31:10Let me take you back to 1933 in Bognor Regis.
31:14That was where the first prestige pie was created.
31:17Roll forward to 2009 and my mum said to me, what are you going to do with your life?

31:23You're sitting at home and you're not paying rent.
31:27Come on, what are you going to do?
31:28It was at that point that I absolutely fell in love with the business.
31:31And I knew at that stage that this was in my blood and I wanted to take this family business
31:36to the next level.
31:37We currently have five shops along the south coast of the UK.
31:41Our central kitchen is where we bake all of our pies fresh six days a week and make sure
31:46the quality of the product is as expected every single time.
31:51Our newest service, Pies by Post, that we launched in 2018 is exactly what it says on the tin.
31:58They go on our simple to use website and they can order custom pie packs that we provide to them.
32:03This is a service that we really, really believe in and we think has huge potential for growth as we grow as a business.
32:09So next I'm going to show you a billboard that we've had up in Westfield Shopping Centre just to let people know
32:15you can actually buy top quality pies, handmade, delivered to your door for affordable prices anywhere in the country.
32:21Okay, so moving on to some financials.
32:27In the last tax year, we turned over £2.7 million.
32:31But just 10% of that was contributed by our Pies by Post delivery service.
32:36In 2021, we had a contribution of 21% by Pies by Post and we believe that we can increase the contribution of Pies by Post to 50% of our overall revenue.

33:14So we believe as the world becomes more convenient and delivery based, people will just understand the packaging costs and delivery costs just come as part and parcel of buying a product.

34:21We started off selling hires online.
34:24And it's true.
34:25We hit three million during that year of COVID.
34:27And we're back down to about 1.8 million now.
34:30He's got it in his head that he wants to do this online stuff.
34:33I mean, that only makes up 10% of his business at the moment.

34:38And he wants to expand that.
34:39I think 10% is a good number.
34:41Some of the people that are going online were up to 20, 30%.
34:44But, you know, beyond 10% is quite a bit.
34:48And he's clearly got a successful business model.
34:50He's already got five open.
34:51So that for me now is just about how he refines it to replicate it.

35:42Over the next five years, we're looking at opening a site every single year in bustling neighbourhood locations such as Manchester, Newcastle or York.

35:53Now, projected start-up costs for Newcastle come in at £137,000.

37:32Yes, instructors are integral, but I think the way I look after them and the way I empower them within the business, I think it's a pretty safe bet that they will stay and the clients will also stay.

38:01It is a very saturated market. So, it's almost like getting to know the customers on that personal level.

38:08So, I think what really drives us home is inclusivity and a personal family feel.

38:53am i saying there's nothing new i think there's definitely an opportunity in the north of england
38:57the issue is going to be volume i think she has four or five different types of fitness classes
39:01in that one unit you become a jack of all trades and i think what they need to do is specialise
39:05in what they want to be good at and and then expand rachel herself she knows her market she
39:10knows her client she knows her staff i don't think you can go wrong with her pitch is over
39:17so close to the end now i've made it this far i've worked extremely hard i've put everything into
39:22this i absolutely want to win this and it would mean the absolute world to me today the pitch huge
39:28amounts of pressure it's been a phenomenal journey personally unbelievable experience and i really

