00:11sales sign straight away I just said I'm going to my grandchildren tomorrow I want to make it
00:17into a five-star hotel and I want to put Yorkshire on the map we wanted to create something that

00:34unique it's like a posh guest house are you well yeah everybody's your friend in Yorkshire how are you
00:40how are you good to see you no one would expect a hotel like this in a valley in the
00:53middle of Yorkshire
00:57we see ourselves with the Dorchesters the the reeds the Glen Eagles we want to even be higher than
01:03them oh no welcome to Berkeley Hall we are a Yorkshire team we've got that Yorkshire grit
01:12about us it's number one it really is the experience the people it's fabulous
01:21the feeling
01:42the drawing room at Grantley is no longer just a room it's a destination thanks to the hotels and
01:49afternoon tea giving it a good plump from both sides and then giving it a chop in the middle
01:56your best karate chop and before even a scone is served restaurant manager Gemma is making sure
02:02everything's up to standard tidy ship is a happy ship afternoon tea is far the most popular service
02:08it's very kind of home from home it's very comfortable it's about the the small touches
02:14the hotel may only have 47 rooms but it's afternoon tea draws people from far and wide
02:22afternoon tea was always meant to be a bit more affordable treat than an overnight steak one of
02:27those where you can experience grandly feel welcome and then hopefully plan for something else at a later
02:35today tens of thousands of cakes scones and artistically crafted sweet treats are served at the hotel each
02:42year right here we go another day let's go in the kitchen executive pastry chef Stefan and his sous chef
02:52Shannon craft the magical delights every day when we have our guests coming for afternoon tea we have this
02:58assembly so we're finishing we're glazing with foreign we are putting together the product in this
03:05case we've gone for a cinema theme cake so we've added a little cinema reel a lot of popcorn stars
03:11thing I
03:12love about affinity is it's very satisfying to see something go from nothing to something really
03:17beautiful it is very special our afternoon tea it's a preparation of everything it's just really really
03:25our standards that drive to stay at the top of their game means an ever-evolving selection of treats
03:33every two months we're going to do a brand new menu we're always thinking of new design ideas new
03:38concepts Shannon I've been thinking about a new design when we put a little chocolate moustache on
03:43a cake what do you reckon huh what is it like in the mind of Stefan full of ideas all
03:47the time non-stop
03:50Stefan is a great character his ideas a little bit crazy but we love crazy
04:04in the main reception do you remember what we did last year Marrick I don't remember what I did
04:09yesterday there's six weeks to go before Christmas but interior and ambience manager
04:15Marrick and his trusted sidekick Shelley aren't exactly brimming with festive cheer look is this
04:22one bigger this one is bigger Shelley quickly because it's heavy this one the left yeah you
04:28know I'm terrible to puzzles it's already for me it's like a wow today marks the beginning of
04:35transforming the hotel into a winter wonderland 10 Tigers here now we're gonna need to help from
04:44the maintenance team because the tree is water size 10 yeah I am six she is tall and the tree

04:5310 and somebody just step up on the ladder that's gonna be Tony Tony it's your moments to shine a

05:00bubbles about 400 it's a long process this tool next each other's no go yeah so you need to go

05:08them up this is the job which I hate the most putting this Christmas inside bubbles we're filling
05:13the filling go more inside as well yeah go inside Christmas is the hotel's busiest and most profitable
05:23season with rooms in high demand Tony spot on beginning to look a lot like Christmas Christmas
05:32is really important at Grantley Hall we get a lot of guests that have now been coming over the last
05:38few years every year this is part of their tradition now we try every year to step it up
05:45press up press up we'll have a press up ready ready Marek and Shelley are tasked with sprinkling
05:51Christmas magic both inside and outside in Grantley's grounds and gardens we've got to find the main
06:01centerpiece for the entrance for Grantley Hall they've arrived at a local farm to find a show-stopping
06:0830-foot Christmas tree okay let's get hunting we need the height we need the shape shape and because
06:18it goes on the roundabout bit it needs to be all the way around perfect talk to me nature hopefully
06:27well we won't argue about which tree no there's never an argument okay push me into it I really like
06:41this one too skinny not too big no is it calling your name yeah but it seems the tree isn't
06:50calling to
06:51them loud enough this one is nice as well that is nice there's so much to choose from I think

