00:00I'm going to spend the whole day in my kitchen making 15 freezer meals from scratch.
00:05I've got a clear grocery list and I'm headed to my favorite grocery stores to stock up on the essentials.
00:12This time I'm trying to make things easier by prepping ingredients the night before.
00:16I don't know if I recommend cutting that many onions at once. My eyes are burning so bad.
00:22I'll be sharing some family favorites as well as some new recipes I haven't tried before.
00:26These are all simple meals with real food ingredients including lots of easy freezer to slow cooker options that your family will love.
00:35This is going to be a whole process cleaning this kitchen.
00:37Things may have gotten a little chaotic but the satisfaction of checking off recipes from my list and seeing all the raw ingredients I bought transform into freezer meals one by one was super motivating.
00:49I was also extra motivated today because I'm not just stocking my freezer but also bringing freezer meals over to my sister-in-law who just had a baby.
00:58It should be a fun day in the kitchen so come along and we'll see if I can accomplish everything on my list.
01:09I have my list in hand and I'm going to Costco first which always gets me a little stressed out because our Costco is normally insanely busy but I got lots of bulk meat as well as eggs and some other things we need.
01:20I try to focus on just the essentials when I go to Costco so things that I might need in bulk and then I get the rest of the fill-ins and all the other little ingredients at my favorite store which is Aldi.
01:36Locked and loaded.
01:37I may look like a weirdo with my laundry basket but I promise you it's the best way to do Aldi.
01:45They don't give you bags and this is just the easiest way to go shopping with all the little things that I end up buying there.
01:50I really love Aldi because they usually have everything I need and it saves me a ton of money.
01:55I got back home and since I had a big cooking day planned for tomorrow I spent my evening doing some of the prep ahead of time just to get it out of the way.
02:03Look what I got today.
02:07Isn't that awesome?

02:11Oh nice.
02:13I decided to chop up all the onions.
02:15I had to do five large onions and as you can see I was having a bit of trouble here as they were making my eyes burn.
02:21Shoot.
02:21I don't know if I recommend cutting that many onions at once.
02:40My eyes are burning so bad.
02:42I'm surprised my mascara is not like streaming down my face.
02:45Now I have to soak some chickpeas for a palafel recipe I have planned.
03:02I had a little help with this but we also peeled 20 cloves of garlic and this is a game changer for meal prep days.
03:08So I got that in the fridge and I'm also making some bone broth to cook throughout the night so that it will be ready for tomorrow.
03:18I also laid out some ingredients so I would be ready to cook first thing in the morning.
03:22It was a cozy rainy day so I decided to light a candle and I'm settled in ready to cook for the day.
03:33Alright so this first one that we're starting with is crock pot honey sesame chicken.
03:39I've been making this one for years.
03:41It's always been a winner for us and it's super simple to cook in your slow cooker.
03:46This is great served with rice and broccoli.
03:49I'm making doubles of everything and I am going to take half of it to my sister-in-law who just had a baby.
03:57So I'm going to put these together and then my mom and my sister are going over to her house today and they are going to deliver these for me.
04:06Okay for this recipe I'm making a marinade and I'm just going to pour it over the chicken.
04:10So I have a half cup of soy sauce.
04:12I forgot to double the soy sauce here.
04:16I'm adding a whole can of tomato paste.
04:20Two teaspoons of sesame oil.
04:25A half cup of honey.
04:32A tablespoon of water and at this point I'm realizing my jar is definitely not big enough.
04:42Six tablespoons of rice vinegar.
04:46Two teaspoons of onion powder.
04:51Three teaspoons of sriracha.
04:55Six cloves of garlic.
04:56I also forgot to double this part.
04:58Here is the printed recipe in case you want to screenshot this for your record so you can remember but I was doubling this.
05:15I didn't get all the measurements exact and that's okay.
05:18I'm just going to shake it all up.
05:19I also forgot the pepper so I'm adding that in.
05:22Shake it all up and then just add it to the two bags of chicken.
05:25My candle did not last long with the open window so I guess I'm done with that now.
05:42And now I'm moving on to the next recipe.