40:57how the family side of the business is pies related he wants to make it to do with delivery
41:02to the door we had paul the pie man as the chef in the video and um raj obviously being older so thanks
41:17she could be the mother and give that great just a lady i love you raj you know lady of the house
41:24as raj is the lady of the house i heard you you two were bickering a little bit making this thing you
41:29were like basil and sybil fortune yeah but no it's like it i can see it now yeah anyway you're um you
41:39know in seven tasks you were directing so have you gone from scorsese to pie richie yeah yeah yeah yeah
41:46i watched the uh the thing uh the only thing i couldn't see was the pie yeah it's like very small
41:53yeah that was something i did mention um that the pie should be front and center but i think really what
41:57they did is they went away and they really tried to focus on just making sure the main messages were
42:01there rather than trying to be over creative which in the past has kind of come back to bite us a
42:06little bit one thing i will say is they all three of them work really hard for you yeah they really
42:11did want to produce something that you'd be proud of and you'd like yeah i know that pies might not be
42:16so much of a thing for verdi and raj and i knew that paul would be able to visualize what this is and
42:20he would actually have a grasp of what this is what this looks like and what this industry is about
42:24rather than kind of pie in the sky as we might say raj didn't know much about pies and thankfully
42:28you didn't use her name fill my pie no um did you suggest that i didn't know it was rude i didn't
42:37you don't want to be typing that in google you'd be arrested right so um we move on now to the branding
42:47side paul the dentist what did you do the fillings essentially hello sugar um but top quality um the
42:56the hands are supposed to mean i'm going to deliver it is that what it means it looks like you're
43:02delivering uh ed sheeran's haircut fair enough my problem with this and i know that's only a prototype
43:11yeah right is that i mean it's quite nice if they come into your shop and you pack it up nicely for
43:17them like this right but as a mail order thing it could cost more uh in postage than the actual pies
43:24themselves okay um anyway i have to say that i tasted the pies right they're excellent they are very very
43:31good thank you uh and that's the way you should go forward uh is to keep that quality up right thank you
43:39okay good let's move on to rachel um so who done what tell me so i put sam trey and steve on the
43:47digital billboard team mainly because sam is a fitness instructor and then trey with being great
43:53video director i know he knows me well so in competition with you and verdi i saw your billboard
44:02basically it was sam um sorry to say you looked a bit like the 1980s mr motivator kicking out there
44:10yeah yeah it's funny you should say that i'm actually uh the mummy motivator in my business so
44:16it just added a bit of proper color right and steve you look like steve schwarzenegger yeah
44:21punching away that i will take that yeah the bit i didn't like in the end was uh throwing in the towel
44:27oh that's an expression i've thrown the towel in meaning i'm giving up it was more a case really
44:33of had a good workout throw the towel down ready to start again but we wanted to showcase a powerful
44:39woman kicking because of course your demographic is you know professional women and high earning women
44:4470 of women uh you think is what the gyms are all about and it's just what i've personally experienced
44:51within my own studios we do have main target market is uh two female groups however we do definitely
44:57welcome males and we do continue to do that we want so much of trey's testosterone juice to 70
45:02women let's face it okay um now we then got the branding team right who's responsible for the logo
45:11is that right yes and the brand name is studio build yes correct i mean you know in the presentation
45:20there's quite a few people that kind of said it sounded like a building or construction company
45:25um and you put the drop of water the sweat drop yeah looked like a damp damp coursing firm you know
45:34we wanted something that stood out and we used the color to do that as well as the boldness of the
45:38text but i think the metaverse was definitely where i excelled rather than over the actual branding it was
45:43good you know because you can give them you know you're explaining you walk through all the different
45:47things that you do um yeah what's really great about rachel as well she doesn't blow on trumpet
45:53and i think it just shows how good she is i can literally see her creating a multi multi-million
45:57pound gym that dominates north really good and she could supply some of your products in there
46:03you could be oh jim jim and tonic
46:09how do you feel about your team they helped supported you well extremely supportive the whole
46:13way through it right and what about you you like over here do you think he's going to make a takeover
46:18bid for your pie business one day hey you never know we might work together and i might make them
46:23for him yeah okay yeah they're good they're a good pie i can't i can't lie good idea there wasn't any
46:29left on our table like did he win he won the awards didn't he for something rather yeah he won the pie
46:34awards yeah yeah makes a change these days for an arsenal fan to see a trophy see a trophy but yeah well um

