08:38birthplace of organized tourism in Europe which saw an explosion in popularity in the 1960s thanks to a
08:46group who promoted the island as a health retreat arranging for foreigners to visit and relax in
08:53the favorable climate they named themselves the Havar Hygienic Society and from the start they
09:00attracted wealthy and famous visitors here today most tourists take a 15-minute boat ride from the
09:09capital to the Paklini Islands a six-mile-long archipelago of wooded isles known for its beautiful beaches and
09:18secluded bays the largest island is Sveti Clement and is home to one of the original pioneers of Havar's
09:26tourism this is Palmijana a generational family guesthouse restaurant and garden retreat that's been
09:44welcoming tourists for over a hundred years managed by Romina Menighello so actually my guests are

10:38members work here including Romina's daughter Alma you see it's really nice that we made here the
10:47picture when the guests come that they can see a history of Parmesan how it was and it's a very

12:38just a moment with tourists checking in at the guest house and the grounds needing maintenance
12:44there's a lot to do before the birthday celebrations can start the most important
12:50thing it's Alma's party and we need to get it done
12:59coming up the sailing supermarket making waves
13:03very happy client you see how how happy he jump in the sea and have ours iconic landmarks get set to
13:16host the island's biggest festival it's a busy time in the town and it's busy season for us
13:33hoax has over a thousand islands the majority of tourists exploring them fire passenger ferries that travel from the mainland
13:45others sailed them in style
13:51docked in Havar's harbours and secluded bays hundreds of private charter boats
13:56As their occupants sleep, Alan Yakisic rises with the morning sun,
14:08beginning another busy day on board his floating market.
14:12We have fresh bread, baguettes, three kinds of croissant,
14:17chocolate, marmalade and plain, and fresh fruit, of course.
14:22Joining Alan on board today, a special shipmate.
14:26My daughter, Masha, she's always here, or my son,
14:31but it's good to have some help.
14:33This boat has been servicing Havar's waters for over a decade.
14:38The plan is to go a bit around Pakleni Island, the archipelago,
14:43and we are ready to go, OK?
14:52In peak season, Alan serves up to 150 boats a day.
15:06Hello, good morning. Good morning. Maybe need some bread, fresh fruit.
15:11There's chocolate, marmalade and fresh mango.
15:16Here we go.
15:18Very happy client. You see how happy he jumped in the sea.
15:24He has energy immediately.
15:27Bread.
15:28To bread, Masha.
15:33Too low for bread.
15:36Alan never quite knows who he will be delivering to.
15:40Every day is different.
15:43Every boat is different.
15:46But this is Havar after all.
15:50Last week was a Croatia famous tennis player, Goran Ivanisevic.
15:56Lots of famous singers.
16:00Lots of them came here and buy from the boat.
16:04So, trip lane.
16:07Alan is so popular, his unique service was recently championed in Forbes magazine.
16:13The secret is in colors.
16:16You know, these colors of the boat.
16:20So, most of the people say, wow, we didn't expect that.
16:24A legacy that could sail on for generations to come.
16:28So, maybe not.
16:38But there's still plenty of time for Masha to change her mind.
16:42With his daughter by his side, there's so much more to this job than business.
16:47From the youngest age, they are always with me.
16:50And that's a beautiful moment.
16:52Because after ten years, they will go away.
16:55So, now I must use that moment.
16:59That's my source of positive power.
17:02I love that.
17:04The ship was discovered.
17:07An invaluable service for his customers and lifelong memories, that Allan will cherish forever.
17:19During its history, the island's capital, Hvar town, was colonized by the ancient Greeks, Romans, and Venetians.
17:27and Venetians, before being modernized
17:30under the Austro-Hungarian Empire in the 19th century.
17:36And its mix of architectural styles
17:39reflects this rich and varied history.
17:43This cultural beacon attracts hundreds of thousands
17:46of tourists, many flocking to its center
17:49to admire Havar's most famous buildings.
17:57Making sure operations run smoothly
18:00at all these monuments is Jelena Mičić.
18:04She's a local, raised in Havar,
18:06and has recently been appointed as the executive director
18:09of the town's cultural public institutions.
18:20Jelena is in charge of four historic sites
18:22around the island, each with a program of events.
18:25Today, her duties are beginning 100 meters above sea level
18:30at the city fortress.
18:34So, good morning, guys.
18:36Mateja, Jure, how are you today?
