me out
53:41of it you know i i'm not going over my mistakes anymore but nobody came to me and said actually
53:46paul we could do this or let me do that because you look like you're not doing paul paul in
53:51my
53:51industry we leave things to specialists i wouldn't go to a gynecologist for a brain tumor you guys are
53:56the specialists in this industry and you're cocked up twice it's embarrassing according to everyone
54:01else my my sales tactics about i'm still happy with the price call me whatever but i'm happy with
54:05that price who's to be fired asif these two double firing absolutely two of them yes they're both in
54:11the industry they're both are in the industry who should be fired i believe asif uh should be fired if
54:15i had a hard film who should be fired poby okay listen i'm going to summarize here and i don't
54:22want to
54:22hear any more from anybody i have a dilemma really in the sense that i have two people here that
54:28are in the
54:29pie making business so this should have been a walk in the park for the boys team and it wasn't
54:35the girls wiped the floor with you asif you dropped a real clangor amongst the corporates by talking
54:45about a quiet taste i mean talk about him winding them up badly you finished it off lord sugar if
54:51given
54:52the opportunity i will take on the third task i said i don't want to hear anymore paul yeah
54:59too much joking too much admitting mistakes like a bully in a china shop really
55:09phil you run a big business that makes pies
55:14you're leaving me nowhere to go you really are leaving me nowhere to go
55:18i've got to tell you that i'm struggling here
55:23i have to make a decision out of the three of you paul i admire you for admitting your mistakes
55:31but
55:31there were simply too many mistakes and so it is with regret paul you're fired fair enough mate
55:37thank you very much
55:46okay asif i'm going to take up your challenge because you have no clue
55:51as to what this next task is about yes lord sugar go back to the house you two okay thank
55:57you lord sugar
56:08thank you
56:09the biggest regret is obviously banging on about chocolate but hey it's time to go back make some
56:15pies
56:17so phil's coming back paul b's probably going that would be my prediction i don't know i've got
56:23i've got that little faith in him so i think asif might be the one
56:26no
56:37so come on guys that was intense you do not want to be in the final three seriously serious
56:43word of advice when you go into the boardroom keeping composure it's very very difficult talking
56:47about keeping composure what did you say under pressure oh yeah so i said lord sugar i don't
56:52care what the task is next task i'm going to be pm that's going to be comedy gold that is
57:00what you
57:00call keeping your code under pressure man now 16 candidates remain lord sugar's search for his next
57:10business partner continues next time i need you to create a virtual escape room gameplay that you might
57:21be chased by a native bet role play our village has been hit by a deadly play and in the
57:28boardroom
57:28your escape was about as complicated as a one-piece jigsaw curtains you're fired
