00:34Yes, I've been given a recipe by Morgan Nailey for lemon pepper chicken.
00:44Lemon pepper chicken. So we've got to start off with some chicken, some boneless chicken breast.
00:52All right, let's get these chickens out. Chick-chick-chickens.
00:57We're going to try to pound. We're going to make these thin sliced.
01:06Cut off some of this excess here.
01:14Buck, buck, buck, buck, buck, buck, buck, buck.
01:23Buck, buck, buck, buck, buck, buck, buck.
01:24Get some of this.
01:26So we've already got this nice and thinly sliced.
01:31So we close this. Now we've got to just pound it a little.
01:35So we're going to take some saran wrap, take some saran wrap, they don't make those things
02:00that they're used to. We're going to wrap the saran wrap around the chicken. I don't even know why we need
02:23the saran wrap. We're only doing this so we can pound this chicken. So pound, pound, pound, pound the meat, pound, pound, pound. Look at that, beating the chicken, hammering it.
02:39All right. All right after pounding the meat we're going to cook. Set this pan up over medium heat and pour in some olive oil.
02:57Plop, plop, plop, plop, plop, plop, plop. There it is. Let that oil heat up. And we prep this chicken. Yep.
03:09Chicken, chicken, chicken. A little bit of flour on here. That'll get a little texture.
03:23Dab on the flour. Dab it on.
03:35So the chicken has a little bit of texture before we get ready to cook it.
03:42All right. Now we got to put our chicken into the pan. Fry it up.
03:49Don't know if the oil is quite as hot as we want it yet. But let's fry this up. And of course we got to, this is lemon pepper chicken.
04:01Whoops. My hand's in the way.
04:04This is lemon pepper chicken. So that means you got to put some lemon pepper in here.
04:11So let's put some lemon pepper on our lemon pepper chicken.
04:21Of course we'll add some accent. Oh, I keep putting my hand all over the damn thing.
04:27Some accent. Damn. I ran out of both things. I got to get more out.
04:35We'll also put a little bit of this poultry seasoning on here too.
04:39That is that. Now we're going to just make this a golden brown.
04:44It's going to take about four or five minutes each side to cook.
04:47So I'll put on some of this poultry seasoning.
04:50And we'll get ready to flip the chick. Flip the bird.
04:56Turn the bird around. Cook on other side now. Turn the bird around.
05:08Yep, I am flipping the bird.
05:15And we'll do the same spices. Poultry seasoning.
05:21The lemon pepper.
05:27Good thing we have another bottle.
05:37And then we just cook this until it's golden brown.
05:52While that cooks, we need to get some lemon juice out.
05:56So let's squeeze a lemon. We're going to need about two tablespoons of lemon juice.
06:02Squeeze the lemon. Squeeze the lemon. Squeeze the lemon.
06:19But it wasn't that juicy of a lemon, was it?
06:25No, it wasn't. Damn. Where's the juice?
06:34Alright, let's see if this one's squeezed a little bit better.
06:44We're always squeezing a little bit more before we get to that stage.
06:59Alright, once the chicken reaches this state, we're going to take it off the heat.
07:05And set aside. We're now going to make a nice saucy sauce.
07:18Alright, we got a half cup of white wine that we're going to pour into the pan.
07:24And bread up this fond.
07:28So let's get a rubber spatula.
07:33And drag this up and get this off to a nice little boil.
07:36It's going to take about three minutes and then we'll get ready to add in our next ingredient.
07:39So let's rotate this around. All around.
07:43Spin it around. Get all that little cooking in there.
07:48And create what is called a fond.
07:53Are you fond of fond? I don't know. But there it is.
07:56Just added three tablespoons of butter.
07:59And now we're going to add in some minced garlic.
08:02So let's put in minced garlic.
08:05Splat.
08:07We'll empty this container out. That should be about three cloves more or less.
08:11There it is. A little bit more.
08:16Yeah, we're emptying everything out today.
08:20Alright, we're adding some minced garlic.
08:23Just about to finish off this container.
08:26Let's mix that in and stir that in right now.
08:29Stir the butter and the garlic. Butter, garlic, butter, garlic.
08:38Alright, then we're going to need to add in three tablespoons of flour.
08:43Three tablespoons of flour.
08:47One tablespoon.
08:50Two tablespoons.
08:53And three tablespoons of flour.
08:55Then we've got to stir this in.
08:57It's going to take about two minutes to stir this baby in.
09:00Yep, we're stirring in this flour quite nicely.
09:03Got to stir in, get rid of that flour smell.
09:07So all the aromatics take in.
09:10Stirring in the flour.
09:16The power.
09:18Gonna stir in the flour.
09:20Don't you see?
09:21Alright, the next step is we're going to add in two cups of chicken broth.
09:27Which we have to put in a little slowly.
