00:00Hi guys, I am back. I wish you all a very happy Diwali and a prosperous new year.
00:11I am going to make a most famous and a favorite dish of Diwali in which in Maharashtra is called Karanji and in the North India it is called Gojya.
00:22It is a sweet dish which is made of Mawa and other dry foods. So we shall start.
00:31Here I take a few cups of Maida, 3 tablespoons of oil and I mix it very well so that it becomes crumbly and nice.
00:51Like bread crumbs. The oil and the flour has to blend in with each other very well. The flour has become nice and smooth.
01:04So now I will add in some water and knead the doughs. I will add in some more water.
01:26The dough has been made. I will keep it to rest with a moist cloth for 15 to 20 minutes.
01:55Now I will teach you how to make the mix of the Gojya or the Karanji.
02:022 cups of Khoya that is Mawa.
02:05200 grams of powdered sugar.
02:1530 grams of chopped almonds.
02:1830 grams of chopped almonds.
02:2220 grams of Kishmish.
02:281 teaspoon of powdered cardamom. Mix it with your fingers so that it mixes well.
02:42The mixture is well mixed. Put some oil to become hot in a Karai. The dough has become soft and nice. Take small balls.
03:04With the help of a rolling pin, I will make small puris.
03:11I have got a Gojya mold or a Karanji mold which is freely available in any utensil shop. I will grease it lightly on both the sides.
03:27And I will keep this puri. You don't have to really fill in a lot of mixture. Very little mixture. Close it tightly.
04:20If the seals open just press it and close it.
04:33The oil has become hot and nice and now we put the gojiyas or the karanjis to fry.
04:49Fry the karanjis or the gojiyas to a nice golden colour.
04:53The gojiyas are done.
04:54They are nice golden brown in colour.
04:56So now I shall remove it from the hot oil.
05:10Now I will plate out the gojiyas.
05:17The gojiyas are ready or the karanjis are ready.