07:01I think she might be better I think she's beautiful it's finally time to call in the experts they look
07:07completely different when you put lights on them so go for us yeah this is the tree she's speaking to
07:15you happy right we shall get it get it down decision made but Marek still unhappy I'm sad because she's
07:25gonna lived a life she's going to give her life for Grantley Hall I know but what a life and
07:34it's down
07:36what a life she will have Marek need not worry trees are brought back to the farm and turned into
07:43compost
07:43to nurture the 15,000 planted here every year this is the Teresa we give her the name it's a
07:51piece of
07:51Teresa she's gonna be very happy she's gonna be stunning she's gonna be welcoming everybody with this
07:56beautiful smile like this coming up oh she's coming here hello a famous face gets a warm welcome back
08:08don't matter who you are doesn't matter why you're here let's have a chat and that's Yorkshire
08:14that's as high as it goes so I don't know what the hell we're gonna do now and Christmas at
08:22so we form outside please as the time approaches 11 a.m. it's a poignant day of
08:49reflection at Grantley Hall today is armistice day very important day very emotional day for me
08:57being an ex-serviceman this morning all staff will pause for two minutes to remember those that lost
09:04their lives in service I was Royal Air Force for just under 23 years now I'm IT at the fabulous
09:13Grantly Hall Amistice Day you have a list of names that go through your head and people they lost
09:28my partner Sam he's currently serving in the army which he has for 20 years today it's about him and
09:35for people like him who are fighting for our country and keeping us safe and protected so yeah I'm so
09:41proud
09:41of him here at Grantley Hall during the Second World War was a convalescent home for a lot of foreign
09:48troops a little brief history tour for you my name's Kevin doorman Kevin has a passion for history that he
09:57loves to share with hotel guests this is where Christopher a croyd gave the whole of the ground
10:03floor dormitories 10 beds to either side so 20 soldiers in here probably 20 and the other side
10:12this photo album was presented to the matron just as she was leaving here there she is with all the
10:18nurses we've got a Christmas party there from 1942 quite a few different people entertain the troops here
10:26Vera Lynn she's sung here these are all the foreign troops that were here at the time from the Commonwealth
10:34around 7,000 soldiers and airmen were cared for here during the Second World War they needed to be
10:41looked after somewhere safe the middle of Yorkshire is about as safe as you're gonna get it will always
10:48be remembered here age shall not weary them nor the years condemn and the going down of the Sun and
10:58in
10:59the morning we will remember them it's poppy day and that's what we do we remember and it's my way
11:09of
11:09wearing this poppy to say thank you to these people so close isn't it yeah I love the fire
11:27these surfaces are so comfortable in the drawing room guests are arriving for Grantley's famous afternoon
11:36tea and you'll be joining us for afternoon that's right yes thank you when you walk through those
11:41doors at Grantley it's a wonderful feeling and regular Paula is eager to pass on that feeling to
11:49her friends and family what do you normally drink we've got product it just makes you feel like you're
11:56coming home doesn't it you don't have to be posh to come to Grantley all at all no and I'm
12:01from
12:01Rotherham and I'm not posh the type of customer we get here we get everybody some of our best customers
12:06are people not without serious well but they've got choice so if you're having a special occasion
12:10they'll save up six months to bring them on for afternoon tea we are celebrating Emily's baby yeah
12:17afternoon tea is just a really special thing to have congratulations to you how long has he have left
12:26but anytime anytime now I know with afternoon tea you know because it's quite a relaxed service you get
12:34time to get to know the guests my own so pastry wizard Stefan and his sous chef Shannon are putting
12:44the
12:44finishing touches to their creations before service here we've got some savoury Dieter & Schumanns it's
12:52fun to have a little play with something savoury it opens up a different world of flavours I think
