A bowl of creamy vegetable soup makes the perfect easy Scottish dinner, and this recipe keeps it simple, hearty, and comforting. The soup starts with onion, celery, carrots, and potatoes gently sautéed in olive oil, then seasoned with sage or thyme, garlic, salt, and pepper before being simmered in vegetable stock until tender.

A little blending gives the soup a thicker, creamier texture while still leaving plenty of vegetable pieces for a rustic feel. Frozen peas and sweetcorn are stirred in at the end, along with milk and fresh parsley, creating a light but satisfying cream of vegetable soup that works well for lunch or tea. It’s naturally vegetarian, and can be made vegan by swapping the milk for a plant-based alternative. Serve it with bread rolls, a little cream, or your favourite side for a cosy homemade meal.

Perfect for anyone searching for easy soup recipes, Scottish soup, creamy vegetable soup, vegetarian dinner ideas, or simple homemade comfort food. This is a great choice for family meals, meal prep, cold weather cooking, and anyone looking for a hearty vegetable soup with a smooth, creamy finish.

00:06well hello there folks and a very warm welcome back to what's for tea it's lovely to see you
00:12all again and i hope that i find you very well and tonight for tea i've made this delicious and
00:18oh so
00:18comforting creamy vegetable soup so easy to make i will put the ingredients on the screen as i use
00:26them highly recommend you give this one a go so these are my vegetables here i've got four kind of
00:32medium potatoes one onion three medium carrots and i've got four sticks of celery as well so you
00:39just want to peel and chop these i'm going to keep you know the skin on the potatoes because the
00:44skin
00:45is nice and clean but you can take the skin off if you prefer and if you leave the skin
00:49on it will help
00:50to thicken your soup so this is the vegetable stock that i am using here you can use whatever
00:56stock you prefer i like to use the oxo cubes sometimes as well but i do prefer the gnor so
01:03you just want to add your boiling water according to the instructions on your packet and then i'm
01:08also going to use a couple of tablespoons of fresh chopped parsley as well i'm going to use some olive
01:14oil for frying again use whatever oil you prefer and for herbs i'm going to use sage but i also
01:21use
01:21thyme sometimes as well so just use whatever you prefer and also a touch of garlic and some salt and
01:28pepper to taste as well then i'm also going to add some frozen peas and frozen sweet corn just because
01:34i've got them in the freezer so i'm going to throw them in so go over to your cooker grab
01:39a nice big
01:40soup pan and pop that onto a medium heat add in whatever oil you're deciding to use and then once
01:46it's nice and hot you want to add in your celery and your carrots and also your onions and you
01:53want
01:53to cook these with a wee bit of salt the salt is going to help draw the moisture out of
01:57your vegetables
01:58and help them you know saute a wee bit better a wee bit of pepper as well give those a
02:03good stir around
02:04and you want to cook these for about five minutes with a lid on again just to help them sweat
02:10down
02:10until they start to soften up and they should be looking something like this your onions should be
02:16translucent by this point and now we're going to add in your potatoes so add your potatoes and again
02:23just add a wee touch of salt and pepper and give them a good stir around again and you want
02:29to give
02:29these another cook for about five minutes and again it's just to help soften up your vegetables
02:36and your potatoes ready for the stock so on with your lid another five minutes so get your lid off
02:43and we're going to add the rest of your herbs and seasoning so i'm going to use sage i love
02:48the
02:48combination of sage and onion but like i said use whatever herbs you prefer in your soup and then also
02:54a touch of garlic granules as well you can use fresh garlic if you like i just prefer the dry
03:01you know
03:01the dry garlic and things like this i think it's got much stronger sort of saltier flavor if you like
03:07so i like to use the garlic granules and just give everything a good stir together just to make sure
03:13it's well combined and then we're going to add the stock so that's the vegetable stock and some extra
03:19water going in and then just give this a good stir again just to make sure everything is well combined
03:25as long as you've got enough stock in there to make sure your vegetables are covered that's absolutely
03:30fine because we are going to be adding some milk as well so you'll get more liquid so bring this
03:36up to
03:36boil then reduce the heat pop your lid on and let this simmer away for about 25 minutes until all
03:43of
03:43your vegetables are lovely and soft and a good way of testing is just to give your soup a good
03:49stir
03:49around i like to fish out one of the potatoes and smash it against the side of the pan and
03:55if it breaks
03:56up very easily then that's good enough for me i'm just going to grab my blender and just blend this
04:01down
04:02ever so slightly i don't like this blended all the way i still like some chunks in my soup but
04:08the more
04:08you blend this the thicker it's going to be so do bear that in mind but this was thick enough
04:13for me
04:14and like i said there's still lots of wee chunks floating about in the bottom and this is the point
04:18where i'm going to add my frozen peas and also the frozen sweet corner and just give these a good
04:24stir
04:25around until they are warmed through the heat that's in your soup will be enough to warm these through and
04:31i'm going to add my milk if you want to keep this vegan you can add a plant-based milk
04:36if you like i am
04:37just using cow's milk but use any milk you prefer give that a good stir around and the last thing
04:43i'm going
04:44to add is a couple of tablespoons of fresh chopped parsley as well this is going to give it a
04:49lovely
04:50you know subtle flavour whilst adding another wee bit of colour as well and that's it basically done
04:56like i said just make sure your sweet corn and your peas are thawed and nicely warmed through and this
05:03was absolutely perfect for me ever so subtle flavour but beautiful and creamy and it's quite
05:10an interesting soup because you've got lots of different vegetables going on in there so every
05:15spoonful is completely different which i absolutely love so like i said we did have this for our tea
05:22last night and i just like to add some wee rolls at the side and maybe a few crisps as
05:28well and i have
05:29added another wee bit of cream just to the top and some more parsley and we've got some wee roast
05:34beef
05:34and tomato rolls and just a few crisps like i said at the side that was absolutely lovely and that
05:42will
05:42make you know four or five really good portions should you decide to give it a go so thank you
05:47so