05:44This is another very simple chicken taco recipe that you can make in your slow cooker.
05:57I got the recipe from the pinch of yum blog which is one of my favorite food blogs.
06:01I've been following her for years but I left all the links in the description below so I did four cloves of garlic and once again I forgot to double this.
06:15Then you want to chop up two to four chipotle peppers in adobo sauce and then split that up between the two bags.
06:39Next you're going to add a chopped onion in each bag.
06:42I have to say I think the prep the night before is truly game changing when it comes to freezer meal prep days.
06:51This has been so much more seamless so far than my last cooking day.
06:57You're going to add a teaspoon of oregano in each bag, a half teaspoon of cumin in each bag,
07:06a half teaspoon of salt in each bag,
07:12a half teaspoon of chopped fire roasted tomatoes.
07:14Oh these are not crushed.
07:18I wonder if I should
07:22crush them, I think I will.
07:25that part isn't totally necessary but I wanted to do it now you're gonna add
07:36three-fourth cup of crushed fire roasted tomatoes into each bag finish it up with
07:44a tablespoon of olive oil into each bag and then a fourth cup of chicken or
07:49beef stock in each bag next just make sure you mix up all of those ingredients
07:52pretty well seal the bags and you can stick them in the freezer and when you're ready
07:57to eat them you can cook them in the slow cooker and serve them with tortillas and
08:01toppings for tacos here's a screenshot of that recipe in case you're a visual
08:14learner like me and then I also left the link in the description everything is
08:18going really well so far and now I'm going to make some honey oat sourdough
08:23sandwich bread my starter has been rising on the counter since early this
08:26morning so I'm going to mix up the dough and bake it later this afternoon I'm
08:31using freshly milled flour and I'm also adding yeast to this dough so that I can
08:36speed up the process I like doing that because while I like the flavor and the
08:41health benefits of sourdough adding yeast just speeds up the process a bit gives
08:46you some of the same effect but the bonus of getting it in the same day which
08:50helps when you're a busy mama so for this recipe I'm adding a cup of oats I was
08:55actually supposed to add the oats at the very beginning with the water but I
08:58forgot the oats are supposed to soak in the water and then you add in the eggs
09:01and the butter and the honey and all that stuff and then you add in all your
09:05flour you mix it up you let the flour sit for like 30 minutes so after I mix this
09:12I'm just gonna stop the mixer and let it sit before I add the salt and the yeast
09:17that's called the auto lease and that just allows the flour to absorb the
09:22liquid and then it's easier to work with so now this is the auto lease and then
09:27later I will knead the dough okay now we're moving on to meal number three
09:33we're making another simple chicken taco recipe pinch of yum has so many awesome
09:46easy recipes so here we go again with another pinch of yum recipe so I'm
09:52getting my chicken into the bags and now I'm moving on to dicing up some jalapeno
10:03all right now into each bag we're adding one jalapeno diced and we're adding in
10:12half of a red onion diced into each bag next two cups of finely chopped pineapple
10:18into each bag I did not chop mine finely enough but that's okay we're not
10:22worrying about that today one teaspoon of salt in each bag one teaspoon of chili
10:27powder each a tablespoon of sriracha in each bag a tablespoon of yellow mustard
10:36which I thought was interesting this time I did not forget to double it you're
10:41going to do three cloves of garlic minced in each bag
10:46so the recipe calls for one-fourth cup of water for each bag since I have this beef
11:00broth I'm just going to use that instead since I know it's going to add a little bit more flavor
11:04to this kind of mix this together you know get all these flavors blended with the chicken and then
11:19that's it smells really really good the mustard adds a really interesting flavor and smell I think
11:31it's gonna be so good I was having a hard time getting the chicken to mix in this bag so I had
11:39to reach my hand in which I really didn't want to do but then I washed my hand and sealed it up
11:45really well and I'm putting these in the freezer this is another slow cooker recipe but you can also
11:50finish it off in the oven to make that chicken a little more crispy here is another visual of the
11:56recipe for you guys if you want to screenshot it and I will also leave the link in the description
12:01the auto leaves period for my dough is finished so now I'm adding in the salt and the yeast I'm