12:58this every kind of basic amazing delicious fresh inviting I can't do what I do without these guys
13:04Shannon's my number two she's absolutely awesome working with Stefan is really great he is a great mentor to
13:10me and from where I first started he's pushed me to do quite a lot of things and I've learned
13:15so much
13:15from him Stefan trained in various Michelin starred kitchens before joining Grantly in 2019 my passion
13:23for being a pastry chef comes probably all the way from my childhood my grandmother was actually a
13:27celebrated food author Evelyn Rose so she was the doyen of Jewish cookery she brought lemon drizzle cake
13:33over to the UK for the first time my memories have grown up with my grandmother's cooking was her
13:37apple pie honestly it was the best apple pie you've ever had in your life so yeah it's very much
13:42of
13:42my DNA to become a chef is it the best afternoon to be ever in the world ensuring everything is
13:51on
13:52point general manager Nunu drops in to see the team it's a joy to work with teams like that that
13:57actually are driving for perfection constantly okay awesome lovely and just like that the wait is over
14:12so here we are the main event wow thank you thank you oh my goodness you don't want to eat
14:23it do you
14:23it's too good the cakes are just just very like little works of art yeah the food was just impeccable
14:32my heart's at Grantly it really is hopefully these are left up outside in the Grantly grounds
14:46closer a bit more work has begun on the central island to install Marek and Shelley's 30-foot
14:54Christmas tree fresh from the farm first of all there's an olive tree that sits in there for 10
15:00months of the year so that has to come out you know up so yeah yeah there you go just
15:04come back
15:05a bit remove that take it to our yard wrap it up to keep the frost of it for winter
15:10and then bring
15:10the Christmas tree down Christmas tree time for the grounds team they've got to maneuver the tree
15:16it's making sure they don't bang into anything damage any of the stonework there'll obviously be
15:21guests coming and going as well hopefully she looks as good as she did in the field the Christmas tree
15:29is expected to make a memorable impression on the guests as they arrive so I'm just concentrating
15:34because I'm close to the stairs for the Grantly suite Alex and Matt from the grounds team have to
15:41carefully maneuver the tree from the service yard I only passed my tally handler license months ago
15:47this is the first big thing that I've had to move everything is just a bit of an extra challenge
15:53it is wide yeah it won't make it through there it's all right we'll have to wait it's a slightly
15:57new team at Grantly this year so although we've got a lot of experience doing things like this we've
16:01never put up a 30-foot Christmas tree this is the bit I've been dreading
16:10nice and steady no pressure just missing all the nice calves
16:18we're going to strap it from about two thirds of the way up with a strap to the end which
16:23means
16:23when we lift it should sort of be suspended from the top and we can kind of just drop in
16:29like a
16:29grabber at the fair come on come on baby you're sleeping Greg do not break the branches please but
16:37that's the least of the ground team's concerns that's as high as it goes it's not having it I
16:44can't lift the feet up so I don't know what the hell we're gonna do now an unexpected hitch has
16:51left a
16:52lot of furrowed brows it's a lot of disaster here it won't allow us to lift the feet up so
16:58we can't
16:59maneuver the tree so we need to lay the tree down we have to try and attach it in a
17:03different position
17:06problems with the Christmas tree are causing a headache for Kev and the porters
17:12guests coming for afternoon team you've got check-ins normally we'd probably use that area to check people
17:19him we're very much safety conscious we call we adapt we overcome bear with me one more
17:28having repositioned the safety straps the team can finally slot the trunk into the hole perfect
17:35drop her down at that free Teresa I think she is beautiful yes sir after a five-hour battle and
17:45a
17:45steady stream of guests diverted finally Teresa is standing proud but will the tree be everything
17:53that Marik and Shelley hoped for look at Teresa we did well didn't we a bit of magic for Marik

