00:02Since Pahias Festival ngayon, at wala kami dyan para makisaya sa inyo,
00:08naisip ko lang na kumuha din ng isang classic na signature dish ng Quezon,
00:13which is ang ating Chicken Delino.
00:15So basically, Chicken Delino is poached chicken na may stuffing ng malagkit sa loob.
00:23And of course, we have other elements like yung ating Lukban Longganisa.
00:27Kadalasan, chorizo yung gamit.
00:28Meron din tayo ditong gizzard or batikulon.
00:32And yung ating atay at puso ng manok.
00:35What we'll do is pababanguhin natin at pasasarapin natin yung pinaka-stuffing natin ng ating gizzard.
00:44Yung ating puso.
00:49Then yung ating aromatics.
00:51Onions, garlic, and ginger.
00:59Yung ating malagkit.
01:10And then, we're going to add yung ating liver.
01:17Rot talaga natin siya ilalagay.
01:20Season lang din natin ng salt and pepper.
01:28So here's our chicken.
01:30Here's our stuffing.
01:31Bago natin ilagay yung ating malagkit,
01:34mas gusto ko lang na ilayer siya ng ating Lukban Longganisa sa loob.
01:43And then, yung ating malagkit.
01:50So ito na siya, na-stuff na natin.
01:51What you can do is, you can secure this by closing up the gap.
01:56Pero what we'll do is, yan.
02:00To-close na lang natin yung legs.
02:02Saka natin isi-secure ng ating butcher's twine.
02:05You can use definitely toothpick or tahian siya ng kahit sinulid.
02:10Siguro, worst case scenario na wala kang makuhang butcher's twine.
02:17Let's pour in some chicken stock.
02:22So we have our lemongrass.
02:27More garlic, of course.
02:33Magyan na rin natin ng konting sausages.
02:38And of course, you just have to make sure na fully submerged yung ating chicken during the cooking process.
02:46We will slow cook this for about two hours to three hours.
