00:55So for this challenge, you're going to be making holiday pies.

03:40That filling was absolutely delicious.
03:43I make a stellar pie, so we're going to kick Team Naughty's butt today.
03:47I'm going to make a chocolate pecan bourbon pie, and we're adding tons of bourbon, obviously.
03:53For this challenge, I'm feeling inspired by Thanksgivings at my grandma's house as a kid.
04:00We would often build leaf piles in the yard, so I'm going to decorate with leaf piles made out of pie dough,
04:07because what's nicer than, like, a bunch of children playing in leaves?
04:11Making an all-butter crust.
04:13I learned a long time ago that you don't want to leave your butter too big.
04:16The more you can work it into the dough, the more tender it's going to be.
04:19And I make it a metal tin because it conducts heat faster than glass or ceramic.
04:24Helps you to more quickly evaporate the water in your butter to create the separation of layers in your dough.
04:29So that you don't have soggy bottom, that you have a good crust.
04:31And then for my filling, I pre-toasted my pecans,
04:35just to express the oils, get them aromatic.
04:39The judges told me last time that my flavors weren't balanced,
04:40and I really want to make sure that I do that today.
04:43I tasted elimination last time, and I don't ever want to taste it again.
04:47I came here to win.
04:48I feel like it would validate a part of myself that's always wondered,
04:53like, should you have gone to culinary school, or should you have done something different?
04:57I'm going to fight with everything I got.

05:02You know, it's been such a wild ride.
05:04Coming into this competition in the beginning, I don't know that I did believe in myself enough,
05:09but today, I'm a top contender.
05:12Ashley, how does it feel?
05:13You could win this whole thing.

05:16And part of the dream of doing that is being able to take my dad on a trip to Scotland.
05:22He had a liver transplant about nine years ago, so hasn't been able to travel as much.
05:26And then this would be a dream for us.

05:30So what kind of pie are you making?
05:31So I am making a pumpkin black pepper, so that's kind of the secret ingredient.
05:36The black pepper really adds a little zing to it.
05:39And then I'm going to top it with a maple whipped cream, as well as stained glass confetti sugar
05:44cookies to represent Christmas ornaments.
05:46The reason I'm making it today actually is because of my dad, because he hates pumpkin pie,
05:51like absolutely despises it.
05:53It became my favorite pie as an adult, and now out of spite, I bring it to Thanksgiving.
05:57So we're going a little bit naughty on the sense that my dad hates pumpkin pie.
06:01It's so ironic you're making something your dad hates.

06:15So today I'm making a lemon meringue pie.
06:17On the top will be a toasted Swiss meringue, with some silver bells out of chocolate,
06:23candied lemon and holly leaves, and I think it just really reads nice Christmas.

06:43Shortening kind of gives you a little bit of that structure.
06:45It gives you some flakiness.
06:47And then I did add some lemon zest and some thyme to the crust,
06:50just to give it a little bit of an herbaceous pop.
06:53So Team Nice is going to continue to keep rocking it.

07:32just because I think the other three have been really consistent.

07:38Overall, my bakes have been average at best,
07:42and I feel like I'm kind of the weakest link on my team,
07:45which is why this week I want to make something mind-blowing,
07:49something that's not only going to taste great,
07:51but something that's just going to be memorable.
07:53And so I'm making a blueberry cream pie.
07:57To add a little bit of like a deeper flavor to my blueberry filling,
08:00I want to play into the warm spices like cinnamon and ginger
08:03and stuff that you would traditionally see around the holidays.
08:06And then also I'm adding bourbon.
08:08I feel like the flavor of the alcohol plays well with fruit,
08:10and it's going to taste bomb.
08:13And then I'm going to decorate it inspired by one of my old family traditions,
08:17which was where my siblings and I would not only leave milk and cookies,
08:20but we would leave shots and a pack of cigarettes for Santa.
08:25It was definitely naughty, I will say that.
08:28So my pie is going to have a cream filling,
08:31there's going to be a spiced blueberry filling,
08:33and then I'm going to top it with pretzel cigarettes,
08:36because I really want my pie to look like an ashtray.
08:39It's definitely a risk.
08:41You know, I can't help but to be like really nervous.
08:43But yeah, I think if this one can come out the way I wanted to, it'd be a winner.

10:08I started thinking about all of the things that made me feel close to Christmas and close to her.

10:16So it will be a blueberry pie filling, a blueberry white chocolate ganache top,
10:22and decorated with a goat cheese whipped cream Christmas tree and pie crust snowflakes and stars.
10:29I spent most of my childhood sitting on my grandmother's lap in the Lake of the Ozarks,
10:35steering up into constellations.
10:37I learned constellations from her.
10:39So I'm really excited to make this in her memory.

10:48Well, this hasn't been shut the whole time, so that's great.

