00:00Hi everyone, this is Andy. Welcome to Easy Cooking.
00:03So today I'll be showing you how to make chocolate cupcakes
00:06which are perfect for Halloween or any other special location.
00:10So I really hope you enjoyed this recipe. Let's get started.
00:17Let's go through the ingredients.
00:20We need 2 1⁄4 cups of cake flour,
00:233 ounces of unsweetened chocolate,
00:261 stick of unsalted butter, softened,
00:301 cup of sour cream,
00:323 large eggs,
00:342 teaspoons of baking soda,
00:361 teaspoon of baking powder,
00:38half a teaspoon of salt,
00:402 1⁄4 cups of light brown sugar,
00:431 teaspoon of vanilla extract,
00:45and half a cup of boiling water.
00:48I'm going to be making some chocolate icing to cover half the cupcakes
00:52and for the rest I'll be using pre-made icing.
00:55So to make the icing and decorate the rest of the cupcakes we need
00:591 stick of unsalted butter,
01:01a quarter of a cup of unsweetened cocoa powder,
01:051 teaspoon of vanilla extract,
01:072 cups of powdered sugar,
01:09and 4 tablespoons of heavy whipping cream.
01:15We also need Halloween sprinkles, red sugar, chocolate sprinkles,
01:19and pre-made orange icing.
01:21You can find this kind of icing at the grocery store.
01:25We also need cupcake wrappers and a little bit of cooking spray.
01:29Let's get started.
01:31Preheat the oven to 350 degrees Fahrenheit.
01:35We're going to start by melting 3 ounces of unsweetened chocolate.
01:39You can melt it in the microwave or in a double boiler.
01:43And set it aside until you're ready to use it.
01:47Now sift the flour,
01:49and also sift in 2 teaspoons of baking soda,
01:531 teaspoon of baking powder,
01:55and half a teaspoon of salt.
01:59Stir together and set aside until ready to use it.
02:03In an electric mixer,
02:05blend the butter on medium speed
02:07for one or two minutes
02:09or until smooth and creamy.
02:11After a minute or so,
02:13add in the light brown sugar.
02:15Blend for one more minute
02:17or until well combined.
02:19Reduce the speed to low,
02:23and add the eggs one at a time.
02:25Blend each egg
02:27for at least 30 seconds
02:29before adding the next one.
02:31After the eggs,
02:33continue to blend on high
02:35for 5 more minutes.
02:37After 5 minutes,
02:39the mixture should have a really nice and soft
02:41and fluffy consistency.
02:43Kind of like a mousse consistency.
02:45So after you get that mousse-like consistency,
02:49add in the vanilla extract,
02:51followed by the melted chocolate.
02:55Blend for 2 more minutes on high.
02:59Then reduce the speed to low,
03:03and add 1 third of the flour mixture.
03:09Followed by half the sour cream.
03:15Blend for 30 seconds,
03:17and add the second third of the flour.
03:21Followed by the rest of the sour cream.
03:23Blend for 30 more seconds,
03:25and finally add the rest of the flour.
03:27Blend for 1 more minute,
03:29or until well combined.
03:31Reduce the speed to low,
03:33and add half a cup of boiling water.
03:35As you can see, I forgot to lower the speed,
03:37so I made a big mess.
03:39So, don't forget to lower the speed.
03:41Just continue to blend,
03:43until all the ingredients are well combined.
03:45And that's about it.
03:47The batter is ready.
03:49Now we're ready to pour the batter into the pan.
03:51I'm going to be using these cupcake wrappers,
03:53and I spray them with plenty of cooking spray,
03:55to prevent the batter from sticking to them.
03:57So now I'm going to pour the batter into the wrappers,
03:59and I'm going to bake them at 350 degrees Fahrenheit
04:01for about 30 to 35 minutes,
04:03or until cooked.
04:05Do you know the cupcakes are ready?
04:07Just continue to blend until all the ingredients are well combined.
04:09And that's about it.
04:11The batter is ready.
04:13Now we're ready to pour the batter into the pan.
04:15I'm going to be using these cupcake wrappers,
04:17until cooked.
04:19Do you know the cupcakes are ready,
04:21when you insert a toothpick,
04:23right in the middle of the cupcake,
04:25and it comes out clean.
04:27Let them cool completely,
04:29before decorating them.
04:31To make the chocolate icing,
04:33in an electric mixer,
04:35blend the butter for 2 minutes on high,
04:37or until soft and creamy.
04:39Scrape down the sides if you need to,
04:41and add in the vanilla extract.
04:43Also add in the cocoa powder,
04:45scrape down the sides again,
04:51and slowly add in the powdered sugar.
04:57After the sugar,
04:59add 2 tablespoons of heavy cream,
05:01and mix together for about 1 minute,
05:03or until all the ingredients come together.
05:05Scrape down the sides again if you need to,
05:15and finally add 2 more tablespoons of heavy cream.
05:19Continue to mix for 3 more minutes on high,
05:21or until you get a creamy and fluffy consistency.
05:25And that's it.
05:27You're ready to decorate the cupcakes.
05:29I'm going to be using a pastry bag,
05:31so I'm going to fill it with the icing.
05:33My icing decoration is really basic.
05:35I like to start piping right in the middle,
05:37and after that I make my way to the outer edges of the cupcake.
05:41But if you want you can begin decorating around the edges,
05:43and go inwards,
05:45to finish right in the middle.
05:47Or if you prefer, you can apply the icing using a spatula or a spoon.
05:59It's up to you.
06:01Just be creative and have fun with it.
06:03To finish, sprinkle some chocolate sprinkles or color sugar over your cupcakes.
