00:33I've been working in fine dining for my entire career and then when I came down here and started
00:38talking to the people at Grand Central Market I knew that it had to be very fast and I've
00:43actually always been really excited about that because with this where we can do a really
00:47fast, really inexpensively, but with the same technique and the same passion and the same
00:53quality, it's really exciting for me.
