00:36It's the final day of our teen competition in Manchester
00:39and the turn of catering student Alex
00:41to flex his culinary muscles in the kitchen.
00:44And he's fizzing over with excitement.
00:46You know what I've really enjoyed this week?
00:48I was kind of a bit nervous until my night.
00:50I couldn't really sleep last night.
00:51I was like, ooh, I'm going to be doing some food
00:53and I'm going to be cooking some food.
00:55Oh, bless him.
00:56Any concerns for your night?
00:57I think expectations are going to be really high tonight.
00:59I think I need to get those standards up there
01:02and hopefully I meet my standards.
01:03Well, yes, because there's been a mixed bag of standards this week,
01:07culminating in Zach's last night.
01:09I think my night could be a winning night.
01:10I'm not sure what the others think,
01:11but I definitely think my night, I had a lot of fun.
01:13I really enjoyed it and I think my food was good quality.
01:15Unfortunately, not a view shared by first teen host of the week, Amina.
01:19I think Zach put himself down in certain aspects, like the crepes were really thick,
01:25but the chocolate sauce was really good.
01:27When I think of crepes, I think nice, thin pancakes, but this was thicker than the book.
01:32My dessert wasn't the best in terms of thickness, but I think everybody really enjoyed it
01:36and I hope everybody saw the effort I made.
01:38That might be so, but Amina's competition concerns lie elsewhere.
01:42I think I could be in with a chance of winning.
01:45Maybe, I think the only, the night that's worrying me the most is probably Ben's so far
01:49because Ben's was really good. I did really enjoy Ben's night.

01:54I really enjoyed Ben's night. I ate everything and he was a really good host as well.
02:00I'd like to think they enjoyed my evening. I think the food was, like,
02:03I'm happy with how the food turned out because obviously it's my first time cooking all the food as well,
02:06so I'm happy with how it all turned out.
02:08Ben's night was the best all week, I think.
02:11However, I'm hoping mine will be the best.
02:13When it comes to the competition, I think me and Ben's night was pretty on par.
02:17Then I'll say it goes Amina and then unfortunately Letty.
02:20Well, you're actually in third place currently behind Amina and Ben,
02:23who's in the lead with 29 out of 40.
02:26So, what plans has young Alex got to wrestle the win from Ben's gruff?
02:30I'm going from farm to fork theme.
02:32I love the idea of kind of locally sourcing the products from farms.
02:36And also, I wanted dishes that teenagers like.
02:39You know, I could have done, like, a lobster fermer or something,
02:41but I'm not sure everyone will like that.
02:43So, I've kind of gone a bit more basic,
02:45but I'm hoping to get those flavours in the basic.
02:48And the first of those teen-friendly dishes he's going to tackle is the starter,
02:53homemade pita bread and dips.
02:56I think I'm a little surprised that it's not something more complicated from Alex.
03:00I think pita bread and dips seems to be a pretty easy dish to do.
03:04We've had a lot of a bread kind of theme this week,
03:07so I'm interested to see how his pita bread goes.
03:11I love a bit of pita bread.
03:13Alex kicks off his starter by making a dough for the pita bread.
03:16Pinch of salt?
03:17No, we don't add the salt to the yeast,
03:19because if you do, it will kill the yeast.
03:20And we don't want that, do we?
03:22The dough is rigorously kneaded and then left in a bowl to prove...
03:27I hope he's made the dips himself, though.
03:29He says dips plural as well, so I'm expecting more than one dip.
03:32So I'm not just making the pita bread from scratch,
03:35I'm also making four homemade dips.
03:37Which consist of courgette, roast garlic hummus,
03:41sun-dried tomato hummus and a baba ganoush,
03:44or aubergine dip to you and me.
03:47That's nice, huh? I like that. That's nice.
03:49Nice? That's perfect.
03:51So I've just done all the dips there, I'll force.
03:53Surely everyone's got, like, at least one of them, so...
03:55And what more could they want?

