00:00Hi friends, welcome back. I'm Chef Amit. Today we are going to do a bahari special that is
00:09mutton biryani dumfook style. So first we are going to take is chopped mutton. We are going
00:17to take some curd to go along with the mutton. Approximately 150 grams of curd in 250 grams of
00:23mutton. You add half a teaspoon turmeric, one tablespoon Kashmiri red chili powder, salt as per
00:36taste, garam masala approximately half a tablespoon, some mint leaves, some coriander leaves,
00:54and some green chilies. We'll mix all this together and let it marinate for two and a half to three
01:02hours until the mutton is nice and tender.
01:14So now marination is ready and we'll keep it aside for two to three hours. We'll take a pan,
01:19the mutton has been marinated for three hours and now we'll make the gravy for the mutton biryani.
01:25In a pan we'll take three tablespoons of oil,
01:32approximately three chopped onions.
01:34We'll saute it till it turns brown.
01:50The onions have become brown and now we'll add one tablespoon garlic,
01:55one tablespoon ginger, half a teaspoon poppy seeds,
02:08two tablespoons of dry coconut powder and two tablespoons of cashew powder.
02:15We'll mix it well.
02:27Now we'll add one cup of tomato puree.
02:29You should be able to see oil floating above your masala.
02:45Now as you can see, the masala is already left,
02:48the oil has already left the masala.
02:49So we are ready to add the marinated mutton to this.
03:19We will cover it and we'll let it cook for at least half an hour to 45 minutes.
03:30Because the mutton is nice and tender.
03:35The gravy is smelling yum.
03:41Now we will start and assemble the entire biryani, layer it in this oven pot.
03:46So now we are going to layer the biryani into the oven pot.
03:50We'll add a teaspoon, probably half of ghee.
04:12The rice which is pre-cooked, we are doing that.
04:16And so, we'll add one more layer of mutton.
04:24We add one more layer of mutton.
04:31Add a little bit more ghee on top so that the rice and the mutton when it's ready after
04:52the cooked thumb, we'll add fried onions, some mint leaves and a pinch of coriander leaves.
05:15Your biryani is ready to go on the gas or in the oven for some thumb cooking for at least
05:2220-25 minutes.