09:30Slow.
09:31So we'll put it in and stir.
09:36So the chicken broth comes in slowly and metallically.
09:49Chicken from before.
09:51Stirring in the sauce up.
09:54Stirring in the sauce.
09:57See?
09:58We continue to stir.
09:59If you do it slowly, it helps it thicken.
10:01Make a nice thick sauce.
10:03For the lemon pepper.
10:05Alright, now that we got this all in here, all mixed up.
10:11We're going to have to let this get to a boil.
10:14And then we'll be ready for our next step.
10:17While it boils up, it's good to throw in a couple of bouillon cubes.
10:21Add some bouillon cubes into the sauce.
10:28Alright, once the heat starts to bubble up, we're going to reduce the heat a little bit.
10:35And let it simmer for five minutes.
10:40Let's just see it.
10:41Let all the sauces percolate and blend together.
10:46We'll also add in a half teaspoon of brown sugar.
10:52So let's get the half teaspoon into the brown sugar.
10:55Stir that in as well.
10:57Look at that.
10:58Look at the sauces.
10:59See it's starting to thicken up.
11:00That's what we want.
11:01We want the sauce to thicken up.
11:03We're going to add about three tablespoons of heavy cream.
11:08That might be a little bit more than three tablespoons, but...
11:11Just want to make it a little more creamy, the sauce.
11:15Stir that in as we continue to let this sauce thicken and curdelate and burdelate and churdelate and thrill us.
11:25The sauce is looking good.
11:28Now we've got to add another ingredient.
11:30We're going to put in about a tablespoon of honey.
11:34Here we go.
11:35It might be a little bit more, but hey, you know, sometimes a little sweeter is better.
11:40So let's stir in that honey.
11:42Isn't it kind of funny when we stir in the honey?
11:49All right.
11:51Now we're going to add in a few more spices.
11:53We're going to put in a little bit of oregano.
11:55Oregano, oregano, oregano, oregano, oregano.
12:00We'll add in that lemon juice that we squeezed earlier.
12:07It's going to be quite a sauce.
12:21We'll toss in a little thyme.
12:28Toss in a little bit of onion powder.
12:31Put a little more accent into our sauce.
12:38Just a little bit of mustard powder.
12:45Get some garlic powder.
12:59Mix it all up really good.
13:01Look at that sauce.
13:02Look at this sauce.
13:03Mm-hmm.
13:04Now we're going to toss in a little bit of grated cheese.
13:09Let it melt it in.
13:23Stir it and melt it.
13:25Oh, what the hell?
13:26Let's pour a little bit of rosemary, too.
13:30Ooh, I can smell that sauce.
13:31It's smelling good now.
13:32We're heading into the final steps now.
13:33We've got to add the chicken back into the sauce.
13:47Let it cook for about four or five minutes.
13:50Ooh.
13:51Oh, chicken's falling apart on me, and it's really tender.
14:01Yep, get the chicken in.
14:04Is that nice sauce here?
14:13Stir in and cover the sauce up.
14:17All right, here we go.
14:19All right, I just put some lemon wedges in.
14:21We're gonna throw in one more lemon.
14:24I shouldn't have got, I should get bigger lemons next time.
14:27So let's cut and show you the cut.
14:29I almost cut my hand on.
14:31So put some lemon wedges into our little mixture here.
14:36And then we'll let this cook for about four minutes or so.
14:40So everything mixes together,
14:41and then we'll get ready to serve
14:43this delicious lemon pepper chicken.
14:46Yeah, I probably shouldn't cut lemons this way.
14:51So make sure everything mixes together nicely.
14:55Chicken and lemon wedges.
14:57And we'll cook this uncovered for four to five minutes,
15:02and then it's time to serve it up.
15:04We're gonna be serving it up with some green beans
15:06and some stove top stuffing, chicken stuffing.
15:11All right, this is cooked in for about four minutes.
15:15So let's take off the heat
15:16and get ready to serve this up.
15:18Mm-mm-mm.
15:19Now we can put this on here.
15:21We're gonna toss on just a little bit more
15:24of this Parmesan on top.
15:26We're also gonna toss on just a little parsley on top.
15:31Just kind of a little bit of a garnish.
15:34And then some black pepper.
15:43Wish we had to crack black pepper.
15:45Wish I could.
15:46Wish I had a dirty hand for this one.
15:52Mm-mm.
15:56Yeah, well, you could just picture it.
15:59I'm gonna crack in some pepper this way.
16:01Let's get ready to eat.
16:04All right, here we go.
16:04We got our nice lemon pepper chicken.
16:06So let's get a nice piece of chicken out.
16:10The sauce all around it.
16:12There we go.
16:13We'll get a little piece over here.
16:15There, look at that.
16:17It does look good.

16:22Get a little bit of, uh, green beans on the plate as well.
