This year, Food & Wine looked back on all of the wine and culinary trends from the past 25 years. In this video, the F&W team discusses the three wine trends that had the most impact, including: Screw top closures, grower champagne, and orange wine.
00:00This year, Food & Wine took a look back at all the trends for the last 25 years in food, in wine, in restaurants.
00:05We talk about wine. That's our gig here. Yes, we do.
00:07So we're going to go through three of the really cool trends that have happened over the past 25 years, starting with...
00:13Screwtop closures. So not a cork.
00:16We are dealing with a really easy closure that has revolutionized wine convenience.
00:20And the great thing is that these days, screwtops are not just for kind of that inexpensive wine that you're just going to pop open.
00:26Really delicious, age-worthy wines have screwtops.
00:29Grower Champagne. Most big Champagne houses, your Cliquots and Moets of the world, they buy from thousands and thousands and thousands of small, independent farmers.
00:37Grower Champagnes, which kind of popped into view in the past 25 years, are from an individual estate.
00:43One person making wine on their one little property.
00:46People call it Farmer's Fizz.
00:47Farmer Fizz. Farmer Fizz.
00:49You can identify yourself instantly as a wine geek if you start talking about Farmer Fizz.
00:52Finally!
00:53Orange wine.
00:54Everyone's heard about orange wine. No, it's not made from oranges.
00:58No, no oranges. Zero oranges.
01:00It's an approach to winemaking that literally goes back to the dawn of winemaking, 8,000 years.
01:04But it was sort of fell out of fashion like 4,000 years ago.
01:07It has only come back in, in the past 25 years or so.
01:10And it's made kind of similarly if you take white grapes and you make it like a red wine.
01:15So you're going to press the white grapes and let them hang out with the skins for a while,
01:19which will impart that kind of orangey, goldy color to the wine and some structure and tannins.
01:24Exactly.
01:25That's why it says on the label of this one, Skin Perment Chardonnay.
01:29It's a chardonnay that's been fermented on the skins.
01:31Can't wait for the next 25 years of wine.
01:33Yes, I intend to experience them on a boat with my wine.
