00:00It is meant to be eaten in Diwali. We all enjoy eating nuts and sweets in Diwali but this is a nutty pulao, a pulao-e-alam.
00:17Which I am going to teach you how to make.
00:22So let's start. Put some oil in a pan. Add in the onions. Saute the onions. While the onions are getting sautéed, we will make the curd mixture.
00:37We have the curd. Coriander leaves 2 tbsp. 1 tsp ginger. 1 tsp garlic.
00:521 tsp green chilli. 1 tsp red chilli powder. Some salt to taste. Now we will mix this mixture.
01:12The mixture is smooth and nice. The onions are getting translucent. We add in 1 tsp of shahi biryani masala.
01:24We will add in the couscous and the coconut paste. Now add in the curd mixture. And cook for another 3-4 minutes.
01:51This pulao is made without any meat, without any vegetables. I use only nuts while making this pulao. So that is why I named it pulao-e-alam.
02:03The curd mixture has been cooked for 4 minutes with all the oil getting separated.
02:09Now we add in the rice. Mix the rice and the masala together. And let it cook for at least 3-4 minutes.
02:21Now I will add in all the dried fruits. But not the cranberries and apricots. Only the dried fruits.
02:27The rice will cook for another 5-6 minutes. When it is 3-4 done, I will add in the cranberries and the dried apricots.
02:34So I cover the rice and let it cook for another 4-5 minutes. Now I will open the cupboard and see whether the rice is 3-4 done.
02:42Yeah, it is 3-4 done. Now I will add in the cranberries. As well as the dried apricots. And the dried apricots is just to give a little sweetness to it.
02:57See how colourful it is looking. If you want to make this pulao-e-alam more richer, you can add in 1 tablespoon of ghee. Pure ghee or just vanaspati.
03:07I am adding in 1 tablespoon of pure ghee.
03:15Pulao is ready. See that it is looking so yummy. And now we shall plate it out.
03:20We shall garnish it with some cranberries, some cashews. And some coriander, of course.
03:34The pulao-e-alam is ready. It is ready to serve. Serve it along with curd. Enjoy the festive season.
