A warm Christmas dinner broth made from leftovers turns into a hearty slow cooker soup that is perfect for chilly days. Potatoes, parsnips, carrots, Brussels sprouts, sage, thyme, celery salt, nutmeg, chicken stock and cooked turkey or chicken come together for a thick, comforting bowl with plenty of festive flavour.

This easy leftover soup is made in a 3.5 litre Crockpot, but it can also be cooked on the stove top. The vegetables are simmered until soft, then the cooked meat and a little orzo are added near the end so the broth stays rich and filling rather than too thick. A spoonful of leftover stuffing on top and some buttered bread on the side finish it off beautifully.

00:21well and you're all managing to stay warm and cozy so in days like today i like things like this
00:27and
00:27i made this amazing broth in the slow cooker this is i'm going to call this a chicken dinner broth
00:33or
00:33a chicken dinner soup because all of the ingredients are you know that they are elements
00:38of a christmas dinner so you've got potatoes parsnips carrots brussels sprouts obviously sage
00:44onion thyme chicken stock chicken and i'm going to use a wee bit of stuffing on the top just at
00:49the
00:49end for serving as well which is completely optional so let me go and show you how i put this
00:54one
00:55together and as usual all of the ingredients will be on the screen as i use them so i'm going
01:00to use
01:00my slow cooker but you can of course do this on the stovetop so the first thing i'm going to
01:05add
01:06is one large carrot you don't need much of each thing because there are quite a few ingredients
01:10in here and then obviously your parsnips as well i've just diced everything quite small and i'm
01:16going to add a few brussels sprouts as well because it wouldn't be christmas dinner without brussels
01:22sprouts in this country anyway i'm going to add some potatoes i've got some baby potatoes which
01:27i've just halved and i've also got a large baking potato which i've peeled and diced as well because
01:33the baking potato will sort of disappear and make it thicker but you know the new potatoes the small
01:39potatoes will stay in their shape and i'm going to add some sage some thyme and some celery salt as
01:46well just for some much needed flavor and these are sort of classic christmas flavorings as well
01:52and a wee pinch of nutmeg some salt and pepper as well just as much as you like i think
01:58i used about
01:58half teaspoon of each in this but obviously you can adjust this to your own taste or leave it out
02:04completely if you like not everybody likes salt and pepper i'm just showing you what i like to add
02:10and i'm also going to add some fresh parsley as well about a tablespoon of this just keep some back
02:17for the end for before you're ready to serve i'm going to cover this with my chicken stock so this
02:23is
02:23about a liter of liquid if you want a looser soup or a thinner soup like i said just add
02:29about another
02:30half liter of water or stock to this and you'll get a much waterier soup but i did want a
02:36nice thick
02:37hearty stick to your ribs kind of broth so i haven't added too much liquid so let this cook on
02:44high for about four hours before you add anything else you just want to get your veggies nice and soft
02:50at this point so do make sure your potatoes and carrots are nice and soft at this stage before you
02:57add anything else mines were nice and soft so i'm going to add in my chicken this is just leftover
03:03chicken about 250 grams or a large chicken breast or turkey whatever you're deciding to use
03:10and then just you know give that a gentle stir through making sure you don't break it up too much
03:16and i'm going to add some orzo or you could add rice or a similar small pasta just make sure
03:22you don't
03:23add too much or it will you know it'll go like porridge and be far too thick so don't go
03:28too mad on the
03:29rice or the orzo now you just need to let this cook for about another 40 minutes until your pasta
03:35or your rice is fully cooked and it will look something like this at the end and this was
03:40wonderful quite a delicate flavor because obviously most of your flavor is coming from your veggies and
03:46your stock but it is lovely so warming so filling very very hearty ours was lovely and thick but like
03:54i
03:54said if you don't want it as thick as this just add more stock you know and you'll get a
03:58much looser soup
03:59or broth so i'm just going to serve this in a bowl and i've crumbled on some leftover sage and
04:06onion
04:06stuffing on the top as well so this is just cooked stuffing which i had leftover and in the freezer
04:12so pop some of that on top if you have any and then just a couple of slices of buttered
04:17bread at the
04:18side and that is more than enough like i said very very filling so do let me know of your
