02:29 We are now in Sablayan Precinct Park, commonly known as Bunduk Bayan or
02:35 Diparola Park. This mountain park served as the setting of a historic watchtower
02:41 built in 1861, which used to protect from the intruders who used to attack this
02:47 area. The old cannon and the lighthouse could still be found here. In this park
02:52 could be found the three-in-one Sablayan Adventure Facility. This was built in
02:56 2015 to encourage more tourist arrivals.
03:01 The zipline in Sablayan Precinct Park is the longest island-to-island zipline in
03:09 Asia. This is a 1.7 kilometer island-to-island zipline and this is the
03:17 first motorized pulley in Asia. This connects the Diparola Park to the other
03:21 island. Upon arrival, the tourists register at the front desk.
03:26 They are given blood pressure before they take the Sablayan 3-in-1 Adventure.
03:30 They are placed in a harness before they come up to the tower. They can do wall climbing or
03:36 rappelling for those who do not want to avail of the island-to-island zipline ride.
03:41 Sablayan zipline is a thrilling adventure. An amazing feeling that you
03:47 are free is the usual expression that we get from our tourists. Up on the island
03:51 Pequeno is a marine protected area. They could see the starfish and the fish
03:56 and the corals going to the other island.

05:32 retreat area but basically since the public likes it, so gradually we
05:38 open it for everybody. It's small dims of the sound because
05:42 San Jose is in the southern part of Occidental Mindoro and Maldives
05:46 because we are so used to being in the Maldives. Basically because it's floating.
05:53 Grace Island Resort is unique because the floating cottages is not concrete so
05:58 the materials are made from bamboo. The main attraction of Grace
06:06 Island Resort is the place itself. The serenity, the calmness of the place and
06:12 the peace of the area. Currently, there are six overnight cottages plus the day tour
06:19 cottages. So our floating cottages are provided only by portable
06:25 toilets. The restroom, shower room is in the ground area. If you're in the floating
06:30 cottage and you're just tripping to swim, you can just dive directly from your
06:34 cottage.
06:37 Other activities that they can enjoy in Grace Island is jet skiing, snorkeling,
06:48 swimming and at night we have our biliyoke and then we also have fire
06:54 dancing to entertain our guests. Usually aside from the locals in San Jose,
06:59 we are also visited by nearby municipalities of Occidental and
07:05 Oriental Mindoro and Metro Manila. And when they are here, they are happy to see the floating cottages.
07:13 It's not common for a tourist from urban areas.
07:18 So the road network and expressways are important because it connects people and
07:24 accessibility is easier. They can visit tourist destinations like Grace Island Resort.

08:45 we have a lot of restaurants. The birth of Marus was very simple because I wanted to prove to
08:52 everyone that there is tourism here. So I started with the food. The food we offer here is more of fusion.
09:01 The traditional done a different way.
09:04 And that's what people like. There should always be a difference in taste and that's what we did.
09:11 Occidental Mindoro has concocted a dish combining the savory taste of sisig and the flavorful pancit.
09:19 Let's try their sisig pancit.
09:22 The Filipinos are into pancit and I thought of sisig. I said it's good to top pancit.
09:30 When I did that, people loved it because we do it spicy, mild or not.
09:38 The reason why it became unique is because we've had a lot of pancit here in Mamburao
09:44 but I've never heard of this kind of combination and now you are going to learn how to cook it.
09:49 We'll saute it first. Remember the golden rule? Only the garlic is golden.
09:55 Then comes the onion. We have different pancit throughout the country but it depends on the passion of the person cooking it.
10:05 Now we have the Worcestershire sauce. This is also a different way.
10:11 The taste of our canton is more savory.
10:15 When it boils, you can already put your canton.
10:20 The serving of the pancit sisig that I'm doing is good for 2-3 people.
10:27 Like pasta, you would want your canton to be al dente. Not too soft and not too hard.
10:34 You will enjoy the crispy texture of the sisig as well as the savory flavor of the pancit.
10:40 If the sauce of your pancit is not enough, you can remove it.
10:47 Now that everything is done, here is our finished savory pancit canton.
10:52 Next is our sisig. We put in our chopped pork.

11:16 When you are done with your sisig, turn off the heat, let it cool down for a little bit and then you put in your mayonnaise.
11:24 After 20-25 minutes preparation, you now have Maros original pancit sisig.
11:32 Wow! Pancit sisig is different from Maros food lunch. It has originality.
11:42 Seafood lovers can also enjoy some grilled tuna and tangigay.
11:46 Since we have many supply of tuna, we ventured into the grilling of tuna.
11:53 Aside from the grilled tuna, we also have the grilled tangigay which is highly requested here in Maros.
12:01 Most of the people are also health conscious. As much as possible, we deviate from having fried food.
12:09 The grilling process enhances the flavor of the tuna miso.
12:14 We start first with the seasoning and then we shower it generously with olive oil.
12:21 So it's really healthy. You will put it onto your hot grill for 1-2 minutes, grill it on the pan and then another 2 minutes on the other side.
12:36 Actually, the process of the grilled tuna and the grilled tangigay are the same.
12:41 You just have to make sure that the juiciness of the fish really comes out. That's how it is being enjoyed by our guests.

13:05 But since any foodie would like the grilled fish, they have it any time of the day as long as it's available already.

13:22 It's one of the best tunas that they have tasted here in the Philippines.
13:28 Occidental Mindoro puts a twist on our favorite adobo. This one comes with nicely cooked octopus.
13:35 Another food tourism product that we have here in Mindoro is the adobong pugita.
13:41 It's like the adobong pusit. The freshness of the pugita also adds flavor to the adobo itself.
13:49 This pugita doesn't have any ink. Right?
13:53 Rather, what makes it delicious is the fresh coconut milk and the sauces.
13:58 Like the normal adobo, we start with sautéing.
14:02 After that, when the sautéing is done, we put in the chopped pugita.
14:09 After a while, you will soften it a bit.
14:14 Then, you put in your oyster sauce.
14:18 It also has vinegar. Don't forget your salt and pepper to taste.
14:23 Lastly, when the pugita is soft, you put in your coconut milk.
14:28 It really takes a very long time to prepare.
14:33 You have to prepare it in the morning so you have it during lunchtime or for dinner time.
14:39 Like any adobo, you partner it with something that's dry because it's already saucy so that there will be no moisture.

14:49 Once you get the taste of it, it's really fresh, chewy.
