00:00Fresh Corn Fritters
00:01These golden crispy corn fritters are about to become your new obsession.
00:06Seriously, you'll be making them every time you see fresh corn at the market.
00:10For the fritters, use 1 cup flour, 2 eggs, milk, lime zest and juice, spices and 3 cups corn.
00:20Fold in red bell pepper, scallions, cilantro, 1 cup cheddar or pepper jack,
00:25minced jalapeno, avocado oil and butter for cooking.
00:28For the cilantro lime crema, pulse cilantro, jalapeno and garlic.
00:34Then stir into 1 cup sour cream with salt and lime juice.

00:38Preheat oven to 350 degrees Fahrenheit and line a sheet pan with parchment.
00:44Whisk flour, coriander, baking powder, salt, smoked paprika, oregano, sugar, cumin and pepper.
00:51To make the batter, whisk milk with beaten eggs, lime zest and lime juice.
00:56Combine wet and dry until thick but scoopable, adding milk as needed.