12:09The inspiration for this dessert today is a combination.
12:12One of my favorite pie flavors, I'm making a pumpkin and cherry pie.
12:16Pumpkin pie was the first pie I was excited to eat when I got here in America.
12:22And I love cherries.
12:24So, I'm going to bake my pumpkin filling.
12:27And later, I will add my top for the cherries.
12:30And I will cover the pie with puff pastry lettuce.
12:34And I will decorate with cinnamon buttercream, cherries, candy cans, and hollies.
12:39For my cherry compote, I'm adding orange juice to make my cherry really pop.
12:45I will take Team Naughty down by the flavors.

12:55So, I get my pies out of the oven with a pistachio branch of the pan baked on the inside.

13:09But I want to do, like, a little twist on it.
13:12So, I'm making a bourbon ginger miso apple pie.
13:17And I'm going to build each of the layers.
13:18So, I want a little layer of frangipan, a little layer of miso caramel, a layer of cooked apples.
13:26And then, to decorate, I want to do a cute beanie-inspired hat.
13:31It's going to stay nice because it's going to be the cutest little hat you ever did see fit for the holidays.
13:37So, the main thing with this challenge, I feel like there's something coming.

14:42I have decided on an apple pie because it's kind of an American classic.
14:46It's a risk to go simple.
14:48But I'm going to make it stand out by I shred apple and dice it.
14:52I cook down the shredded apple so it really concentrates that flavor.
14:56So there's no mistaking it's an apple pie.
14:58And I try not to use too many spices because otherwise it just covers up all the natural
15:02kind of brightness that apples have.
15:04And then I am decorating it with braided pie crust and a little whipped creme fraiche.
15:09And I'm also going to make a little semi-rotten apple in the center with a little Christmas worm.
15:13And just to really tie in the Naughty theme.
15:16It's a lot to make the filling and break down all these apples,
15:19but I think it can be very delicious and impress the judges.

15:24I'm freaking out a little bit because my pies are looking just a little on the scorched side.
15:30I'm worried about what the judges are going to think about this,
15:33but it's too late for me to really do anything about that now.

15:52So a sweet potato and pecan pie sitting on a pretzel and ginger snap crust with a toasted brown sugar
15:59meringue. And I'm going to have the nice team made out of showbread cookies setting aflame a
16:04marzipan Santa's real naughty list, trying to destroy the evidence of their naughtiness.
16:10I've sort of made a name for myself as being the one to kind of go a little past the line on the
16:14naughty side. And I want to just keep that up.
16:16You have? Okay. Well, at least if anything, you're consistent.
16:18You have such an incredible energy and passion for this. I can tell.
16:21How did you find baking?
16:22Like a lot of kids is kind of doing it for fun at home. And then as time went on,
16:27I started to continue to find my love and my passion for it. But it like,
16:31I had a while where I wasn't sure if it was going to be something that lasted.

16:36Because I just had a lot of struggles with like food and eating. I'm diagnosed anorexia.
16:40Okay.
16:41So I actually had to drop out of culinary school.
16:43Oh, man.
16:44Yeah, to go to recovery. But since then, I've gone through treatment. I'm in the greatest
16:49place I've ever been in my life right now. And the last four months, I've gained about 50 pounds.
16:54And a big motivator in doing that was being able to come out here and live out a dream of being
16:59here. And it's like, even like, if I'm not successful in every bank, just being physically
17:03healthy enough to be here is like a win in and of itself.

18:24every single year for Christmas, and it's one of my favorite things to receive from her,
18:28and she's eight. Shout out to Clara.
18:30So I'm going to take a little spin on those ornaments and stack the cookies with a little bit
18:35of royal icing to glue them together with some sprinkles in the center to make them look like a
18:39little bit of a snow globe with sprinkles inside. I just want a little bit more sprinkles.
18:44Now I'm carving my cherries
18:49and dipping in red chocolate because I want this to be my decoration on top of my pie.

21:14I'm a little stunned. It is a bit shocking to then have to now judge your own teammates,
21:22especially because we all are competitive and we all want to win. Yeah. We'll see how this turns out.

21:32So it's very important. You guys are honest with one another in terms of whose two pies are the best.
21:38Okay. So Charles, tell us what you made.
21:41So I just made a classic apple pie. And then on the top, it's a little Christmas worm coming out
21:46of a rotten apple. I think that blade is a really, really strong technical scale. The crust is so
21:50beautiful. Yeah. I think this is a phenomenal apple pie. The textures are insane. The cream is really
21:55good. Honestly, I can't find a single negative. Well, that's only one dessert. Yeah. Sounds like you
22:01guys are off to a good start. I really want to beat out Ashley at some point. So I'm feeling optimistic.
22:07I want to go next. I did a sweet potato custard, pecans on top, and then obviously the real naughty list.