18:38Very well.
18:38Good.
18:39So, we have organized tours, starting at 7.
18:45This medieval castle, built in 1278,
18:48is one of her responsibilities.
18:51Her role was only created a few months ago.
18:54Before then, all these sites were managed by individual teams.
18:58This is new for me, Janelle, all the people and the team
19:02that's working, and we're slowly trying to build a team
19:06that could handle all these situations.
19:08After this season, I'm sure that we'll be much smarter
19:12to know what to prepare and how to handle next year.
19:16But for now, Jelena is learning on the job.
19:21Uh, okay.
19:22Please, when you have some kind of issues,
19:24to let us know as soon as possible,
19:26because like that, we can send someone who can fix it.
19:29Okay, I think that's it for today.
19:31So, let's just open the fortress and welcome some first guests.
19:35Okay.
19:38The fortress is open every day.
19:41And during the summer,
19:42over 100,000 visitors pass through its gates.
19:46We have really busy days these days.
19:48It's peak of the season for us,
19:50so end of July until mid-August, really busy days.
19:53So, we expect today between 500 and 700 people
19:59visiting the fortress,
20:00so let's better open for them.
20:10But just as the first tour group of the day arrives,
20:13there's a problem at the top of the fortress.
20:16For this light here.
20:18Okay.
20:19One of the castle lights is hanging off the wall.
20:22It got out, like, a few days ago.
20:25We're not sure.
20:26Probably people were, like, putting here.
20:30Just, I'm not sure why they're doing that,
20:32because it's forbidden to climb on the walls.
20:34But let me call the electrician,
20:36just to see if he's available to come.
20:40No matter how big or small a job,
20:42Jelena has to be across everything.
20:45Ah, no, no, no.
20:46I don't call you because of the order.
20:48I call you because of the burning light on the fortress.
20:52Okay, moze, huala, chao, chao.
20:56Okay, so the electrician will come later during the day,
20:59so I think we are okay for now.
21:04But aside from her daily duties,
21:06there's a bigger job on hand,
21:08the Havar Summer Festival.
21:10The capital's landmark buildings are the venues for performances
21:13through the summer months.
21:16We have a program parallel to this maintenance of the monuments,
21:21and also that's the first year for me.
21:24This is one of the oldest summer festivals on the Adriatic coast.
21:28For over 60 years, Havar Summer Festival has included art exhibitions,
21:33live music, and performing arts.
21:35With an additional 5,000 visitors expected to attend,
21:39Jelena has a lot to live up to.
21:41I brought the thing for the posters.
21:43Oh, yeah.
21:43So you will have one more task here.
21:47Tonight, a classical concert is taking place in the center of town,
21:51and Jelena is hoping for a full house.
21:55So this is really a new thing for us
21:57because we want to put some information about the events
22:00that we are having in the city.
22:03So I just brought all the posters for all the events for this month.
22:08This is the busiest spot.
22:10So, yes, so this would be quite visible,
22:13and when people enter, they will see.
22:17Posters are going up in every monument in the capital.
22:21So, you have to push us a little bit.
22:25It will be fine.
22:26Yes.
22:26Because this is a cello tape.
22:28Yes.
22:31But you don't have a cello tape.
22:32Yes, it has in the house.
22:33Yes, I will put it here.
22:36So, we will put it in the back.
22:39Okay, hold it.
22:39Yes, I will.
22:41Let's try it like this.
22:46You have to push it a little bit.
22:48Yes, I will.
22:49Okay.
22:49And with a huge number of tourists in town,
22:53she's hoping tonight's event will be one of the summer's most popular.
22:57It's a busy time in the town, and it's a busy season for us.
23:02It's classical music.
23:04The musician is a really famous one.
23:06We could see him singing all around Europe,
23:08so I believe it's going to be a really nice concert.
23:10To get to the concert venue,
23:16Jelena has to cross to the other side of town.
23:20I have to run, and I have other things to do.
23:24I have to go down to the main square,
23:28so I'm running down to see if everything is okay with my colleagues.
23:33With a lot of preparation still needing to be done,
23:36her day is only just getting started.
23:38Away from the capital, running through the center of the island,
23:48a hidden gem.
23:53Fields of lavender,
23:56exploding into color in early summer,
23:59thanks to Havar's sunny climate and dry soil.
24:02The first lavender was planted here in the 1920s
24:06and has been cultivated for its aromatic oil ever since.
