00:00So we're here at the Willow, South Water, brand new eatery, bar and you're the manager sir?
00:06I am indeed yeah.
00:07What's your name boss?
00:08It's Richard Knight.
00:09So Richard, we've just, I've just been in, had a look around, it looks great in there, I mean just, you know,
00:14if you were going to describe it to family and friends who've not been in, how would you describe it, what would you say?
00:19Oh, I think it's got two sides to it, so you've got a relaxed day vibe, where you can come, have some cake,
00:29you can have breakfast, lunch and then the evening you've got, you know, your cocktails, your wine by the bottle,
00:34your, a bit more romantic vibe to it, so yeah, I can say it's got the best of all worlds.
00:39Yeah, well, so daytime and evening opening then, because not everywhere is, so you're going for it like.
00:44Yeah, we are, breakfast, lunch and dinner, so all day, yeah, all day, so you've got, yeah, a choice of various options.
00:52So if you were coming in and picking something off the menu, any particular favourite dish yourself to look out for?
00:58I had the scrambled shakshuka yesterday on the breakfast menu.
01:01Okay.
01:02Yeah, really impressive.
01:03Yeah, yeah, and it's a nice vibe outside as well, isn't it? They've really gone to time with the plants and stuff, it's a lovely feel.
01:09Yeah, you've got that alfresco feel of the Met, so yeah, you can come, you can, I can imagine having a gin and tonic out here, couldn't you?
01:17Yeah, yeah, definitely.
01:18And if people have enjoyed the lovely red house, just a little short way, that was your project previous, so you know what you're doing.
01:27Yeah, I've done a couple of these now, so yeah, it's not my first rodeo.
01:30Yeah, yeah.
01:31Well, we wish you all the best there and it looks great, the food looks great as we've seen it coming out, so good luck with the new venture here, chap.