03:57Anyway, on to the main.
03:59Homemade beef burgers with secret sauce
04:01and triple-cooked chips.
04:03Yeah, that sounds more like it.
04:04Now, genuinely, burgers are my favourite food,
04:07so I am going to devour that.
04:09Beef burgers I've often been known to be quite picky about.
04:13Triple-cooked chips? I've never heard of that before.
04:16Just put it in the oven and take it out, put it in the oven again,
04:18and then whatever, or the air fryer,
04:19and then take it out, in, and then out again.
04:21Is that literally what it is?
04:22Well, let's find out.
04:23Having sharpened some blooming great knives,
04:25Alex sets about chopping up spuds
04:27and putting them on to boil.
04:29And because it's so big, we're going to go on the big gas.
04:32So the key to a triple-cooked chip is to part-boil them first,
04:36soften them, not too much so they'll become mash,
04:39but softer enough so they're cooked inside.
04:41Then we fry them 180 degrees,
04:44then we just finish them off in the oven.
04:46Not a million miles off, Ben!
04:47Chip's underway, Alex turns his attention to the special burger sauce,
04:51which he makes with his own mayonnaise
04:53and a whole host of household condiments.
04:56Go in with that mayonnaise,
04:58a few gherkins,
05:00such a paprika,
05:01such a tomato ketchup.
05:02Let's blend it up.
05:08And then...
05:10How's that then?
05:11Come on, the suspense is killing me!
05:13That's done. Perfect.

05:16On to the star of the show, the burger!
05:18So this meat is for my farm just round the corner.
05:20We're going to weigh a hundred grand patties.
05:22A lot of burgers have grizzlies,
05:24so I'm hoping Alex doesn't make any burgers that have grizzlies in.
05:28Yeah, I think we're all hoping for that.
05:30It's just the meat on its own for the burger,
05:32so the meat can kind of shine.
05:34That's the burgers done there.
05:36I'm going to serve it in my own homemade brioche buns.
05:39Hopefully they kind of go,
05:41So, Alex, did you make that brioche yourself?

05:48I've gone above and beyond and made everything from scratch.

05:53Blackberry and apple crumble with homemade ice cream.
05:57Again, keyword on the homemade.
05:59I like how he's used the word homemade in every single dish.

06:06I'm not a crumble fan, but I can give it a try.

06:13This is going to sound mad, but I actually don't like apple crumble.

06:20Most of your guests, unfortunately.
06:22Alex peels and chops cooking apples,
06:24adds hand-picked blackberries, loads with sugar,
06:27then stews.
06:28For his crumble, he blitzes flour with butter.
06:31That's crumbed as quick as that.
06:33Then add sugar.
06:34This will top his stewed fruit.
06:35So this is looking very nice.
06:37You can see right here how the blackberries have kind of dissolved into the mix.
06:43Next, the homemade ice cream.
06:45How's he going to done that, then?
06:47Homemade ice cream?
06:48Does he have a cow?
06:49If anyone did, it'd be him.
06:51So it's going to be like a homemade custard ice cream,
06:54so it actually tastes like custard, but in an ice cream.
06:57Alex combines milk from a bottle, no cow,
07:00then cream and sugar and heats.
07:02We've definitely had ice cream before with lettuce house,
07:05but she didn't make it homemade.
07:07No, she bought it in the shop,
07:08so hopefully it's nicer because it's homemade.
07:11You can't push a theme too far, you know.
07:13Eggs are separated.
07:14Going with the hand.
07:15And the yolk's beaten with sugar
07:17before gently being introduced to the warm milk and cream mix.
07:21Then whisked again until nice and thick.
07:25That's perfect.
07:26The warmed ice cream mix is strained and chilled
07:28before going in to freeze.
07:30It's going to let that sit there for a minute
07:32and it's going to help cool it down a lot faster
07:34so when I throw it in the freezer
07:35it's going to freeze a lot quicker.
07:37It'll be served with the crowd-pleasing crumble.
07:40Overall, I'm really happy with how everything's turned out.
07:42Don't think I'm going to do anything differently, I think.

17:41the fatty liquid of the steak, but it's just gone red because it's in the meat.
17:44It's not blood, to be clear.
17:46I don't know many people my age who know so many random things.
17:50Like, it's actually caught me off guard because I don't know anything about any of that.
17:53I did do some research into steaks and haemoglobin because I was a little worried
17:56about the blood myself when I was younger.
17:58Turns out it's haemoglobin.
17:59And I can't lie, I like to dip chips in it, so...
