Hi everyone, this is Andy. Welcome to Easy Cooking.

So today I'll be showing you how to make chocolate cupcakes

which are perfect for Halloween or any other special location.

So I really hope you enjoyed this recipe. Let's get started.

Let's go through the ingredients.

We need 2 1⁄4 cups of cake flour,

3 ounces of unsweetened chocolate,

1 stick of unsalted butter, softened,

1 cup of sour cream,

3 large eggs,

2 teaspoons of baking soda,

1 teaspoon of baking powder,

half a teaspoon of salt,

2 1⁄4 cups of light brown sugar,

1 teaspoon of vanilla extract,

and half a cup of boiling water.

I'm going to be making some chocolate icing to cover half the cupcakes

and for the rest I'll be using pre-made icing.

So to make the icing and decorate the rest of the cupcakes we need

1 stick of unsalted butter,

a quarter of a cup of unsweetened cocoa powder,

1 teaspoon of vanilla extract,

2 cups of powdered sugar,

and 4 tablespoons of heavy whipping cream.

We also need Halloween sprinkles, red sugar, chocolate sprinkles,

and pre-made orange icing.

You can find this kind of icing at the grocery store.

We also need cupcake wrappers and a little bit of cooking spray.

Let's get started.

Preheat the oven to 350 degrees Fahrenheit.

We're going to start by melting 3 ounces of unsweetened chocolate.

You can melt it in the microwave or in a double boiler.

And set it aside until you're ready to use it.

Now sift the flour,

and also sift in 2 teaspoons of baking soda,

1 teaspoon of baking powder,

and half a teaspoon of salt.

Stir together and set aside until ready to use it.

In an electric mixer,

blend the butter on medium speed

for one or two minutes

or until smooth and creamy.

After a minute or so,

add in the light brown sugar.

Blend for one more minute

or until well combined.

Reduce the speed to low,

and add the eggs one at a time.

Blend each egg

for at least 30 seconds

before adding the next one.

After the eggs,

continue to blend on high

for 5 more minutes.

the mixture should have a really nice and soft

and fluffy consistency.

Kind of like a mousse consistency.

So after you get that mousse-like consistency,

add in the vanilla extract,

followed by the melted chocolate.

Blend for 2 more minutes on high.

Then reduce the speed to low,

and add 1 third of the flour mixture.

Followed by half the sour cream.

Blend for 30 seconds,

and add the second third of the flour.

Followed by the rest of the sour cream.

Blend for 30 more seconds,

and finally add the rest of the flour.

Blend for 1 more minute,

or until well combined.

Reduce the speed to low,

and add half a cup of boiling water.

As you can see, I forgot to lower the speed,

so I made a big mess.

So, don't forget to lower the speed.

Just continue to blend,

until all the ingredients are well combined.

And that's about it.

The batter is ready.

Now we're ready to pour the batter into the pan.

I'm going to be using these cupcake wrappers,

and I spray them with plenty of cooking spray,

to prevent the batter from sticking to them.

So now I'm going to pour the batter into the wrappers,

and I'm going to bake them at 350 degrees Fahrenheit

for about 30 to 35 minutes,

or until cooked.

Just continue to blend until all the ingredients are well combined.

The batter is ready.

Now we're ready to pour the batter into the pan.

I'm going to be using these cupcake wrappers,

Do you know the cupcakes are ready,

when you insert a toothpick,

right in the middle of the cupcake,

and it comes out clean.

Let them cool completely,

before decorating them.

To make the chocolate icing,

blend the butter for 2 minutes on high,

or until soft and creamy.

Scrape down the sides if you need to,

and add in the vanilla extract.

Also add in the cocoa powder,

scrape down the sides again,

and slowly add in the powdered sugar.

After the sugar,

add 2 tablespoons of heavy cream,

and mix together for about 1 minute,

or until all the ingredients come together.

Scrape down the sides again if you need to,

and finally add 2 more tablespoons of heavy cream.

Continue to mix for 3 more minutes on high,

or until you get a creamy and fluffy consistency.

And that's it.

You're ready to decorate the cupcakes.

I'm going to be using a pastry bag,

so I'm going to fill it with the icing.

My icing decoration is really basic.

I like to start piping right in the middle,

and after that I make my way to the outer edges of the cupcake.

But if you want you can begin decorating around the edges,

and go inwards,

to finish right in the middle.

Or if you prefer, you can apply the icing using a spatula or a spoon.

Just be creative and have fun with it.

To finish, sprinkle some chocolate sprinkles or color sugar over your cupcakes.
