00:00Hi everyone, I am back again. Now I am going to do for you a Diwali special since Diwali and all
00:09festivals are coming very near. So we should do something very exciting, something very good
00:14and healthy for Diwali, the Sehra, Navratri and all the festive seasons. Now Diwali is round the
00:21corner and let's make this Diwali special with some special recipes. Today I am going to start
00:26making Kheirni which is something different. Kheir is made with rice and Kheirni is made
00:32with Sivaiya which is a very typical of the Sindhis to eat Kheirni with Sivaiya. So now
00:39let's start making it. We shall start with the milk and keep it to boil. The milk is set
00:45to boil. Keep stirring the milk so that there is no cream coming on top. The milk has come
00:55to a complete boil. I put the milk down and now we shall fry the Sivaiya in some ghee in
01:03another pan. Take 2 tablespoons of ghee. Add in the Sivaiya and roast it to a nice brown
01:17colour. You have to burn out the Sivaiya's nicely till they are brown in colour. You take
01:24a minimum of 7 to 8 minutes. The colour has changed very well now. Now I will add this to
01:31the milk. We shall keep the milk to boil again. We shall add in the nuts. Add in the parliament
01:51powder. Now I will add in the saffron. The saffron is for colour, for flavour. These are
02:03the two things where the Kheirni will get its colour and flavour from. The vermisli has been
02:10cooked. I have switched off the gas and I will remove some vapours. The reason for removing
02:16of the vapours, when I put sugar, the milk should not curdle. I am adding in the sugar. The Kheirni
02:34is ready. You can serve it hot or chilled. The choice is yours. And if you ask me, I would like
02:40to have it hot, not chilled because the taste of the hot is much better than the chilled one.
02:45Now serve it in a nice bowl.
