Hi everyone, this is Sandi. Welcome to Easy Cooking.

So today I'm bringing you another Halloween dinner.

I'm going to be making mini meatloafs and spooky rice balls.

They are really easy to make, really delicious.

They can be prepared the day before so you don't have to spend the whole day in the kitchen.

They are really easy to make. The preparation time is about 15 minutes.

The cooking time is between 30 and 35 minutes.

Let's get started.

Let's go through the ingredients.

We need 20 ounces of ground meat, any kind you like.

Like always, I'm using turkey.

We also need one and a half cups of shredded carrots,

half a cup of grated onions,

one cup of fresh breadcrumbs,

one egg,

one cup of your favorite barbecue sauce,

one and a half tablespoon of each black pepper and salt,

and half a tablespoon of extra virgin olive oil.

For the rice we need one cup of tomato sauce,

two minced garlic cloves,

one cup of white rice,

I use regular long rice but the balls will hold better with sushi rice or a short grain rice.

We also need one tablespoon of dry chopped onion,

one tablespoon of chicken bouillon,

one and a half cups of chicken broth,

one tablespoon of vegetable oil.

I'm going to be filling my rice balls with a combination of bacon and sausage.

But this is completely optional.

You don't have to fill them at all.

Or you can use any kind of filling you like.

So for my filling I need three slices of bacon,

one sausage link,

and three tablespoons of minced onion.

To garnish the rice balls we need black olives,

a few pieces of green bell pepper,

and a few pieces of red bell pepper.

Let's get started.

If you prefer the rice can be prepared the day before,

and I actually do recommend you prepare it ahead of time,

maybe early in the morning,

because we have to let it cool before making the balls.

Soak the rice in hot water for about five minutes.

Drain and set aside.

Sate the garlic in one tablespoon of vegetable oil for about three minutes

or until it becomes transparent.

Bring in the rice and season with the dry onion and the chicken bouillon.

Stir fry for about three to four minutes or until the rice becomes translucent.

Add in the tomato sauce and cook for about two more minutes.

And add in one and a half cups of chicken broth and half a cup of water.

Stir together, cover with a lid and let it cook on low heat for about 30 to 35 minutes

or until the rice is completely cooked.

We want this rice to be really sticky,

so feel free to add more liquid if needed.

Like I said before,

I'm going to be filling my rice balls with a mixture of bacon and sausage.

So in a small pan I cook the bacon and the sausage for about four minutes

or until slightly brown.

And I added three tablespoons of onion and season it with black pepper

and a pinch of crushed red pepper.

Cook everything for two more minutes and that's about it.

I did prepare the rice the day before, so now I'm ready to make the rice balls.

I sprinkled the rice with about three tablespoons of water and reheated it in the microwave for about 40 seconds.

The rice balls can be made with your bare hands, however, I find it easier to use plastic wrap.

I didn't have any plastic wrap, so I went ahead and cut open a plastic bag.

I'm going to spoon about two tablespoons of the rice onto the bag, spread it evenly and top it with about two teaspoons of the filling.

Wrap everything into a bowl, wrap it really tight and that's about it, unwrap it and there you have a rice ball.

Continue to repeat these steps until you're done with the rice.

One cup of rice will make about twelve to fifteen rice balls.

To garnish, I'm going to add a small piece of green bell pepper on top of each bowl.

And to recreate the mouth, I'm going to add a small piece of red bell pepper.

The rice is really sticky, so the bell pepper should stick to it.

If it doesn't, just dip the bell pepper in water and that will do the trick.

For the eyes, I'm using black olives.

You can slice them or dice them and make the eyes any shape you want them to be.

And just like before, press the olives onto the rice and it should stick.

If it doesn't, just dip the olives in water.

And continue to repeat these steps until you're done.

Preheat the oven to 375 degrees Fahrenheit.

We're going to mix all the ingredients together.

Start by combining the ground meat with the carrots and the onions.

Mix together and add the egg.

And combine thoroughly.

Add the breadcrumbs a little at a time and combine until all the ingredients are well incorporated.

To this mixture, we will also add the thirds of a cup of barbecue sauce.

You can add more sauce if you feel like the meat is too dry.

Mix together and season with half a tablespoon of each.

Ground black pepper and salt.

Also add in half a tablespoon of olive oil.

Combine thoroughly and that's about it.

Spread your mini pans with cooking spray and fill them half way.

Or if you prefer, you can fill them all the way up.

Spoon a little more of the barbecue sauce on top.

Spread it evenly and bake at 375 degrees for about 30 to 40 minutes or until completely cooked.

And that's about it.

I garnished the meatloaf with a crust made of barbecue sauce and that's it.
