This dish is named so as a tribute to the original navratan, that is, nine jewels or the nine courtiers of the Mughal Emperor Akbar. So the dish Navratan Korma is made with nine jewels and these nine jewels can be an assortment of nine veggies or nine garnishing ingredients.
- Grind the boiled onion, garlic and cashew nuts along with ginger and chillies into a smooth paste. - Heat ghee in a pan. - Once the ghee is hot, add the onion paste and saute it for a minute or two. - Add the coriander and cumin seed powder, garam masala and water and mix the ingredients well. - Add the steamed vegetables - cauliflower, carrots, green peas, green beans, lightly fried paneer cubes, dry fruits like raisins, cashew nuts and walnuts and tint pineapple cubes and mix all the ingredients well. - You may all add few pieces of apple. (optional) - Add little water to the above ingredients and let it boil. - Add salt to taste and coriander leaves and mix well. - Just before getting it off the flame, add the fresh cream and cook it for just about 1 minute. - Garnish with some fresh pomegranate seeds and the delicious Navratan Korma is ready to be served.