12:10turning on my mixer to knead the dough for the next 12 minutes or so and then I'm gonna look at the dough
12:15and see if it passes the windowpane test and if not I will keep kneading it until it's nice and smooth and
12:22elastic while my dough is kneading I'm gonna move on to meal number four this meal is called a life-changing
12:39beef stew by pinch of yum and I liked this recipe because there were so few ingredients in it and I
12:47just had to try it out instead of buying stew meat I bought chuck roast and cut it up into chunks this
12:52actually saves you a bit of money and now I'm gonna chop up all the veggies for this recipe all
13:00you need to do is roughly chop up six whole carrots two celery stalks and a whole onion and then you just
13:08add in some salt sugar and some tomato juice which I've never used before my dough has been kneading for a
13:18bit and now I'm checking for the windowpane test it actually didn't even pass the test but I didn't
13:23have time to wait around so I decided just to go with it so now I'm going to cover this up and let it
13:29rise for the rest of the afternoon I'm getting hungry so in a minute here I'm gonna take a break
13:35but my bread is now kneaded and I'm gonna let it rise until later this afternoon and then I will bake it
13:41but let me finish the beef stew and then I'm gonna take a little break okay so into each bag I'm doing
13:48three bags here because I had a lot of meat I'm doing about two pounds of the beef one whole onion two
13:55stalks of celery and six carrots all these are roughly chopped however I didn't have enough
14:00carrots so for one of the bags I did not add any carrots and I just wrote on the bag to add carrots
14:06when I cooked it and then you're gonna add in two teaspoons of salt into each bag as well as a tablespoon
14:13of sugar into each bag and then you're gonna finish it off with a half cup of tomato juice into each bag so
14:20that is the whole recipe and I've left the link in the description so you essentially just dump all
14:25this either in the slow cooker or the instant pot and you can also finish it off in the oven but the
14:31link in the description will give you all the details I'm really excited to try this one out
14:35and here's that visual for you of the recipe I am gonna load up my dishwasher now with all of the
14:45things that I've gotten dirty and start it so that we can keep things flowing I still have a couple of
14:51more recipes to do and they're a little bit more involved I actually need to cook some things now so
14:56I'm just gonna clear out some space and then I will work on that I'm making a quick and easy lunch this is
15:10one of my favorite lunches I just do scrambled eggs with some Kerrygold aged white cheddar and some toast
15:15the timing couldn't have been more perfect for this as soon as I finished lunch my mom and sister
15:23arrived ready to take those meals to my sister-in-law okay you guys ready you know technically we'd be
15:31sitting we'd be in a semi circle so I'll be over here all right come over here mom this is my mom
15:37say hi hi it's my sister Mary say hi they're gonna deliver food to my sister-in-law who just had a baby
15:45chicken tinga tacos all these need to go right to the freezer unless she plans on making them
15:50tonight the beef stew are they labeled I'm gonna actually just do on these and this will tell her
16:02what she needs to do with them but they should go to the freezer that's why all right take care
16:20now we're moving on to the fifth meal of the day this is a spicy turkey and lentil sloppy joe recipe
16:30I found this from a food blog so many years ago I don't even know if I can find it anymore but I
16:35printed it out you're gonna start by making a spice mix into a jar you're gonna do two tablespoons of
16:41onion powder two tablespoons of garlic powder one and a half tablespoons of smoked paprika one tablespoon
16:48of dried basil one tablespoon of dried oregano one tablespoon of salt two teaspoons of pepper one
16:56teaspoon of celery seed and a fourth teaspoon of cayenne pepper this is your spice mix normally this
17:02would last you more than one meal but because I'm doubling this recipe I'm gonna end up using this whole
17:07jar here is a visual of that recipe if I can find a link to that food blog I will leave it in the
17:14description I am browning up two packs of ground turkey which I believe is three pounds and then
17:34I'm adding in two chopped onions I added so much meat to this pan that it wasn't browning very quickly
17:47I decided to go ahead and start adding the tomato sauce and just mix it all up and hopefully everything
17:53will cook together I'm adding four small cans of tomato sauce which is equal to two 15 ounce cans of
