03:00Before we get started, I just want to ask a quick question
03:03How many of you left food on your plates this morning after breakfast?
03:09No one
03:11Everyone ate all their food today?
03:12I mean, arguably, I think food
03:14Breakfast in the morning isn't the place where we waste the most foods
03:17But this is what we're going to talk about today
03:19We're going to talk about the food that we waste on our plates
03:22We don't eat everything
03:23We're going to talk about the restaurants
03:26And that get rid of food after not being able to sell
03:31Because they produce too many portions
03:33We're going to talk about the food that farmers waste
03:36And they plow over because we have blemished fruits and vegetables
03:39And also about the perishable dates
03:41And what we throw away when we consider that it's a day-old food
03:45So we'll do quick introductions
03:48And then we'll get started in this topic
03:49So my name is Vera Baker
03:51I'm a venture partner at Unconventional Ventures
03:54Which is a new impact fund based in the Nordics
03:57With a diversity lens
03:58I'm also an atomical angel
03:59And I've made about 30 investments today

04:18Roxanne, can you give us a quick introduction?
04:20Yes, of course
04:21My name is Roxanne

04:24I'm operating partner for Daphne
04:27Daphne is a VC fund that was created in 2015
04:30We have 500 million assets under management
04:33We invest in deep tech projects
04:36That have a social, environmental, sustainable impact
04:39We have about 60 projects in our portfolio
04:43And one of our particularities is that
04:46We launched just about a year ago
04:48A specific fund with Carrefour
04:50The retailer
04:51To really try and disrupt the retailing industry
04:55Nina Granucci is on my right
04:57She is the CEO and founder of Greenspot Technologies
05:01A Paris-based company
05:02Nina, could you give us a quick introduction?

05:04So my name is Nina Granucci
05:07I'm the CEO and co-founder of Greenspot Technologies
05:10I'm originally from Brazil
05:13I moved to New Zealand to do my PhD in biotech
05:16And actually I moved to France
05:19With the idea that I had in my PhD
05:21That how to transform food waste
05:25In actually fermented and upcycle ingredients
05:28That are good for you and for the planet

05:48With about 140,000 active partners
05:51In 17 European countries and in the US
05:54Tina, can we have a quick introduction?

05:58Yeah, so my name is Tina
05:59I'm the VP of Operations with Too Good to Go
06:01I'm pleased to be here today to discuss food waste
06:04And how it's not really waste but opportunity
06:06Like Vera said, Too Good to Go is now operating in 17 markets
06:10And we've saved more than 220 million meals to date
06:13Which is really evidence that we are fighting food waste every single day
06:18In addition to our existing marketplace
06:20Which I'm happy to see so many of you are using already
06:23We're constantly looking for additional solutions to fight food waste
06:27I'll talk a bit more about how we acquired a retail tech company recently
06:30To help expiry date management
06:32And then also how we're moving into other parts of the supply chain
06:35Great, great

