09:05leaving is a cake a whole career has spawned I have one of the coolest weirdest careers ever I
09:11make a YouTube series where I teach cake and cookie decorating classes I'm so good at my job
09:16I'm wearing a ring that says revenge which is what I'm here to get today
09:20Justin what are you mixing into your eggs there this is some vanilla beans and some vanilla extract you're
09:29making a vanilla cake yeah based on some favorites of mine and some of my grandma's I'm putting in her
09:35homemade apricot jam I used to win in the county fair stop it my grandma and I used to do so much
09:40together I mean Christmas was her favorite which is what inspired my cake she would just constantly
09:44give me the same gift over and over so I have seven of these scented pillows my grandma was such a
09:54special character and later on in her life as she developed Alzheimer's she'd give us a gift of a
09:59pine scented pillow so it's sort of like my holiday tradition to trick the judges and make it not look
10:06like heavy cake but a fluffy pillow is the challenge luckily I'm actually really good at making cakes look
10:14fabric-y and I feel confident that I could pull this off going in granny this one's for you
10:20Timbo is very serious concentrating hard like the best is panic going through his mind right now I can't tell
10:28I don't know Timbo one last look when I saw Timbo my jaw dropped he's a celebrity he's a cake all-star
10:38man you're adding too much pressure Paul my first show was Dove Till Dawn and after winning that one
10:44it kind of just lit a fire in me and I wanted to see how many more I could win I was undefeated for
10:50years and then I started doing judging but like I want to be back out there I want to get my hands
10:55dirty I've never competed with somebody who's been a judge before that's a big title is it cake is the
11:02biggest cake show right now this competition is like the Olympics of cake competitions and so if I
11:08want to add another one to my list this has to be the one what about your cake design is it inspired by
11:13grandma actually it's like the complete opposite growing up we used to do soul food every holiday
11:20yeah and then eventually me and my siblings just kind of got tired of having the same thing every
11:25year and so for the holidays now we have seafood boils so your station is gonna be smelling like
11:31seafood all day huh yeah I'm gonna make it hard to work for my cake I'm recreating a seafood boil in
11:39a pot I have to make sure this pot looks exact it has to be perfectly painted or it'll be a dead
11:45giveaway and I need everything on the inside to look just as cool as the outside so you're making
11:50like lobster and crev and everything everything I work well under pressure so it's gonna be hard to
11:57break me but we'll see what's going on with your cocoa powder Timba I'm doing a drunken brownie cake
12:04and candied pecans that are soaked in whiskey and Kahlua oh something light it is the holidays it
12:11is yeah we'll take a shot in the middle oh you promise yep kicks going in I don't know about you
12:23but this feels like the first time it does yeah this is not second nature to me as it is to you and
12:28Timbo I'm nervous because I see Justin as a really amazing Baker just like Timbo give him
12:35an airbrush and he does amazing work there's seasoned vets and I've just started competing
12:42you know what I love rubbing elbows with people like you oh are we having a moment we're having
12:48a moment oh my gosh the first time I competed on is it cake was Halloween season I was definitely
12:54the Birdman Halloween version I made it to the finals I didn't win it but I couldn't believe
13:03that I was able to compete at that level because I really started baking cakes only three years ago
13:09and I still feel like a rookie what are you making I am doing Mrs. Claus cookie jar my mom she's like
13:18Mrs. Claus she's so festive one of my holiday traditions is that Christmas time she'll be
13:24baking till four in the morning like it's wild even now she's 80 years old she goes till four in
13:29the morning oh that's really sweet this is a tribute so the Mrs. Claus cookie jar is glossy and
13:36everything is smooth there's really not a lot of room for air oh I'm stressed I know the biggest concern
13:44is gonna be the face getting that head it's like a bubble head you gotta bulb it just right Paul what
13:52smells so good over there my cologne it smells a little bit more like maple I am making a maple bacon
14:02buttercream cake with caramelized pecans are you using Canadian bacon could be the secret part of the recipe
14:10bacon and whiskey this is the best day of my life kicks in the oven oh my gosh Mikey's back with the
14:21decoys it's time for one of my other favorite traditions decoys Timbo your seafood smells amazing

14:43like pine though it's the holidays oh look at that cheers all right now I'm up now's the fun part
14:56lookie who we have here mom's cookie jar I have to make my whole pot now oh lookie start to layer
15:06let's get some cake oh my little fun pillow once I've stacked it all the way it's time to carve
15:14seems heavy it's supposed to be a pillow that could be a little challenging right yeah trying to make a
15:24cake look light you don't want to look like it's weighing down you have to pay attention to how it
15:27lays on the board my goal for the shape of this pillow is to make it look fluffy that's it the
15:34perfect bulge and I have to put this burlap texture around the outside it's so important to get this
15:41material right because that's what the judges are gonna see right away if I just ran this through the
15:48sheeter that could work I'm gonna use the sheeter but I want to put the impression through the
15:53sheeter with the fondant nice oh yeah baby you working oh like a charm looks legit that's smart
16:07oh how's it going over there we're moving we're working on the head now I am taking a mold of the
16:17face I'm gonna put my modeling chocolate in there and hope for the best do you normally use molds when
16:24you're sculpting I freehand everything yeah but I take my time yeah oh no what's wrong happened I put my
16:36face on upside down oh my gosh can you turn it I can't because the top of the head is here and it
16:45needs to be really round it's not salvageable oh this is a big setback for me let's do this again
16:54you'll be all right it's looking more and more pot light this is the easy part though because I have a
17:03lot of sculpting to do yeah and hoping nothing in here is alive we smell your seafood one of the
17:11things that I have to get right is those 3d claws falling out of the pot if I know you you're gonna
17:17freehand a lot of stuff yeah well that's the plan for now are you using modeling chocolate for your
17:22seafood I'm using modeling chocolate fondant gum paste everything we have here we need a Christmas
17:34movie where Paul's the main character wouldn't he be great he's a former cop turned baker she's a serious
17:43lawyer stranded in Canada and then they fall in love I got it happy Paula days I like it
17:53good Timbo you look right in your element with that hair brush I'm scared every time that thing
18:12comes out magic happens I'm just gonna start stenciling the design and then I need time to paint
18:19perfect that's really hard to paint that way when it's not laying flat Timball what's going on how
18:36you doing not good why I have to make sure the pot is perfect but the splatter is just impossible to
18:44recreate I'm an artist first so I always love the decorating but the decoy pot has a lot of large
18:51blocks on there and mine is getting kind of streaky so if I don't get that splatter perfect it'll be
18:57super easy for the judges to tell which one is cake and which one is not that might work I see a cookie
19:04jar I salvaged it I got a head on the face is in the right position finally I'm looking down at the
19:12cake and I'm not seeing nostrils you're starting the painting I am one hour one hour left bakers

27:32very very difficult to do right it feels not a fan of fabric 10 seconds more looks like a cake that's
