00:16This is a meal that I love to make at home, it's super easy for like a healthy lunch.
00:22And when I'm on the road and we stay at like an Airbnb to like feel like home, I like to
00:27cook and I like to make this for some healthy food on the road.
00:30I'm out on tour with Marcus King right now across the states, we are having a great time,
00:35this has been so much fun.
00:36We're actually in the green room of the last show of the tour for us, it's Chicago at the
00:41Salt Shed.
00:43It's bittersweet, I'm happy to be going home but sad that the tour is over.
00:47Let me cry into my salad.
00:49So we first, I start with like a spring mix.
00:52I like to get something that has a lot of spinach in it.
00:55I'm anemic so keeping up my iron on the road is very important and I find spinach does
01:01that for me.
01:02But you can use anything, like I like greens versus just lettuce, I feel like they have
01:07a bit more flavor but micro greens and all that.
01:12And then for some crunch, I like to add in broccoli slaw.
01:17I like to do kale slaw or broccoli slaw, you can find it at any grocery store.
01:24Yeah, it just adds a little extra vegetable and a little crunch that I really enjoy.
01:30And again, it's super easy, like there's not, that seems about right.
01:37There's no real measurements, you're just kind of filling in what you think looks good.
01:42Then I'm going to go in with some radishes, that one looks weird, just cut that part out.
01:50I like radishes, I think they're spicy.
01:53They're also very good for your throat, I learned that.
01:58I don't know what about them is but they're supposed to be really good for your throat.
02:02Antibacterial maybe, I don't know, I'm making them up.
02:08This knife sucks.
02:09And it doesn't have to be like super pretty, you can cut them however you want.
02:15Make them into chips, make them into slices, I don't give a shit, just get the radishes
02:19in the bowl.
02:24The knife is like bending as I cut, I'm afraid of what the onion's going to do to it.
02:34Like what is that?
02:36I mean, it's good if they're thin for the salad, but this is like taking it to a whole
02:42different level.
02:43Okay, put some pretty little radishes in there, make them look all fancy.
02:50Great.
02:52Then I'm going to throw some cucumbers in.
02:57I love cucumbers.
02:58Did you know that they cure bad breath, apparently?
03:02I don't know.
03:04Apparently that's a thing.
03:05Eat cucumbers, smell great.
03:08I also actually like these ones because I chop them up really thin and I'll put them
03:12around my eyes if they're straight from the fridge.
03:15I'm telling you, put them on for like 15 minutes, you won't have bags.
03:18No matter how tired you are on the road, if you got two hours of sleep, if you got three
03:23hours of sleep, doesn't matter.
03:25You're going to look gorgeous.
03:34The knife is cooperating for the cucumbers, for sure.
03:39Get these on there.
03:43This actually smells so good.
03:44I wish you could smell it right now.
03:46So fresh.
03:48Then we are going to go avocado.
03:51See if my knife can handle it, shall we?
03:55I really like an avocado in a salad because it kind of makes it creamy.
04:00Like I like a balsamic dressing, so it kind of gives it a little bit of like a creamy
04:07green goddess vibe, which I find really good.
04:11And avocados are full of healthy fats.
04:14They keep you full.
04:17I don't know, keto friendly if that's a thing.
04:19I don't do any of that, but here we are.
04:25I just squish it out into, I probably should have shown you.
04:29I'll do it on the other side.
04:34Squish all that out there.

04:42I don't know if this knife is going to be able to take the pedo, but we'll see.
04:47Yeah, success.
04:51So yeah, for the slice, I usually just make it kind of like some little lines in there
04:59and then almost like you're dicing an onion or chunking.
05:04And then you just kind of pop it out.
05:07Hopefully you're making a salad for yourself and not for other people like me.
05:16Avocado chunks.
05:22Yum.
05:23Now we're going to cut some red onion to go in there.
05:27I love a red onion in this salad specifically.
05:30I think it gives it a really nice kick.

05:33You could use a green onion also works as well, but since I'm putting berries and pecans
05:41in here, I find the red onion really goes well with that.
05:46I'm going to start crying soon and I already did my makeup.
05:58Oh no, the whole green room is going to smell like onions.

06:07Let's see if this knife can do it.
06:10I like to slice them really thin.
06:12Nobody likes a big chunk of onion.
06:14At least I don't in a salad, but they make a nice addition.
06:24I'd say like a half a half.
06:27However, I don't really measure.
06:28It's just kind of like what I think would be good.
06:31I kind of like to pile it so the first everything kind of gets smaller and smaller and that's
06:36how much you put on.
06:39Now we're going to get some pecans.
06:42If I was doing this at home, you can candy them, which is really good or toast them a
06:48little bit, which I really enjoy, but pecans on their own are delicious.
06:54They add a little bit of extra protein in there.
06:56So there's that.
07:02Yum.
07:04Now we're going to put some.
07:05Oh no, the onions are getting to me.
07:08Some berries, some good antioxidants.
07:10I know it's difficult on the road to keep up your immune system.
07:15I myself get sick almost every tour that I'm on.
07:18So it's important to keep up.
07:20That is a giant blackberry.
07:23It's important to keep up your antioxidants and your immune system on the road.
07:27So blackberries for all.
07:31And we got the feta.
07:33You could use, I also like like a soft mozzarella, like a buccacini or burrata if you have that.
07:41But feta adds a really nice amount of salt to it as well.
07:44So I choose feta for the cheese.
07:47And you just kind of grab what you want and crumble it on there.
07:53Yum.
07:58Very quick and easy green room ready salad.
08:08That looks about right.
08:11Okay, so for the dressing, I usually would do my own balsamic dressing.
08:17And you get olive oil, balsamic vinegar, some kind of mustard, whether it's like Dijon mustard or yellow mustard, honey, salt and pepper.
08:27And you just put that in a mason jar and mix it up and pour it on.
08:31I don't have that in my green room or any of those ingredients, so I just chose a balsamic dressing.
08:36This one's one of my favorites.
08:38It's low calorie.
08:40There's not a lot of salt or sugar in it.
08:43If you look on the ingredients, it's just kind of like olive oil and you can read all the ingredients, which I like.
08:48A lot of salad dressings have like gum stuff and weird shit like that, whereas this one just kind of has the basic ingredients.
08:59So layer that up.