24:17Off the southeastern coast,
24:20the Paklini island's name is thought to have come from
24:22the pine resin Paklina
24:24that was once harvested here to waterproof boats,
24:28but that's a thing of the past.
24:29On the island's oldest retreat,
24:33lunch service is still in full flow.
24:36Hello, welcome.
24:38Bubba, you are the group of eight people.
24:40Here, please.
24:41For eight people, you have this nice round table.
24:46And manager Romina Meneghello
24:48is inundated with reservations.
24:50Hello, please enter.
24:52There is your table, the round one downstairs.
24:56Hi.
24:57Tourists stay here throughout the summer.
24:59And its restaurant terrace also caters
25:01for the thousands of visitors
25:03who arrive by cruise ship.
25:06Now August, now this month
25:07is the busiest month in the year.
25:10And now this group is a group from a cruiser.
25:13Please, please.
25:15Hello and welcome.
25:17Hello.
25:17Hello.
25:18Hello.
25:18In a couple of hours, Romina's daughter, Alma,
25:24will be having a party to celebrate her 21st birthday.
25:27But before Romina can start preparing for it,
25:30there's also work to do in the estate's botanical garden.
25:34There was a long time no rain,
25:36so I think there are some problems in the garden.
25:38Like Havar itself,
25:42this island is covered in lavender, lilies and rosemary.
25:47But they aren't here by accident.
25:49Romina's grandfather, Professor Eugen Meneghello,
25:52was a passionate botanist
25:54who set about transforming the island
25:56into a magical garden.
25:58In 1906, he began planting rare, exotic, tropical species
26:04from all over the world.
26:08You see, this is also part of our garden.
26:14Here are mostly the lemons and oranges and figs.
26:19Managing the maintenance of the garden
26:21is Romina's nephew, Pave.
26:23Please come, Pave, I must tell you something.
26:26You know what?
26:26Today we have this birthday party for Alma.
26:29I know, and you are all in the party mood, whatever.
26:32But, you know, there is lots of work
26:34and I need somebody to look after the garden, okay?
26:37Anything specific?
26:38Thank you, Pave.
26:38No, I think only to see if everything's fine
26:42because really without water
26:44and we have these problems with the water,
26:46so just see if everything's fine, okay?
26:49Bye, Pave.
26:50See you.
26:50See you.
26:52Today, this garden is a beautiful arboretum
26:55full of exotic plants,
26:58a lush site abundant with palm trees,
27:01herbs, and citrus fruit.
27:04With Alma's party looming,
27:05all of the daily garden duties
27:07need to be taken care of early,
27:09and it's all hands on deck.
27:11Good that you're here.
27:12Romina needs us to take care of the job today a bit sooner
27:15because she has a big party she's worried about.
27:18So let's get on to work.
27:22I cannot express how much I hate having shoes on
27:25in 40-degree weather.
27:27When we were kids around here,
27:29we were constantly barefoot
27:30because you couldn't keep us dry.
27:33And whenever we would think of it as kids,
27:36we would just run off and jump into the water.
27:41With the party happening this evening,
27:44Pave will have to battle against the intense afternoon heat
27:47to feed the garden's plants.
27:50You just have to take a look around there,
27:52see if anything requires extra attention.
27:54And I'll just make my way around the plants here.
27:57But the lemon and the orange trees
28:03are the ones we're going for.
28:07With the garden maintenance in hand,
28:09Romina is turning her attention
28:11to the food for tonight.
28:13It's a Havar party special.
28:15We are preparing now the gregada.
28:17It's like bouillabaisse with fish and potatoes,
28:21onion, olive oil,
28:22and then it will go on the open fire there.
28:25The gregada is a Mediterranean fish stew
28:29most commonly found on the island of Havar,
28:32a dish that is still traditionally
28:35the centerpiece of any large gathering.
28:37It's an ancient food,
28:39what is left here in Havar with the Venetians.
28:43Fishermen sold the fish,
28:44what left on the boat,
28:45they put in a pot with potatoes,
28:47onion, wine, olive oil,
28:48and it was a very simple dish.
28:51But now we put the best fish.
28:53It's scorpion fish,
28:54it's manned fish,
28:56it's prawns,
28:57it's really a dish of love
28:58and with the best ingredients.
29:03With the first guests arriving soon,
29:05it's now a race against time
29:07to get the party preparations finished.