46:59well as you can see my decision it's pies versus pies lattice i suppose
47:20to use a pun do i choose a gym or pies to make people fitter or make people fatter you know i suppose
47:28that's what it boils down to so rachel i'll tell you what my problem is i get what you what you're
47:35saying about your vision and your dream uh of a small boutique community gym um but what i find
47:43difficult is how you're going to scale up that culture beyond two branches i totally understand
47:49that and when i started my first branch i had zero client base i built it up organically and we've done
47:55the same in harrygate and as we move forward with opening further branches i'd go with the same
47:59ethos we've always gone with having that open environment with my staff and making sure they
48:02are fully on board with what exactly our core values so what you're saying to me is is that in
48:07order to expand you're going to train up key members of staff that are going to learn they're
48:14going to become the friends of the customers right absolutely yes and of course we would have to
48:19hire more people at that level to make sure that we can continue that visitation okay gymnasiums and
48:26the growth in gymnasiums has really been the past you know 20 years really i mean it's out of my era
48:32but my children and now grandchildren do frequent gyms all the time and when i hear them mentioning
48:42fred bill charlie who's my trainer and they get very upset when charlie now leaves and when
48:48he leaves they go and follow him how are you going to deal with that trainers are integral and
48:55they do build those relationships with clients 80 of my current staff have been with me since first
48:59opened don't have any staff turnover whatsoever they stay with me the only reason that's surprising
49:05i've got to tell you quite honestly that is the truth no matter how how well you feel uh you have
49:10a good relationship with certain stuff they they let you down sometimes there's either very very loyal
49:15or they're only interested in themselves and and the truth is as you scale up and you employ more
49:21people the chances of them moving on get greater and greater of course and i appreciate as i grow
49:27turnover of staff will grow as well that's just a natural part of having a business hmm phil
49:34my view of your business is that you've got five shops i think you need 50 shops i think that's to
49:41be you should be targeting um but i've got to tell you right now post by post um i don't get it it's
49:47going to deflect your attention away if you think you're going to build up a online business because
49:53it's not going to happen my answer to that would be that um when i um took over my parents bakery
49:59everyone told me that it was a very stupid decision and very much like what you're saying
50:04is it's not possible and in my head i believed in my vision then and i still do believe in the vision
50:10of the online um pies by posts that's bad as far as even if it's just as a hedge to what we're currently
50:17doing yeah but an entrepreneur a person in charge of his business has got to concentrate on the thing
50:23that's going to make them the most amount of money right and if you distracted into this online stuff
50:29i can tell you you're going down the wrong path i say this from experience and bitter experience with
50:36some of my other companies where some of the managing directors of those companies uh have have done
50:42that and have now realized the error of their way and i do really appreciate your um your perspective
50:48your perspective on that and i take your sentiment about the profits but for me um there's more to
50:54running a business than making profits i have a huge really sorry phil not really sorry that is a
50:59dangerous statement let's cut the crap we're in business to make money well i am anyway yeah i appreciate
51:05if you're not in business to make money then you're going to be no good to me that's for sure i'll take
51:10on board what you're saying but i am commercially driven i understand that profits need to be made being
51:14able to sit tell me you've lost money this year yeah we reacted too slow uh when it comes to the um
51:21inflation the energy costs were extremely crippling this is something look you need to put your prices
51:26up the prices have been put up we are moving in the right direction okay look i'll tell you what i'll
51:30tell you what i need to do now um karen and tim um i'd like to have a chat with you um if you don't mind
51:40you too perhaps you'd step outside and i'll call you back in later yeah thank you
51:50karen what do you think of rachel do you know this business is her life and her passion for it
51:56really comes across the issue really is just how expensive it is to open gyms and she'll burn
52:02through your investment pretty quickly i think the thing with rachel is that she's going into a great
52:07industry sector and she's a great advocate for her products and services it's about the scalability of
52:13that can she systemize what she's done very well over two gyms over many many more so tim what about
52:21phil i think the thing for his business is that you've given him clear indications what it's going
52:25to need to grow this business will he accept that direction and put into place what you're thinking he
52:30needs to grow he clearly has a good business and his product is excellent but he has to embrace new
52:37ways of doing things and you're going to have to be convinced that he's going to take your advice and
52:40make those tough decisions because sometimes you have to make tough decisions in business that's how you
52:45survive hmm okay so i'm going to call them back in and i'm going to decide which one of them is going
52:50to be my business partner could you send the uh two finalists in place okay now i'm going to put 250 000
53:09pounds investment with one of you now i'm to use a pun i'm no sweetie pie i i i expect to make money right
53:19uh phil you didn't make it clear to me how you're going to grow yourselves obviously opening new shops
53:26would be the most obvious one and also in stores uh getting our average spend up higher um it's not
53:33just pies that people come to the shop for there's a huge amount more that we do in store uh we're
53:37looking to have new product development and diversify i mean you you prepare to listen to me as
53:44your 50 partner yeah absolutely yeah um no i mean that because my advice to you is to tell you what
53:52not to do yeah rather than what to do it's learning from all the mistakes that i've made in the past 60
54:01years you couldn't buy that you couldn't condense that you couldn't get it in a book you couldn't learn
54:07that at a university lord sugar um i am coming here for a mentor like yourself i'm not going to
54:14put myself for this process to start disagreeing with the advice you give me um you've obviously
54:19been there you've done it you've got the experience so i want to put my point across in the boardroom
54:23in this situation but if we were business partners obviously i'll be looking for you to show me the
54:27things that i don't understand hmm rachel yes why should i invest in you because there's so many gyms
54:34around up north it genuinely is um demand not enough supply when i first set up people thought
54:41i was bloody nuts the people that thought i was nuts back then now believe it's amazing but your ethos is
54:48small boutique and community gym i get that and if you only had one gym i could see that working
54:55but how do you get that ethos across 10 gyms my business is profitable and i believe it will become
55:01more profitable as we scale up i believe it will be a multi-million pound company by the time i've
55:05opened the actual amount of studios i want to open because i know they are profitable and i know the
55:09turnover that one small studio brings in it's i bring 250 000 pounds and in a tiny site compared to a
55:15lot much bigger is that true is 250 000 pounds that tiny little unit in leeds brings in which
55:21people thought i was crackers to do and i stand by i was 23 years old lord sugar um where rachel is in her
55:27current business there's a a lot more work and a lot more time that's going to take to be able to
55:31launch this i believe that the work i've been doing over the last 10 15 years has primed my business
55:36to a position where i can have investment and mentorship to take this thing further we've built
55:40the model we've got a lot of the infrastructure in place it just really take it to the next level
55:44lord sugar can i just say if you are willing to invest in me i know not you're not just investing
55:49my business which is profitable you're also investing in myself i remember watching this process when i
55:55i was 17 years old i had no idea what i was going to do with my life i just knew i wanted a business
55:59and i said one day i want to be in that final and i got myself there and that was 10 years ago so i just
56:04want you to know that you are investing in me as a person i'm most driven enthusiastic and a lot of
56:10grit behind okay so let let me let me conclude here this is very tough decision i've got to say
56:18because i've got two very very credible people in front of me i've got rachel who claims she's making
56:29money and that she's going to make even more when she gets the second gym up and running but
56:37gyms are kind of like all due respect they're like to a penny
56:41specialist pious are not uh and it's a market i'm very interested in but how can i be interested
56:51in it if there's no kind of light at the end of the tunnel there's a loss-making business at the
56:57moment that you tell me is going to turn around and be okay and that's my dilemma you know um
57:04um it's very very hard for me
57:14i'm having trouble here
57:17but my gut feeling is telling me that
