00:04And one thing about me, I always test it first just so you don't mess it up on your first

00:09Alright, let me show you how I did that.
00:11I'll be using ground beef for this recipe, but you're free to use any ground protein of your choice.
00:15Going with some seasonings, fresh herb, minced garlic, and ginger.
00:18Set this aside and get into your tortillas.
00:20And yeah, ignore my two lonely nails please.
00:22Anyways, once you've trimmed off the edges, you're gonna layer it like a lasagna.
00:26Tortilla, fill in, repeat, and finish with a tortilla.
00:28Now you're gonna cut it up into equal squares.
00:31Learn from my mistake.
00:32Don't cut it like a pizza.
00:33Slice it gently like a cake.
00:35When that is done, insert some wet skewers into it.
00:37I put this in the oven to bake.
00:39Then I realized I could also use an air fryer.
00:41Bake this at 350 degrees Fahrenheit for 15 to 20 minutes.
00:44Next, we're gonna make this butter sauce.
00:46All you need is melted on salted butter, fresh herbs, minced garlic, lemon juice, and kine pepper.
00:51Brush your mix on your kebab a few minutes before it's ready.
00:54Don't forget to constantly flip your kebab just so it cooks evenly on all sides.

01:55Now, I recommend using the big size flour tortilla just because it holds more.
02:00I'm using two pounds of ground beef here.
02:02But we have an allergy in the house, so I'm dividing it between these smaller flour tortillas
02:05and these other rice tortillas or whatever they're made out of.

02:08But I recommend using the big ones just FYI.
02:11Now, I got my ground beef, add my parsley, add my pepper, add my onions, some minced garlic,
02:15and all those seasonings right there, yummy goodness.
02:18Trim your nails and take off your julie.
02:20Get it nice and deep like.

02:22Get your tortillas, stack a few at a time, and just start cutting down and make a nice little square.

02:30Make sure your tortillas are cut nicely.
02:32Get your meat placed in the center and start spreading it out evenly.
02:34You want a nice, even layered beef, so that way it cooks evenly.
02:37Now, here on the edge, I just make sure I get all the way up right there, right?
02:40So then smash it down a nice, even layer.
02:42Now, I'm done with that one.
02:43On to the next.
02:44Now, slice it in thirds, nice and easy, so you don't rip apart the tortillas.

02:50Get your skewers, and then put them in the thirds.

02:53If you're using wooden skewers, I recommend soaking it in the water for like two or three hours.
02:57That way they don't burn on the grill.
02:58And then give them a cut, nice and easy.

04:36Let's make the viral tortilla kebabs.
04:38Start by mixing our ground beef with some bell pepper, onion, and parsley.
04:42We're adding some chipotle paste, garlic, and seasonings.
04:45Mix that well until fully combined.
04:47For our tortillas, we're using la comaleada flour tortillas.
04:51These are just the best and have that homemade flavor.
04:53We're cutting them into large squares and layering with the ground beef.
04:57Continue until there's no more meat left.
05:00And now cut that into three pieces.
05:02Press the strips into a block and thread three evenly spaced skewers through them.
05:06Cut in between each skewer to form three kebabs.
05:09Cook them in your air fryer or oven until the meat is cooked through.
05:12Serve them with a fresh and spicy dressing of your choice and enjoy.

05:24But I really thought it was going to be a complete mess.
05:26Because when you got smashburgers, tortillas, melted cheese, I thought the whole thing was falling apart.
05:31But here's the key.
05:32The cheese has to be protected.
05:34So we got meat on one tortilla, meat on the other, and the cheese needs to be sandwiched in the
05:38middle.
05:38So you just got to seal it, press it, and get it on skewers.
05:41And somehow, it works.

05:48In a bowl, combine your ground pork, ground chicken, onion, garlic, carrot, and spring onions.

09:01Food with bare hands was the inspiration behind these.

09:05We're going to start by prepping all our ingredients.
09:07We got our ground beef in a bowl.
09:08We're going to get our red and green peppers.
09:10We're using some of that Melinda's green sauce.
09:12And of course, some of the TFTI's spicy garlic Cajun rub.
09:16Mix that all up.
09:17And then we got to square off our tortillas.
09:19And then we come to the fun part.
09:22You got to pack that ground beef mixture in between each of the layers.
09:26Layer it up.
09:27And then I'm going to cut them down into four equal sections.
09:30Lay them on their side.
09:32Use some of these barbecue skewers that I had laying around in the drawer.
09:35And they're barely long enough.
09:37And then we're going to cut them again.
09:38And that is going to be our kebab.
09:41Look how beautiful that is.
09:43It smells amazing.
09:44We're throwing them on the Traeger at 350 degrees.
09:47I've got some pans underneath to collect all that delicious fat drippings.
09:51And then here they are at about 158 internal.
09:55We're going to go ahead and put some of them more of that Melinda's green sauce on.
09:58And just give them a nice coating and let them finish the temp.
10:01We use some cilantro lime ranch and cover them.

10:15Let me show you how to make it.
10:17Just think of it as a stacked layered Turkish pizza on a stick with a yoghurt dip.
10:20It's so good.
10:21So to start in this ancient food processor.
10:23It's literally about 30 years old.
10:25I put parsley, onion, red bell pepper and tomato puree.
10:28Now you can use fresh tomatoes but this is just what I add at home.
10:31And I love a lot of parsley so I put quite a bit in there.
10:33Mix that with your meat of choice.
10:34I always use 5% beef mince but you can use lamb that works just as well.
10:38And I always season my mince with the Lebanese five spice.
10:41Literally everything I use is in the caption below so don't stress.
10:44So next you want to get your tortillas and cut them into square shapes.
10:47We hate wasting food so use the off cuts.
10:49Put them in the air throw with seasoning and oil and you can make tortilla chips.
10:52They turn out really good.
10:53And then layer up your meat and tortillas as neatly as you can because the layers need
10:57to be even so I use my hands which really help with this.
10:59Before you cut it, chuck it in the freezer for like half an hour and then use a serrated
11:03knife to cut it into squares.
11:04Stack it up and then screw it.
11:06I cooked these in olive oil.
11:07Turn them occasionally so all sides get pan fried and then set up with some yoghurt
11:11and parsley, maybe some min and enjoy.

11:35Next you take your 12 inch flour tortillas, cut the edges off to make it nice and square
11:40and form that meat all the way to the edges.
11:43Stack them six layers high and then cut them into cubes.
11:47Get them skewered up and then onto your grill or smoker.

11:56Making a garlic butter out of minced garlic and some bacon fat.

13:13Tapi kalau korang nak bakar atas dapur aram pun bolehlah lagi sedap.
13:16After lima minit pertama, I sapukan melted butter kemudian bakar semula.