29:11We will survive.
29:13We will survive.
29:19Coming up,
29:20the nuns of Havar weaving their magic.
29:28And an emotional party gets underway.
29:31a toast for Alma.
29:34A toast for Alma.
29:44In the center of Havar town,
29:51Havarska Piazza,
29:52at 4,500 square meters,
29:56it's the largest public square
29:58in all Dalmatia
29:59and the center of the island's capital.
30:01Blending into the crowd
30:11as she makes her way
30:12through the tourists
30:13is Jelena.
30:15She is in charge of running
30:16the island's summer festival,
30:18a program with over 30 events
30:20being staged
30:21in Havar's cultural monuments.
30:24Tonight,
30:24one of the most anticipated concerts
30:26is taking place
30:27at the Arsenal building.
30:29In this van
30:32is a special delivery
30:33that's central
30:34to the performance.
30:36Our piano is here
30:37and we are very happy
30:40and lucky
30:40that he is here.
30:45A grand piano
30:49of concert standard
30:50is not to be found
30:52on the island of Havar.
30:53So the only option Jelena has
30:55is to hire one
30:56for special events.
30:57They started travelling
30:59quite early
31:00so they came on the mainland
31:02at 4 in the morning
31:03and they were waiting
31:04for the first ferry.
31:07Also when you have
31:08pianos coming
31:09you never know
31:11if it's going to come
31:12in which condition
31:13is it good.
31:14The piano's final destination
31:26is the exhibition hall
31:27in Havar's Arsenal building.
31:33Originally constructed
31:35as a weapons store
31:36it was later repurposed
31:38as a combined shipyard
31:39and arsenal.
31:43And in 1612
31:45it became home
31:46to one of the oldest
31:47public theatres
31:48in the Mediterranean.
31:51In only a few hours
31:52it'll be transformed
31:54into a concert hall.
31:55We have still work to do.
32:02We are setting up
32:04a whole venue
32:05and the artists
32:07and they are all coming
32:08in the afternoon
32:09for the rehearsal.
32:11The stage is almost there
32:13we are still waiting
32:13for some lights.
32:14The piano may be
32:20safely in position
32:21but it is still
32:22in need of tuning
32:23a job that no one
32:25on this island can do.
32:27We are waiting
32:28the guy from Split
32:29for the final touch
32:31so we just have to
32:32make sure
32:33that the artists
32:34are satisfied.
32:36But without a tuned piano
32:38Jelena will have to
32:40cancel tonight's
32:41heavily anticipated concert.
32:43All she can do
32:44is pray
32:45that the tuna
32:46turns up.
32:54Just off Havartown's
32:55main square
32:56is the Benedictine
32:57convent.
33:00Home to a community
33:01of nuns
33:02since 1664.
33:05As well as their
33:05daily religious
33:06observances.
33:14over the centuries
33:15they have perfected
33:16an incredible skill.
33:19The art
33:19of lace making.
33:21The art
33:22of lace making.
33:23made from the fibers
33:35of agave leaves
33:36harvested still green
33:38and no more than
33:39three years old.
33:42Using this thread
33:43is a complex
33:44and laborious task.
33:45of an
33:50radiant
33:50meeting.
33:51It
33:51is a complex
33:52and
33:53as long
33:55as it
33:58is
33:58anti-south.
33:59It's a very heavy job.
34:02But agave picked in a humid southerly wind is more pliable and easier to work.
34:09You have to be careful about that.
34:13Astonishingly, the nuns don't follow set patterns, but each improvises her design as she weaves.
34:20We work on this work that is unique and important.
34:27Every sister has its own expression in work.
34:31We can't imitate each other,
34:35because someone is more or less, someone is more or less.
34:41Havaleis is so rare and precious that it's included in the intangible heritage list for Croatia by UNESCO.
34:49I like to do it and it stops me.
34:53When a work is done, it gives me a satisfaction, something that was difficult and complicated.
35:01This lace has been a symbol of Havale for 200 years and hopefully many more to come.
35:12Just south of Havale town, back on the Paklini island of Sveti Clement,
35:17the final party preparations are underway for Romina and her daughter Alma.
35:23With the final ingredients added, the central dish of the birthday feast is almost cooked.
35:29The best thing of the gregada actually is the potatoes, because the potatoes take all the taste of the gregada.