06:37So let's get right into the discussion
06:39When we talk about food waste
06:41What are we talking about?
06:42And how big is the problem, Roxanne?
06:44Yeah
06:45So I guess the first thing I'd like to say
06:47Is that the current food industry as it is
06:49Has sustained population growth
06:52And broad economic development
06:54However
06:55It's undeniable that it's depleted
06:58Wasteful
06:59Polluting
06:59And extractive
07:00So, you know, we need to look at it
07:02A few figures that struck me
07:05When I prepared this roundtable
07:06Is that it's responsible for
07:08One third of greenhouse gas emissions worldwide
07:11And it's the primary driver for biodiversity loss
07:1530% of the food that we produce a year
07:18Is either lost or wasted
07:20Throughout the value chain
07:21So from producing
07:22To distribution
07:23To consumption
07:24Not just us as consumers
07:25Throughout the value chain
07:27If we put this into perspective
07:29So that it's, you know
07:31We can identify to it a lot better
07:33In France
07:34It's 10 million tonnes of food
07:35That is wasted every year
07:36Per person
07:38That's equivalent to 30 kilos per year
07:40So it doesn't mean that
07:41I'm personally throwing in my bin
07:4330 kilos of food
07:44But as the end consumer
07:45Of the whole value chain
07:47I am indirectly responsible
07:48For 30 kilos of food wasted every year
07:52If we put that in either financial
07:55Or environmental perspective
07:56If we were able to save this waste
07:59It would be the equivalent
08:01Of 10% of CO2 emissions saved every year
08:04That's the third largest emitter in the world
08:06After the US and China
08:07Or worldwide
08:09It would be a saving of 1 trillion dollars
08:12So I guess
08:13Either if you want to look at it
08:15On a financial perspective
08:16Or an environmental perspective
08:19There is massive opportunities there
08:21And it's not just become
08:24An option anymore
08:25It's now become an obligation
08:27In France
08:28We have the anti-food waste regulation
08:30That came out a few months ago
08:32And so we have milestones
08:34In 2025 and 2030
08:35By which all actors of the value chain
08:39Are going to have to act
08:40On the waste that they create
08:43And so it's not a choice anymore
08:45We have to react now
08:48Tina, do you have anything to add to that?
08:50Yeah, you're completely right Roxanne
08:52It's a massive problem
08:54And the numbers
08:54They clearly indicate it, right?
08:56And it was actually
08:57It was announced
08:58The single biggest effort we could take
09:02To fighting climate change
09:03Is to fight food waste
09:05As individuals, right?
09:07So it's a huge, huge problem
09:09Project Drawdown
09:10Made that the number one reason
09:13To fight food waste
09:13So I think really what matters
09:15Is that we look at solutions together
09:17There's not going to be one single solution
09:19So it's about fighting food waste
09:20Throughout the entire value chain
09:22And supply chain
09:22Like you say, right?
09:24And really what we try to do
09:26At Too Good To Go
09:26Is create this platform
09:29In this marketplace
09:30Where we make this surplus food
09:34Available to users
09:35So not only do our partners win
09:38So whether that is manufacturers
09:39Restaurants, supermarkets
09:41They can deal with their food waste
09:43And their surplus food
09:44Also users can buy it
09:46At a discounted price
09:47So that's a win-win
09:48And then the added win
09:49Is then obviously the climate
09:50Right?
09:51So it's a triple win
09:52That we combine
09:53And we create community
09:54Around fighting food waste
09:57Nina, where is this wasted food coming from?
09:59Who is responsible for this?
10:01Yeah, so I think everyone is responsible
10:04For food waste, actually
10:07Where Green Spot works
10:09Is actually in the food waste
10:10That's produced
10:11In the first transformation industry
10:12So it's in a different point
10:15Of the supply chain
10:17And actually
10:18We are wasting
10:19The most nutritious part
10:21Of the fruit and vegetables
10:22That are processed
10:23So that's where Green Spot actually acts
10:26Is how to save
10:28Transform
10:28And give back
10:31As a food
10:32So keeping food as food
10:33This food waste
10:34Today
10:36So actions on food waste
10:38As we've been talking about
10:38Represent a significant business opportunity
10:40For investors
10:41For startups alike

10:44Some of that opportunity is

10:48What's important
10:49As Tina was saying
10:51Is that you need to look
10:52At the whole value chain
10:53So it starts from farming
10:55And producing
10:57All the way through
10:58To consumption
10:58But in the meantime
10:59You have transportation
11:01Transformation
11:02So packaging
11:04Transportation
11:05I think I said that
11:06And so you need to look
11:07At the whole value chain
11:08At Daphne
11:09Obviously
11:10We wished we had a project
11:12At the whole level
11:13Of the value chain
11:13But we do look at
11:14Three different aspects
11:16Of the value chain
11:17The first one
11:18And there's a figure
11:19Associated to that
11:20In France
11:21We waste up to 46%
11:24Of fresh fruits
11:25And vegetables
11:25Every year
11:26And that's related
11:27Mostly to the fact
11:29That those in the shops
11:31Those who are actually
11:32Looking at stocks
11:33And you know
11:35Ordering on a daily basis
11:36Don't have the information
11:38They need to do
11:39Need to do
11:39A sustainable
11:40And reflective purchase
11:43So right now
11:45What they're doing
11:45They're doing it
11:46On a piece of paper
11:46So we invested
11:48In a company
11:48That's really empowering
11:50Those actors
11:51At the retailer level
11:52To have all the information
11:54They need to make
11:55An empowered decision
11:56So what this platform
11:58Is doing is that
11:58It's gathering information
12:00From the weather forecast
12:01From local events
12:02From consumer habits
12:04And it's gathering
12:05All this information together
12:07And making educated
12:09Proposals
12:10To those who are actually
12:11Going to restock
12:13The shelves
12:14In the retailer shop
12:15So that's
12:16Obviously one side
12:17Of the value chain
12:19We're also looking
12:20At a company
12:22A little bit
12:23Like Green Tech
12:24Which is called
12:24Upcycle
12:25And is looking
12:26At upcycling
12:27So here the idea
12:28Is that you can create
12:30Food and food opportunities
12:32Through components
12:34And ingredients