18:01tomato sauce now I'm giving my dough a little stretch and fold since that's still rising in the corner
18:07and things are getting a little bit hectic now all right I am running out of time but I have two more
18:14recipes to make one is in process right now I'm gonna make falafels as well and I need to make dinner
18:20for my family in the instant pot because as soon as I pick them up from school when we get home we don't
18:25have a lot of time so I'm going to try and do it now and I also have bread I need to bake later but so
18:33far it's been a really successful day I got pretty much I think I'm going to be able to get everything
18:37done but I have about 45 minutes right now before I need to go
18:41so for these falafels you don't even cook the cheap heat chickpeas you just soak them and then you pulse
18:55everything together and you can freeze it into little patties or you could just air fry it so I don't think
19:03I'm going to air fry them today I'm just going to freeze them into potties and eat them another day
19:07I can't sink five garlic cloves let's do more one cup of oh one small onion chopped thankfully I already did that
19:20makes life so much easier the rest of this onion is for dinner tonight parsley first I need to get some brown sugar
19:30come on a little bit of brown sugar left
19:34okay so my sloppy joes are looking good honestly they're looking a little funky because I put so
19:45much in one pan the lentils are not even going to fit so I'm going to just do the meat mixture
19:49and then transfer it to a large bowl mix it all together and then put it in the freezer bags
19:55all right so for this falafel recipe I'm not doubling it I soaked two cups of dry chickpeas
20:12and put that in the food processor along with a whole chopped onion five cloves of garlic and one
20:18cup of parsley can't believe that worked then I added a half cup of cilantro two teaspoons of
20:25cumin 1.5 teaspoons of salt a teaspoon of pepper and a pinch of red pepper flakes as well as two
20:31teaspoons of ground coriander and then you're going to mix that up and it looks like I forgot to add the
20:36baking powder but you're supposed to add a little bit of baking powder here as well I'm going to link
20:41the recipe in the description but you just blend it all up like this then you want to chill them for
20:47about 45 minutes in the fridge before you shape them and flash freeze them now I'm beginning to
20:56think about dinner prep so I'm straining out the bone broth which I will need later and before I do
21:03that I'm going to finish up the turkey and lentil sloppy joes I think this is gonna fit into here but we
21:12will find out ideally I would let this cool down completely before I put it in here but my sister
21:20is actually hungry and she just got back from delivering food and I'm gonna give her a little
21:25bit of this so since it's all ready and everything else is in the freezer so this is the one thing
21:33that's actually like ready to go
21:34my sister also offered to pick up my kids from school that day so I was getting lots of help and
21:50I just kept on rolling in the kitchen because I still needed to get dinner in the instant pot and
21:56bake my bread so I went ahead and fed my sister and then she went off to go get my kids I know this
22:04recipe may look weird but it's actually very good you can put it in a tortilla I was planning on making
22:09some sandwich rolls whenever we decide to have this for dinner I will make fresh bread for that now I'm
22:16just throwing together this instant pot meal as quickly as possible
22:19here is the recipe I'm making for dinner it looks simple enough I love the wellness mama cookbook because
22:37she has really really simple recipes that are very healthy and nourishing since I couldn't find any roasted red peppers
22:43in the store I just took one of the red peppers I have and I'm roasting it on the stove just like
22:49this until all the sides are a little bit charred and then you just let it cool off before you cut into it
22:58I'm almost at the end here I just need to shape my sandwich loaves so I'm putting them on the counter
23:03I'm going to shape them for a bench rest and let them sit for a bit and then I'll go and finish my other tasks
23:10I don't think I added enough flour to this dough but I've since played around with the recipe and
23:16tweaked it and I'm much happier with it now but I do really like this honey oat sourdough sandwich
23:21bread it makes the best grilled cheese sandwiches and peanut butter sandwiches so in a future video
23:27I will get some proper footage and share that with you all right things are getting a little crazy in
23:34here but into the instant pot I'm gonna do eight cloves of garlic crushed
23:48I'm actually gonna do more because I realized that my meat is actually more than three pounds