35:37You know, the prawns and the reds and the monkfish and the scorpionfish, everything is in the potatoes.
35:44In five minutes it's done.
35:46Just in time, because the guests have started to arrive and the birthday girl is there to greet them.
35:53And it's so nice that everybody is here and we will celebrate a little bit now.
35:58Just before the party begins, Romina and Alma take a moment away from the guests.
36:12You think the people will like gregada?
36:15Yes, of course, everybody likes gregada.
36:18Now Alma and Pave are on the staff, this holiday retreat is a fourth-generational business.
36:25And Alma will soon be taking on more responsibility.
36:44You are 21 now. I hope you are proud that you are part of a family which has such long history.
36:51Yes, of course I'm proud. Of course I'm very proud to be part of a family.
36:54And of course I'll give 100% of myself to keep the history and to keep the traditions and everything.
37:07With the gregada finally ready and everyone seated, the celebrations can begin.
37:13We will have enough gregada.
37:15We will have enough gregada.
37:16We will have enough gregada.
37:17We will have enough gregada.
37:18We will have enough gregada.
37:19We will have enough gregada.
37:21After a long, frantic day, Romina and the rest of the family can finally relax.
37:27I'm a little bit tired, but the day was wonderful.
37:34It's Alma's birthday, and it's very nice to see that people are happy.
37:40Yeah, cheers.
37:43And there's only one thing left to do.
37:45A toast for Alma.
37:47A toast for Alma.
37:48Cheers, Alma.
37:50Cheers, Alma.
37:52Cheers, Alma.
38:01Coming up, Havaa's latest summer festival offering proves a big success.
38:06We have got more audience, more people than we expected.
38:13On the northern side of Havaa, Starigrad is one of Europe's oldest towns, a site first inhabited
38:34by the ancient Greeks in 384 BCE.
38:44To its east, the Starigrad plain, the best preserved example of early Greek field division in the Mediterranean.
38:53With individual plots of land separated by dry stone walls.
39:00These fields have remained unchanged since they were first divided, and are still cultivated today.
39:09A remarkable scene, honored by UNESCO, this plane appears on the World Heritage List as a unique cultural landscape.
39:18Back in Havaa town, at the Arsenal building, Jelena and her team are still preparing ahead of tonight's summer concert, and the piano tuner is finally here.
39:37I am relieved, we are all relieved that the tuner is here, so they are still working on it.
39:47The concert will showcase the talents of two of Croatia's biggest classical stars.
39:52Hello, Ilena.
39:54Hi, Darko.
39:55Welcome.
39:56Nice to meet you, finally.
39:58And the pianist, Darko Domitrovic, has just arrived, to check on the piano.
40:07Beautiful, beautiful, beautiful place, and the piano is new and very, very good.
40:23With everything in the concert hall in place, there's just enough time for a quick change for Jelena, ahead of the main event.
40:30Maybe you can also move everything a little bit on the left, because usually we are not on this spot, we are more inside.
40:37In the entrance, the final preparations are taking place, ahead of the audience's arrival.
40:43We are ready, even better that we are inside, because it's raining at the moment, so I think we have a good location for tonight.
40:50With tickets still being sold, they're hoping for a sellout.
40:55Now we have for about 100 people, but I think that we can accept more than 100 for sure.
41:06The audience may have started arriving, but Jelena is still on edge.
41:11When you are an organizer, you never know what's going to happen at the end, because you have to be prepared for everything.
41:18We have got more audience, more people than we expected, so we will wait for 10 more minutes to start the concert.
41:31It's a full house, and with everyone seated, the show begins.
41:37With a rendition of Paolo Tosti's Ideale.
42:05With the concert underway, there's finally a moment for Jelena to enjoy the performance.
42:26Super happy and super excited that everything went well, and I believe people are really happy and they enjoyed.
42:33A successful concert in an iconic building.
42:38Yes, yes, it was really beautiful performance, and people loved it, and it was cool, and I believe the artists dominated this beautiful venue, so I'm super, super happy.
42:49A perfect ending to an eventful evening on Havar, this jewel of the Mediterranean.
42:58With the wealth divide getting even wider, what's it like to live like the other half?
43:13A new series of rich house, poor house starts Sunday at 9.
43:17From meeting a sunbathing polar bear, to learning how to take an Arctic weather selfie, Jane McDonald pole to pole is brand new next.
43:25And thank you for your time.
43:31You