13:02Of unused opportunities
13:05So just
13:06The shell of the cacao bean
13:08Is just one example
13:09They've managed
13:11To save
13:12150,000 tons
13:14Of food
13:14That would have
13:15Just gone to waste
13:16And more importantly
13:18They've
13:18And I think
13:19That's the future
13:20Of tech
13:21Is they've become
13:22A reference actor
13:24For the government
13:25Of these
13:26Working on legislation
13:27And drafting
13:28The future legislation
13:29Of the food industry
13:31And they've really
13:32Become one of the
13:34Main actors
13:34That are going
13:35To influence this
13:36So they've been able
13:38To bring their solution
13:39At an industrial level
13:40And that's what
13:40We like to see
13:42In the tech industry
13:43And then the final
13:45Project that we looked at
13:46Is a little bit
13:47Like too good to go
13:48But I'm not going
13:48To compare that
13:49That close
13:50Is a company
13:51Called Give
13:52Basically
13:53Uneniably
13:54You will have waste
13:56And you know
13:57It's just
13:57Not always a matter
13:58Of saying
13:59You shouldn't
13:59Create waste
14:00You have some
14:00And we have
14:01To deal with it
14:02And so this company
14:03Is a platform
14:04That's looking
14:05At redistribution
14:06And basically
14:07Offering those
14:08That have waste
14:09So you might
14:10Have at home
14:10I don't know
14:11A pack of milk
14:12That's going to go
14:14Unused
14:14Because you're going
14:15On holiday
14:15And you want to put it
14:16You know
14:17On a platform
14:17So it becomes
14:18Available for other people
14:19And then putting you
14:21In touch with people
14:22Who are very happy
14:23To have food for free
14:24Because they can't afford it
14:26Or just because
14:27It makes sense for them
14:28On an environmental perspective
14:30And so
14:31I guess these three companies
14:33Are looking at
14:34Three levels
14:35Of the value chain
14:36Hopefully we get companies
14:37Throughout the value chain
14:39At some point
14:40Perfect

15:03Like for the tomato
15:05Sauce industry
15:06The peels and seeds
15:07Are wasted
15:08Most of the time
15:09They go to landfills
15:11And what we actually do
15:14It's to do
15:15To use fermentation
15:16So we have a solid
15:17State fermentation
15:18That's a bit of
15:19A different type
15:20Of fermentation
15:21That we use
15:22That can then
15:23Change and transform
15:25The side stream
15:26And when I say
15:27Transform
15:27It means that
15:28Seeds and the peels
15:30Of tomatoes
15:30Are quite bitter
15:32Most of the time
15:33So they can
15:33They are very difficult
15:35To be reincorporated
15:36In food as they are
15:37But they are
15:38Very nutritious
15:39So the fermentation
15:40Will transform
15:41Will change
15:42The flavor profile
15:44So now you have
15:45Umami flavor
15:46That's quite
15:46An interesting flavor
15:48To have in the food industry
15:50And now it can be

15:54That is a very big space

16:46We help companies
16:47Understand how to
16:48Really really make
16:50The most of
16:50What's close to expiry
16:52Another thing
16:53That we also
16:54Are looking at now
16:54Is another part
16:55Of the supply chain
16:56Where we're working
16:57Closely with manufacturers
16:58So directly with
16:59The manufacturing link
17:00Not with the retailers only
17:02But making manufacturing products
17:04Available to our users
17:05As well
17:05So it's really fighting it
17:07Before it even goes out
17:08To the stores

17:54It's often good after
17:55As well
17:56So we really work
17:57With information
17:58Both at household level
17:59But also with schools

18:04Through the supply chain
18:05But also at the very last part

18:08In terms of what we see
18:09In the US and Europe
18:11In terms of how we look
18:12At food waste
18:13And how we deal with this

18:15Is that it's a problem
18:16Everywhere
18:17So I think no matter
18:18Where we tackle
18:19In the supply chain
18:21It's really
18:21It's less dependent
18:23On geography
18:23And more the fact
18:24That hey
18:25We have a big problem

18:34And we need to keep

18:48So for me
18:51Upcycling is very core
18:53To really
18:55Climate change as well
18:56And the circular economies
18:59Because you could think
19:01Okay we need more food
19:02That everyone is saying
19:04We are a growing population
19:05We will need more food
19:06But actually
19:07We can also use better
19:10The resources that
19:10Already produce
19:11And that's what
19:13Circular economy
19:14Means as well
19:16So if we think about
19:18When green spot

19:21We have is actually
19:22To work with the companies
19:23That they produce

19:25Then we can transform
