hi everyone this is Andy welcome to easy cooking as you can see today we're going to start with

the Halloween videos the first video in this series is going to be a vegetarian dish I'm

going to be showing you how to make stuffed bell peppers they are stuffed with garbanzo beans and

other delicious goodness the preparation time and the cooking time combined is going to be

about 35 minutes I really hope you enjoyed this video let's get started you'll find the list of

print the whole recipe let's get started preheat the oven to 400 degrees Fahrenheit in a skillet on

medium heat we're going to heat up 1 tablespoon of extra virgin olive oil and once the oil is nice

and hot we're going to cook the onion and garlic for about 2 or 3 minutes or until they soften a

little bit then adding the tomatoes and also adding the spices remember I'm using chili powder

ground cumin black pepper and Italian seasoning and of course also season with a little bit of salt

the salt is to taste you can add as much or as little as you want and also add a little bit of

crushed red pepper to add a little bit of heat the crushed red pepper is optional you can leave it out if

you want stir well and then we're going to cook this for three minutes just to warm up the tomatoes

and after three minutes or so adding the garbanzo beans and also adding the black beans and the corn

kernels stir together to combine then add fresh cilantro to taste now we're going to continue to cook

this for about five minutes after five minutes all the ingredients should be warmed through and also

well seasoned so taste the flavor and add more salt and pepper if needed I think is perfect it doesn't

need anything else and I like my garbanzo beans to stay nice and crisp so I'm going to turn off the heat

already if you want the garbanzo beans to become softer feel free to cook them for a longer time until

you get the consistency that you like now I'm going to prepare the bell peppers don't forget to wash the

bell peppers really well now we're going to slice about half an inch from the top of each pepper

and we're going to reserve the tops and now remove the veins and the seeds from the inside of the peppers

you want the peppers to be nice and clean in the inside without any seeds or any veins because we're

going to stuff them and my peppers have a nice flat bottom so they are able to stand upright if you're

having trouble keeping the peppers upright just cut a very thin slice from the bottom of each pepper

just to give the peppers a flat bottom to keep them in place now we're going to carve a face on the

bell peppers you can actually give them any design that you like

and once all the peppers are done now we're going to stuff them with the garbanzo filling

I'm making four peppers but the filling is enough to stuff about six peppers now place the cheese

right on top of the filling the cheese is optional you can leave it out if you prefer

and make sure the cheese is well cooked inside the pepper you want all the cheese to stay inside of the pepper

then cover the peppers with the tops

and now we're going to cook them at 400 degrees fahrenheit for about 10 to 12 minutes or until

they are soft I don't want my peppers to be really soft so I just cook them for 10 minutes and that's

perfect for me but if you want them to be softer feel free to cook them for about 12 to 15 minutes or a

little longer and that's about it this is how they look after they come out of the oven the cheese has melted

right inside the pepper so you can really see it so that is perfect because the peppers are now

looking really clean and spooky on the outside just perfect for our halloween party
