00:00Now I'd like to show you how to make a spinach cream soup. First, add one onion that's been
00:05finely chopped. Now while your onions are turning translucent, blanch your spinach,
00:11two pounds of washed spinach leaves, and do a few leaves at a time. Add a quarter of a cup
00:18plus one tablespoon of all-purpose flour. Cook this for one minute, stirring constantly,
00:24and now we add four cups of homemade chicken stock. Stir and cook until it comes to a boil.
00:32And now if you have a powerful blender, put some spinach in, a couple of scoops of the hot velouté.
00:41Sounds like you're at the dentist. Beautiful. And this goes right into a strainer.
00:48Look at the color. To enrich it, add a little bit of fat, like heavy cream. Now that is a
00:55phenomenal
00:56looking soup.
