13:38They're very traditional in Sicilian cooking
13:41In old times specially
13:43The aubergines sometimes were very, very bitter
13:46So what we're going to do
13:47We're going to cut them in cubes
13:50And salt them
13:51So that the bitterness comes out with the juice
13:53There are some villages in Sicily
13:55Where to teach the people
13:57To do that process
13:58They tell them it's the evil spirits
14:01That need to come out of the aubergines
14:03But we'll make sure
14:04There are no other spirits today
14:05The first time we'd ever encountered