23:30And it's a little underbaked, yeah. Yeah, my crust is raw. It's a little raw in the middle. A little

25:09you. All right. Next up, we have Erin. My pie is a blueberry ganache pie. It's reading nice. I've
25:16never really seen that color blue. I like the texture on the crust. It's like nice and flaky.
25:21I think the ganache up top is just a touch broken. I don't like the consistency of my pie,
25:27but it needs me a more solid pie. Yeah. Okay. We're gonna go Jean Carlos next. So my pie
25:33is a pumpkin and cherry. And on the top, cinnamon buttercream. I love it. I would see this in a
25:41storybook. I like the flavors going on. I really like the tartness and contrast to the spice of the
25:47filling. Yeah. It's a fun choice. It's not one that I think I've seen. I agree. Not just because I
25:53made, but I think tea's great. I'm happy. All right, pie guy, you're up. Chase. I made a bourbon pecan
26:00chocolate pie, a mascarpone whip. I made toffee, candy nuts, and a chocolate crumble on top.
26:06This is so good. The pie is nice and flaky. I love the creaminess of the filling. I love that I
26:11can get the bourbon. It's not too much. No. You could eat that all night. All right. Good stuff.
26:16Chase, way to go. Good job, babe. All right. Guess that leaves Alex. So what do we got? So we have a
26:22lemon meringue pie. It also has a lemon thyme pie dough. Um, the crust for this one, unfortunately,
26:29looks like a little undercooked, and I'm not sure about the meringue. It seemed like a little bit
26:35loose, and the citrus flavor is very strong. Yeah, I definitely agree. Everything about the pie was
26:42not what I wanted, and I would be incredibly embarrassed to present it to the judges. So I
26:47think the consistency of Chase's pie was so good. The flavors were so unexpected in Giancarlo's.
26:54Chase and Giancarlo's, that's my vote. I would agree. Your two best pies in this challenge belong to Chase and
26:59Giancarlo's. Without a question. I hope you made the right decisions. Let's bring in the judges.
27:05Okay. Judges, we've never done this before. We've asked each team to present to you their
27:11two best holiday pies that they're hoping are going to win their team immunity. Okay. Up first,
27:18Chase from the Nice team. Chase, come on up. Yay!
27:21So this is our first time getting to see Team Nice being judged in front of us,
27:27and I am so nervous because we're going up against the pie king himself, Chase.
27:32Great to see you again. Okay, why don't you tell our judges what you made?
27:35So it is a bourbon pecan chocolate pie. Oh my god, that crust. That's gorgeous.
27:41Yeah. This is the whole Thanksgiving experience at my grandma Mary's. The pecan pie is not only
27:49the one that's always fought over, but while we were kids, I think to distract us and keep us out
27:55of the kitchen, it was like, go collect sticks, go make leaf piles in the yard. So I wanted to
28:00replicate the leaf piles. It looks delicious. Like, if I would see that in a bakery case,
28:07I would say give me three of those. So I love what you've done here. Now, I do think it's nice
28:13looking, but does it really show the nice theme? I don't know. Oh, oh my god. I feel so weird to
28:21beanie on watches and luteful bad comments. It's like a little too even, a little too symmetric to
28:26give me something as organic as a leaf pile. Okay. Maybe you'll get that nice theme and the flavor.
28:31Sure will. Just wait. I feel really uncertain. I'm feeling nervous for my team because it just felt
28:41like a little bit of mixed reviews in terms of decor. So I'm just hoping that it's going to really hit
28:48with the flavors. Are they being poker face on purpose? God, I don't know. Hopefully, no.
29:09Okay. It's not your typical pecan pie. It is well baked. I'm loving all of those like toasted flavors
29:16you get from the pecan, but the bourbon kind of overtakes a lot of it for me. Yeah.
29:20Nance, how about you? Well, more bourbon. Maybe just a scotch too much bourbon. Wow.
29:34You think so? What? Yeah. I'm so shook that I out-bourboned Nancy. I mean,
29:41we all know she has a stronger palate for alcohol, so. It's delicious. Yes. But the bourbon is forward.
29:48It is forward. Yes. Yeah. Oh my God. I loved the bourbon in it. I did too. I don't, I mean,
29:54I don't even drink. I think the bourbon in here is fantastic. Yeah. I really like it. And your crust
30:01is really some of the best we've had on the show. Really incredible. Thank you. This crust is amazing.

30:32I decided to go for a cartoonish. We have cherries on top. We have the Christmas decoration and the
30:40piping is a cinnamon buttercream. Wait, what? Buttercream? Buttercream? Cardi, are you seeing the
30:47nice here? I see the nice. Those are some really big cherries. And like you said, it's like the cartoonish
30:52side of it. And I really like that. Yeah. And cherries and pumpkin. We'll see, man. I'm confident
31:00this pie can be a winner because I take so many risks, especially with the flavors. And I hope the
31:07judges understand that. Well, I am tasting a lot of pumpkin and I like it a lot. Good. The cherry
31:17is underwhelming because the pumpkin is overwhelming. And I think it's not balanced. Yeah. Everything is
31:26just a little bit off. First of all, buttercream on a pie I think is pretty weird. That is weird.
31:32I like that you kind of pushed the envelope with making pumpkin pie with cherry. And your crust
31:37is incredible. It's flaky. It's buttery. Between you and Chase, I don't know who makes a better crust.