19:48really the staff is incredibly friendly oh yeah helpful nothing's too much they can't do enough for
19:54you don't really want to go home but it is luxurious it's indulgent but it's not intimidating and I think
20:01that's very very difficult to achieve how we doing have we been far today arrogance don't matter who you
20:07are doesn't matter why you're here let's have a chat and that's Yorkshire we've got the tree in perfect
20:26position now we are gonna make it look pretty for Christmas by putting some lights on it despite the
20:32relentless weather the team's commitment to creating their best ever festive display isn't dampened

20:49this is probably being one of the hardest days today due to the weather wet cold tired sausage fingers
20:59Tony just a quick question how long for the lights the lights are actually on oh they're just a bit

22:24five-star hotel so we can't have a shabby look to Christmas it's got to be absolutely first class this
22:30is a good start I can't get a power button to start up the whole thing's frozen control panel's frozen

22:38we'll have to thaw it out but we can continue air dryer not that I need one it's been a
22:48few years since
22:48we've used the air dryer as well so you'll be laughing Alex I was a new romantic back in 80s
22:55what 1880s yeah proper Duran Duran jobby if this doesn't work I'm gonna go into a corner and weep
23:09we're cooking with gas yeah so weep so cancel the Grinch

24:55the staff festive lunch all of the head of departments as you can see they all dress up

25:27and again he's just send this message of family ensuring the staff feel that Grantley is more than
25:33just a workplace is important to the Sykes family we're not doing well enough I think retaining staff
25:42the brand is about sharing the journey together until that you need to retain more people and
25:47understand them a little bit more we're getting a more stable team now so trying to look at engaging
25:52with that team better than we have done in the past it's what we guess one guess a little familiarity

26:20seeking fresh inspiration the rolling hills of Yorkshire proper Yorkshire couldn't be sad
26:27proper Yorkshire to spark ideas for their latest afternoon tea creations Stefan and sous chef Shannon
26:33are driving to a local farm it's really important with our menus that we're ahead of the game we
26:39don't want to be rushing around the last couple of weeks before a menu change so my plan for the
26:44next
26:44menu we're going into the winter season for me looks rhubarb is the best product available in the
26:50world so now it's shipped out to kitchens in Paris and New York I'm really excited to learn more
26:55about this amazing ingredient we want to use on our menu hey Robert hi all right nice to see how

