00:34Coming up, the students will try to make the grade in potions class, where nothing is quite
00:41as it seems.

01:11Because everybody here needs a clear head for tonight's challenge.

01:26This task is inspired by a classic potion that was used many times in the films.
01:31One that gave us more Harry's than you'll ever see at a comic con.

01:36Polyjuice potion!
01:42Wow, we're identical!
01:59Whatever you bake tonight must have that Polyjuice power of transformation.
02:04Because these showpieces are not going to be quite what they seem.
02:10At your workstations are eight objects and artefacts, which all relate to a different character
02:18from the world of Harry Potter.
02:20Our challenge is to pick any two objects, then recreate them as realistic, edible showpieces.
02:28I'm feeling pretty confident.
02:30I'm known for the kind of illusion, hyper-realistic stuff, and I'm super excited to start.
02:35As always, they will have to taste delicious.
02:40Because they'll be judged by our meticulous ministers of baking, Carla and Joseph, who will
02:46also be trying to identify your cakes amongst the real objects.

07:57On top, there's a caramel smoked chocolate mousse.

08:35and I'm gonna pipe it into the mold.

08:45So I am making the little loop to attach the ribbon
08:49and the little hinge to attach the two pieces together.

08:56So we're each doing tasting elements.
08:58I think they work really well together.
08:59I'm gonna do my tasting.
09:01Inside the handle, there will be layers of salted caramel,
09:04masala chai, and cocoa nibs.
09:07I'm gonna start off with my caramel.
09:10I'm gonna use a little bit of Newfoundland sea salt today.
09:12My family immigrated from India to Canada.
09:15One of my favorite flavors is Newfoundland sea salt.
09:18So I wanna do a salted caramel
09:20to pair with my masala chai ganache.
09:23So I've just toasted some whole spices for my chai ganache.
09:27I'm doing a double layer bonbon today.
09:30I'm gonna fill this with my ganache,
09:31and once I pop those out,
09:33they're gonna have that gorgeous green shine.
09:35This really is a challenge about details,
09:37and so I wanna make sure my details are on point.
09:40So my chocolate is soft and pliable
09:43for me to form this dagger.
09:45Bellatrix's dagger will be made of primarily modeling chocolate
09:48and tempered chocolate.
09:50And I'm gonna be hand decorating the blade.
09:52Because it has to fit the handles that I've already cast,
09:55I wanna make sure the size is just right.
09:57I want it to have the illusion of sharpness
10:00without having the fragility.
10:02So, pretty sharp.
10:05The detailing and the carving really comes through
10:07when I paint it,
10:08but it's gonna pop even more when I luster it after.
10:11I wanna make sure that this looks just like a blade.

10:25For the Skelegro bottle, I'm carving a brown sugar sponge
10:31layered with coffee and hazelnut buttercream
10:33sealed with dark chocolate ganache for structure.
10:36So this cake is gonna be, like, rich and indulgent,
10:39but it's also got to stand up enough and hold itself up.
10:43Yeah, we don't want the Skelegro falling over.
10:46It's the last thing we need.
10:48Then he'll need the Skelegro to regrow his bones.
10:50This is quite a difficult work to do.
10:56For this challenge,
10:57I'm gonna make the armillary sphere
10:59all out of chocolate.
11:03The chocolate has taken me to Paris.
11:06I've been in Taiwan,
11:07where I was in charge of a chocolate museum.
11:10So right now, I'm doing the chocolate rings,
11:13and I will make a lot of them.
11:15I have to use some physics
11:17and also all the engineering
11:20that my father has taught me through the years.
11:24Alex, darling, how are you doing?
11:26Uh, well...
11:28It's looking very complicated.
11:31It is.
11:32I'm a little stressed right now.
11:33I need to make them as even as possible.
11:36They cannot be really heavy,
11:38but they cannot be too thin.
11:40But I think this is gonna impress the judges a lot.
11:44Once I have all of this, I can start assembling.
11:47That's actually gonna be the size of my
11:49sherbet lemon dish.
11:51I'll be making the sherbet lemon bowl
11:53using modeling chocolate.
11:54What I've done is I've taken two bowls,
11:56tipped one onto the other,
11:57so when I'm happy with the outside of the bowl,
11:59I can put the cakes inside.
12:01It's got to be to scale,
12:02because no one is gonna believe it
12:03if it's too small or too big.
12:05You've got to think about the textures.
12:06You've got to think about the surfaces,
12:08the colors, the tones.
12:09So I have done hyper-realistic cakes before
12:11and illusion cakes.
12:12In fact, I really, really enjoy it
12:14when I've got lots of time to do it.
12:16So what I'm doing first
12:18is getting my cake batter in the oven.
12:19Then I'm gonna fill the bowl with stacked cake,
12:22and then I'm gonna fill that
12:23with my homemade lemon curd,
12:24and then I'm gonna make some
12:25Swiss meringue buttercream,
12:26and I'm gonna flavor that with lemon.
12:28There's my sponge.
12:29I'm very happy with that.
12:30I'm having to sculpt this little tiny cake
12:34and just try and make some marks and shapes in there
12:36that look a little bit like sherbet lemons.
12:39I wish it could fly.
12:42This is defective.
12:44It doesn't fly.
12:45I'm gonna have to write a letter.
12:47So I'm gonna get started on my part of the broom,
12:49which is gonna be to create the actual broom handle
12:51and the connectors for the pedals for the broom.
12:53And I'm making the actual base.
12:56To create the actual broom handle,
12:58I'm gonna take some isomalt,
12:59I'm gonna boil it up,
13:00add a deep black color to it,
13:02and then I'm gonna pour it into a silicone tube
13:05and let that set up.
13:06I need to make sure this is beautiful.
13:08I just love the fact
13:09that you can get that beautiful shiny finish,
13:11and I think that's gonna really add
13:12to that hyper-realism part of the broom.

18:35diplomat cream, the brown sugar bourbon buttercream,
18:38and candied pecans.

18:43I do have to start carving my puff cereal treats.
18:47I need to put my cake in the middle layer
18:49and carve that to align with the rest of the shape of the broom,
18:53and then go in with my brown sugar bourbon buttercream
18:56to cover the entire piece.
18:58Now, it might sound like an easier challenge
19:00because we're not asking our bakers to do big, big show pieces,
19:04but I think this will show that the devil is really in the detail.
