00:00All right, brisket burn-ins is my favorite bite-in barbecue.
00:03So what you see here is a brisket point, and it's two days old, so I reheated it.
00:08So that is why it's steaming so much.
00:11So yes, this had time to rest days ago, and I just reheated it.
00:15Now all I want to do is cube it up.
00:16Normally when you do burn-ins, you put them in a pan, sauce them, cover it, get them more tender.
00:21But as you can see, the tenderness is already there.
00:24So this is going to be a very simple process of cubing these up around the same size.
00:30I'm going to get them sauced and then on.
00:32They're going to be ready in minutes.
00:34So I am going to use an aluminum pan briefly because I want to get these barbecue sauced on all
00:41edges.
00:41So you can see there, these are actually on the bigger end of the cubes.
00:45You can get them smaller, but this is what I chose for this cook.
00:48I'm going to use the Traeger Sugar Lips, a nice, sweet, perfect sauce for any kind of burn-in.
00:56So you just want to make sure you hit all sides with the sauce, and there we go.
01:01Now I'm going to put these on a heating cooling rack because when you put them on the grill,
01:04you can remove these all at the same time, keeping them all together.
01:10And I also want to add some seasoning.
01:11So these were already hit with the Meat Church Holy Gospel, so I'm going to hit that sauce with that
01:15Holy Gospel.
01:16Put these on at 275 degrees for about 40 minutes,
01:20and all you're looking for is the barbecue sauce to tack up because the tenderness is already there.
01:26Boom.
01:26Now we just got to send them down the hatch.