27:00doing good thanks local lad Robert is a fourth-generation rhubarb farmer so we've just died harvest last
27:08week okay yeah that's incredible look at that that is beautiful in our deserts Robert's family have
27:17grown high-quality rhubarb here for a hundred and forty years so do you grow here in the sheds like
27:24yeah
27:24do you want to have a look yeah absolutely fabulous look at this okay this is where the magic happens
27:33right magic yeah growing in the pitch black harvested by candlelight incredible incredible and why do you
27:43harvest it with the the candlelight then it's always harvested by candlelight so there's no photosynthesis
27:49got it that keeps the sugar in the stick rather than going into the leaf how much rhubarb do you
27:55actually have in this shed it's quite impressive actually okay keep some turn lights on
28:02wow wow no way that's amazing when I came on and I saw all the rhubarb it was stunning it
28:09was
28:09breathtaking it's like a forest of rhubarb I love that it's taken me two years to every year to get
28:15to
28:15this point for this crop wow no way so the roots grow outside in the field for two years we'll
28:21dig
28:22them up and bring them in all by hand this Yorkshire force rhubarb is grown exclusively in the famous
28:28rhubarb triangle between Bradford Leeds and Wakefield I'm just here in Yorkshire because we're in the
28:35shadow of the Pennines cold wet soils further north to cold further south it's two miles which is like
28:41the sweet spot sweet spot yeah amazing right let's get back outside turn these lights off so it keeps
28:46the quality of the crop absolutely come on after seeing where the rhubarb is produced the visitors
28:53given Stefan and Shannon some inspiration we're actually thinking of creating a little flamingo
28:58shoe bun filled with loads of different preparations of this amazing rhubarb so how much
29:03rhubarb are you looking for I would say maybe box or two weeks to start off yeah that shouldn't be
29:08a
29:09problem at all awesome it's an honor for us really that places like Grantley Hall are using our rhubarb using
29:15our name put his name on the menu it's a great honor really for us we'll get it back to
29:19the hotel and I
29:19don't know about you I'm excited to cook this for our guests yeah exactly so I think we can really
29:23share
29:24this amazing story with our front house so that the guests know exactly where the product comes from we're so
29:39proud to use it it's the night before Christmas and Santa's little helpers Shelley and Kevin from
29:48the guest experience team busy spreading Christmas magic most people are now relaxing however we've still
29:55got quite a bit of work to do guests staying for Christmas Day when awakened to a festive treat
30:00it's filled with local items passion fruit curd from the farm down the road we've got some beautiful
30:07lavender honey which again is local just outside first and the damson gin and then also some lovely
30:14Christmassy shortbread lots of the guests that are here for Christmas have stayed before with us
30:23because they know that it's just such a magical time
30:33Merry Christmas everybody the big day has finally arrived it's fun working on Christmas Day as you can
30:42probably see we've got a little bit of Holly going on I love working on Christmas Day I'd rather be
30:46here
30:46than anywhere else right now the guests are more relaxed everyone is happy and to be fair everyone
30:52brings chocolates gonna be very very busy across the hotel so we need to be super organized a lot of

31:00guests are here for the full weekend the team tend to love Christmas here although it's a hard time you
31:05know they're spending more time away than they normally would from the family but Marek has bigger concerns
31:11I told you don't wear the blue she's wearing today the blue tie I can't believe it you can't work

31:17like this ties this one and general manager Nunu is grateful for the intervention Marek apart from
31:25being my the interior stylist Marek is also my stylist I've not spent Christmas with my family for 25
31:33years but you know really there's worse things in life I'm alive and I've you know I have another
31:39family yeah I love working Christmas they have all the pre-orders you just send them down yeah
31:47we have a total of six undercovers for lunch in six different restaurants with at least five different
31:55kitchens operating everything's happening at once over the festive period over half of visitors a repeat
32:02guests so the pressure is on to deliver an experience worthy of their return year after year

32:28today we went to door to find a stocking so we've been incredibly lucky this Christmas everybody's
32:36like welcome back welcome yeah it is welcome home isn't it every single person is just yeah it is yeah
32:43it's like they're not at work wow wow wow what a day guests delighted staff creating magic you know I

32:52around talking with guests and he's just like you know I could get a tea in my eyes for much
32:57they're
32:57loving it I love it I love it which is quite a strange one for being loved to be at

33:02Christmas Day everybody's at home with a family but you know it's magical
33:16coming up I don't feel nervous when I'm sharing the affinity with Valeria and Richard I just feel
33:22excited will Stefan's new pastries hit the sweet spot you've got to try our signature Yorkshire

