00:00Hi everyone, this is Sandi. Welcome to Easy Cooking.
00:12So today I'm bringing you another Halloween dinner.
00:14I'm going to be making mini meatloafs and spooky rice balls.
00:17They are really easy to make, really delicious.
00:19They can be prepared the day before so you don't have to spend the whole day in the kitchen.
00:23They are really easy to make. The preparation time is about 15 minutes.
00:27The cooking time is between 30 and 35 minutes.
00:29Let's get started.
00:31Let's go through the ingredients.
00:34We need 20 ounces of ground meat, any kind you like.
00:37Like always, I'm using turkey.
00:39We also need one and a half cups of shredded carrots,
00:43half a cup of grated onions,
00:45one cup of fresh breadcrumbs,
00:47one egg,
00:49one cup of your favorite barbecue sauce,
00:51one and a half tablespoon of each black pepper and salt,
00:55and half a tablespoon of extra virgin olive oil.
00:58For the rice we need one cup of tomato sauce,
01:05two minced garlic cloves,
01:07one cup of white rice,
01:09I use regular long rice but the balls will hold better with sushi rice or a short grain rice.
01:14We also need one tablespoon of dry chopped onion,
01:17one tablespoon of chicken bouillon,
01:19one and a half cups of chicken broth,
01:22one tablespoon of vegetable oil.
01:24I'm going to be filling my rice balls with a combination of bacon and sausage.
01:28But this is completely optional.
01:30You don't have to fill them at all.
01:32Or you can use any kind of filling you like.
01:34So for my filling I need three slices of bacon,
01:38one sausage link,
01:39and three tablespoons of minced onion.
01:41To garnish the rice balls we need black olives,
01:44a few pieces of green bell pepper,
01:46and a few pieces of red bell pepper.
01:48Let's get started.
01:50If you prefer the rice can be prepared the day before,
01:53and I actually do recommend you prepare it ahead of time,
01:56maybe early in the morning,
01:58because we have to let it cool before making the balls.
02:01Soak the rice in hot water for about five minutes.
02:04Drain and set aside.
02:06Sate the garlic in one tablespoon of vegetable oil for about three minutes
02:10or until it becomes transparent.
02:12Bring in the rice and season with the dry onion and the chicken bouillon.
02:16Stir fry for about three to four minutes or until the rice becomes translucent.
02:20Add in the tomato sauce and cook for about two more minutes.
02:25And add in one and a half cups of chicken broth and half a cup of water.
02:29Stir together, cover with a lid and let it cook on low heat for about 30 to 35 minutes
02:35or until the rice is completely cooked.
02:38We want this rice to be really sticky,
02:40so feel free to add more liquid if needed.
02:45Like I said before,
02:47I'm going to be filling my rice balls with a mixture of bacon and sausage.
02:51So in a small pan I cook the bacon and the sausage for about four minutes
02:54or until slightly brown.
02:56And I added three tablespoons of onion and season it with black pepper
03:00and a pinch of crushed red pepper.
03:02Cook everything for two more minutes and that's about it.
03:07I did prepare the rice the day before, so now I'm ready to make the rice balls.
03:12I sprinkled the rice with about three tablespoons of water and reheated it in the microwave for about 40 seconds.
03:19The rice balls can be made with your bare hands, however, I find it easier to use plastic wrap.
03:24I didn't have any plastic wrap, so I went ahead and cut open a plastic bag.
03:29I'm going to spoon about two tablespoons of the rice onto the bag, spread it evenly and top it with about two teaspoons of the filling.
03:40Wrap everything into a bowl, wrap it really tight and that's about it, unwrap it and there you have a rice ball.
03:49Continue to repeat these steps until you're done with the rice.
03:52One cup of rice will make about twelve to fifteen rice balls.
04:00To garnish, I'm going to add a small piece of green bell pepper on top of each bowl.
04:05And to recreate the mouth, I'm going to add a small piece of red bell pepper.
04:10The rice is really sticky, so the bell pepper should stick to it.
04:13If it doesn't, just dip the bell pepper in water and that will do the trick.
04:18For the eyes, I'm using black olives.
04:20You can slice them or dice them and make the eyes any shape you want them to be.
04:25And just like before, press the olives onto the rice and it should stick.
04:29If it doesn't, just dip the olives in water.
04:32And continue to repeat these steps until you're done.
04:42Preheat the oven to 375 degrees Fahrenheit.
04:47We're going to mix all the ingredients together.
04:48Start by combining the ground meat with the carrots and the onions.
04:53Mix together and add the egg.
04:56And combine thoroughly.
05:00Add the breadcrumbs a little at a time and combine until all the ingredients are well incorporated.
05:05To this mixture, we will also add the thirds of a cup of barbecue sauce.
05:11You can add more sauce if you feel like the meat is too dry.
05:15Mix together and season with half a tablespoon of each.
05:18Ground black pepper and salt.
05:21Also add in half a tablespoon of olive oil.
05:24Combine thoroughly and that's about it.
05:26Spread your mini pans with cooking spray and fill them half way.
05:32Or if you prefer, you can fill them all the way up.
05:36Spoon a little more of the barbecue sauce on top.
05:39Spread it evenly and bake at 375 degrees for about 30 to 40 minutes or until completely cooked.
05:46And that's about it.
05:51I garnished the meatloaf with a crust made of barbecue sauce and that's it.
