In this video, we caught up with Chef Colby Rasavong, executive chef at Bad Idea and a recent pick for Food & Wine's Best New Chefs for 2025! Colby shares that they wanted to offer a small space that’s both beautiful and filling but with light late-night options to eat. One staple that Bad Idea serves is chicken katsu, along with small plate versions of the dinner menu so that there are plenty of options to pick from and unwind with for the end of the night.

00:00Here in Nashville, you know, there's not many places where you can get something nice to eat
00:03after a certain hour. It's usually burgers, fries, fried chicken, things that kind of make you feel
00:08very heavy the next day. So we just wanted to offer a space that's beautiful. Wanted to offer
00:13a panino that was a little bit lighter and drinks that weren't actually going to ruin you for the
00:18next few days. So for late night, we just wanted to offer up our wine list and some small bites
00:23that revolve around kind of a style of eating where it's very similar to a Japanese breakfast.
00:27So we offer up trays that have rice, a protein, a salad, a small vegetable or pickle, and a sauce.
00:34One of our staples since day one has been chicken katsu. And then we do offer up some of our small
00:38plates from the dinner menu as well. So they kind of just round things out. So you can come in from
00:4110 to midnight, seven days a week, have a nice meal post work for our industry friends, or for those
00:47who are out imbibing in the town when you're looking to settle down or unwind, this is kind of a great
00:52space for that.