35:01hello how are you today whose star is definitely on the rise and now Nunu's got wind of a rumor
35:09that
35:10it may be about to leave Yorkshire's orbit Isaac um he has gone viral on tech talk after one of
35:20our
35:20vehicles arrived the other day and documented it he's been seen over I think now it's 900 000 times
35:50isaac's new internet following confirms the hotel's general manager knows a good booking when he sees
35:56one isaac is a superstar he's imperative to us because of how he looks after guests he's a natural
36:04and he makes people feel absolutely gorgeous for isaac it's all a bit bewildering for someone who's
36:11just doing his day job so they came in asking how are you and they were smiling laughing the next
36:18thing
36:18what's the plan for the day with us he said the passenger's birthday and it's usual style for me
36:24to give them um special birthday greeting as usual it's a normal thing I never knew that one would go
36:31buy that where I come from in Nigeria hospitality is a second nature we enjoy entertaining welcoming guests
36:41making strangers comfortable so I grew up with that Isaac yes my chief you are the superman chief you
36:51have you seen what's just happened with this viral chief I'm scared from welcome host to worldwide fame
36:58Isaac is now officially trending the guests were just very happy yesterday okay we saw you on tiktok
37:16it's been a whirlwind experience for a man with one mission on his mind over the time I've developed
37:24that mindset that um to make everyone that cross my part smile no I've got guests actually checking in
37:34and I said you know what he was that good and the experience is so brilliant I go round again
37:39where
37:39else do you get this it's only happened at Gantley Hall trust me I was in London for 20 years
37:45so I know
37:55Grantley's most popular service their signature afternoon tea is having its regular menu refresh delicious
38:01it looks so fresh today their latest ingredient has just arrived straight from rhubarb Rob's farm so I'm
38:10just curious watching the rhubarb I've changed the many six times a year to keep it changing to keep guests
38:15interested we have a lot of fun with it is what I love to do it's my favorite part of
38:19being a pastry chef
38:19and now the fun begins for pastry team Stefan and Shannon
38:26yeah that's perfect I'm really happy with its consistency that's spot-off
38:31so super busy weekend we are correcting finalizing the new menu and then we need to prepare that we
38:37need to start batching that our menu changes is to be honest the busiest time I'm creating like a
38:41flamingo shoe bun obviously the pink connection is the pink color of the rhubarb it's going to be a fun
38:46sort of design for a cake that is going to be the base of our flamingo I'm going to fill
38:51it with
38:51two rhubarb preparations and then we've got a rhubarb whipped cream to put on top as well so the idea
38:56is you get all those amazing textures and flavors of rhubarb we want to serve the best afternoon tea
39:03and there's a lot of pressure to serve the best afternoon tea I think that's what keeps us creative
39:09as well we always want to try something new not not do something old new techniques new flavors I've
39:15colored some white chocolate a beautiful rhubarb pink color and we're just going to spread this on
39:21like this and then simply take a palette knife and all around like this so there we have a little
39:31flamingo wingers we've created all those beautiful designs it's now about putting them together putting
39:35the finishing touches with the five star level that we're cooking up you know when you create a new
39:40menu not only is it the creation of the dishes to make sure it's spot-on but it has to
39:44be delivered
39:44consistency every guest has to receive the same product as if designing a rhubarb inspired menu
39:54wasn't enough the team must present their sweet creations to MD Richard and founder Valeria no
40:03pressure looking forward seeing what Stefan's done yes I don't feel nervous when I'm sharing the afternoon tea with Valeria
40:10and Richard I just feel excited because you know my team and I were working so hard to create something
40:15amazing for the guests
40:18Valeria is so passionate about afternoon tea that it inspired her to buy the hotel it was the first thing
40:25when I knew this building was for sale and I would come in over the
40:29little bridge and I just said wouldn't it be lovely if we could just turn in and have afternoon tea
40:34so it's just fantastic but the food is different all the time without Valeria's
40:40idea to have afternoon tea at Grantley Hall we wouldn't be here so you know when she comes
40:44for afternoon tea is really important for us to make sure that you know she's really happy she enjoys everything

41:16it tastes magnificent brilliant and again it's wonderful brilliant oh you enjoy it yeah fantastic
41:21absolutely lovely contrast I've not tasted rhubarb as good as that oh fantastic that's awesome

42:08with the first shoots of spring emerging attention at Grantley is turning to a busy and vibrant new
42:15season ahead the new year at Grantley brings more opportunities more challenges the journey has been
42:24amazing up to now yeah but it is just a start we've got some good foundations a long way to
42:30go to get that
42:31perfection we'll get stronger we'll get better in every sense the goal is to be the best in time in
42:37the
42:37world I want mom to be proud of me as well that's what drives me I've always been proud of
