00:01Way down south, in a beautiful corner of Tasmania,
00:04this is the stunning Huon Valley,
00:06about a 40-minute drive from the capital, Hobart.
00:10And this is my century-old timber cottage.
00:14I've been living down in Tassie for a while now,
00:17and I feel like I'm finally getting my head around
00:19the different roles this place requires of me.
00:22You know, cook, farmhand, chief caretaker of the animals,
00:26renovator, build manager,
00:28and all of the other things that are needed of me here.
00:31I feel like I'm finally starting to find my stride.
00:39This is, of course, my 110-year-old cottage.
00:42She's still falling apart at the seams.
00:45I've made some improvements, I have heating now,
00:47but it's still an everyday struggle.
00:50The wiring doesn't work, pipes leak all the time,
00:53all the toilets back up.
00:55Yeah, it's a labour of love.
00:58The bees have been doing a great job supplying me with honey and beeswax for the house.
01:02Ideally, I'd really like to get another hive.
01:04The only issue is, they're a little bit too close to the house.
01:07So they're going to have to be moved.
01:09But that's a job for next month.
01:13When I moved in here, this was an abandoned veterinary clinic.
01:16There was a lot of stainless steel tables, which you know in my kitchen.
01:20Fluorescent lighting.
01:21Then, as I began the build of a commercial kitchen,
01:25I realised that it made sense to me to open it up to the public.
01:29So my new idea is that it becomes a 10-seater farm-to-table eatery.
01:34And it's an open-to-table eatery.
01:35.
01:36.
01:37.
01:38.