23:55or I think it is and so I'm just gonna finish off the rest of this garlic that we peeled yesterday
24:04just trying to hurry up and get it in we need to do two tablespoons of italian seasoning

24:17two and I'm gonna do an extra half
24:21two and a half I'm gonna do the rest of this onion
24:25done with that now my pepper has cooled down a little bit so I'm going to cut it open
24:38just going to kind of roughly chop this and get it in there it's still pretty hot
24:56this recipe calls for a jar of roasted red peppers which they I couldn't find at the store
25:02and I only have one red pepper so this is what I did instead I just roasted it on the stove and ideally
25:10I would like to have more than one in here but this is what we have today last but not least we're gonna
25:17do two cups of bone broth which I have over here
25:25gotta save these bones I'm gonna put these bones in a bag and freeze them again because I can still
25:30use them again but first I gotta sort through the veggies and stuff

26:02all right now I'm going to go ahead and I'm going to pressure cook this for
26:05I don't know how long because the recipe is for the slow cooker so I'm going to try for
26:11I think I'm going to do 45 minutes I know that's a long time but I think that
26:16it's going to need it to get nice and tender
26:37all right now that I've got my dough in the loaf pans I'm going to let those rise for a little bit
26:41longer and while they are rising I'm going to bake some sweet potatoes to go with dinner that way I
26:47turn on the oven once and I bake the sweet potatoes and then after that I bake the bread
26:53so I'm poking these with a fork and I'm going to bake them at 425 for about 45 minutes until a
27:00syrupy liquid starts oozing out this is going to be a whole process cleaning this kitchen but I need to focus
27:07I'm finishing it seems like I keep coming back to this lentil and turkey sloppy joe meal I don't know
27:16why I can't just finish it but I was waiting for it to cool and as you can see it's still pretty hot
27:22but I'm adding these to the bags and I'm going to flatten them out and then just kind of let them
27:28cool a little bit longer and then I'll put everything in the freezer
27:42there's something strange going on with my instant pot right now it is not sealing and so
27:47the meat was supposed to be cooking but instead it's like not building up pressure so now I need to
27:54undo this wash the lid and redo it and hopefully we still have time to get dinner cooked before we
28:00need to leave tonight it's going to release the pressure oh that's good I thought it was going to
28:07be an explosion yeah so something's going on with the lid I think I just need to wash it
28:16I made bone broth earlier so that's probably why
28:32I hope that works

28:45so now that the falafels are done chilling I'm just scooping them out and shaping them into patties
28:53this was very easy to do it held together nicely and I think this is going to be really delicious
28:59if I air fry them and spray them with a little bit of avocado oil or olive oil and then I can eat
29:06them with like pita bread and some yogurt sauce it's just nice to have a meatless meal now and then
29:11they're going into the freezer to flash freeze them and then I will add them to a bag later
29:26now that pretty much everything is done it's time to assess the situation in the kitchen and I have
29:32quite a bit of cleaning up to do even though it's a lot of work I will say that these freezer meal prep
29:37days are definitely worth it it makes my life a lot easier further down the road
29:47the kids got home right as I was finishing up cleaning and so I felt super accomplished with my

30:09I've officially done eight recipes today 15 dinners and four meals went to my sister-in-law so I'd say it was a pretty successful day
30:37I just need to feed my family dinner now so I'm pulling the chuck roast out of the instant pot
30:57I'm just going to cover it with some foil let it rest a bit and then with an immersion blender
31:01I'm going to blend up the artichokes bone broth onions and roasted red peppers and that makes a sort of Italian gravy
31:11The honey oat sandwich bread turned out really well
31:14It was a little bit crumbly mainly because I didn't need it enough and I didn't add quite enough flour
31:19But this recipe is coming soon. It is quite delicious. I think you will like it
31:24I think if I cooked the meat longer in the instant pot it would have been more fall apart tender
31:34But all in all everyone really enjoyed this recipe my husband especially loved it
31:41I'm just explaining to them what is in it and what it is because we've never had this before
31:47But I thought it was a pretty interesting meal and I will most likely be making it again
