02:23Now, Pete, I know you're bursting to talk about the house,
02:25but first of all, we need to address this driveway.
02:27It's massive.
02:28Can you imagine if a family won this home?

02:32It would be your soccer pitch, your cricket pitch.
02:33You've got your basketball shooting hoop at the end.
02:35It would be where you learn how to ride your bike and your scooter.

02:41Now, the design DNA, Jo, springs from a modern interpretation
02:45of the good old Aussie homestead,
02:46where the soaring roof lines are a distinguishing feature.

03:10And this whole area is known for its cheese and chocolate.
03:13I mean, basically, it's my Nirvana.
03:15And back to this site, it's almost 10,000 square metres.
03:19Just for one day, can we be the Lord and Lady of Montville?
03:22I grant you that, yes.
03:23Do you know what, Pete? With a block this big,
03:25it would have been very tempting for someone to come along here
03:27and just put, like, a massive two-storey monstrosity on this site,
03:31which would have stood out like anything.
03:33No. This doesn't feel like that, though.
03:35No. Instead, it steps sensitively and purposefully into the site.
03:42Pete, I love that cut-out in the entryway,
03:44because it allows you to celebrate that rake ceiling,
03:46which already has my heart.
03:48Well, it leads to the central signature space of the entire design.
03:52A grand-yen intimate space with an open-plan dining area,
03:56lounge room anchored by a travertine-clad fireplace.
03:59But, Jo, if it's country living you're after, it's all about the...?

04:17Now, I've pasted out, there's over 35 square metres
04:21of integrated appliance and storage space here.
04:23Just look at some of the ones behind you.

04:27a microwave oven, you've got a freestanding cooktop and oven,
04:31and just for Colin, we have to rave about the pot washer,
04:34because he is obsessed with these things.
04:36That's some sort of scrubber.
04:37And then what about the servery?
04:39I'll take the broken sunshine...
04:43Butler's pantry, but can you imagine your family or friends
04:45just gathered around this massive island bench?
04:48I can, but I think you also need to imagine
04:49how hard it's actually going to be to get them out of here.

04:53And believe it or not, we've got even more to explore
04:55that's coming up not too far away.
04:58I wanna be where the flowers grow
05:01I wanna see where my eyes don't show
05:05Towns don't get more charming than this.
05:07I'm in Montville, which is perched in the Sunshine Coast hinterland,
05:11about 90 kilometres north of Brisbane.
05:13And it's a hub for artists and sculptors and gardeners.
05:17So it's a place where you can wander around
05:18and look at boutique art galleries.
05:20You can sample local homemade chocolates and sweet treats.
05:24You can sit and have a coffee overlooking the treetops.
05:27Or you can just enjoy the spectacular views
05:29from the lookouts scattered all along the main street.
05:35And just down the road from Montville
05:36is the Mullaney Botanic Gardens,
05:38which was voted Queensland's best tourist attraction.
05:40So it must be good. Let's take a look.
05:49It's hard to believe that the gardens were once an old cattle property.
05:52And because they're positioned high on the escarpment of the hinterland,
05:55you've got these beautifully terraced landscape gardens
05:58that go for acres, wrapped with lush rainforests.
06:05The Mullaney Botanic Gardens are a great example
06:08of using water wisely, but also as a decorative feature.
06:11So you'll find lots of ponds and waterfalls scattered throughout the garden.
06:14And they're all interconnected.
06:16In fact, they store up to 1 million litres of rainwater here on site
06:20to help feed the waterways and as a backup supply for the garden.
06:24But in general, the philosophy here is to choose plants that are tough
06:27and adapted to the climate so they don't need additional water.
06:30Let it go.
06:35Mullaney has a mild subtropical hinterland climate,
06:38so it experiences warm summers, cooler, mistier winters and higher rainfall,
06:43which keep the gardens looking lush and green year-round.
06:46But I'm seeing this really interesting, eclectic mix of plants.
06:49So everything from plants that you think of as being really tropical,
06:52like the foxtail palm, mixed in with dry-loving Mediterranean beauties
06:57like salvias and agaves.
06:59So it's a really good example of understanding your climate
07:02and choosing the right plant for the right place.
07:17Isn't it incredible to think that we were just up there in the terrace garden
07:21and now we're down here at the bottom of the garden,
07:24deep in the rainforest looking at something like this.
07:27So this waterfall is cascading down volcanic basalt rock
07:31which dates back 25 million years.
07:34And then over here, have a look at this big tree.
07:37The root system is just wrapping its way around the rock.
07:40It's even poking out of the crevices.
07:43I've never seen anything like this.
07:52The whole garden is designed to encourage families to connect with nature
07:56so you can get a real hands-on experience here in the petting zoo.
08:00So there's miniature goats and miniature donkeys.
08:03Even the turkeys have been putting on a show for us.
08:12Then there are the Avries and this feathered friends area
08:15which has become home to adopted and unwanted pets and birds.
08:19Because did you know that the cockatoo can last for up to 80 years?
08:23So that's a long time to take care of a pet.
08:25And they've got a beautiful home right here.
08:27But I've got someone special that I would really like you to meet.
08:34So this is Bec and this is Coco, the Amazonian parrot,
08:39who sings opera and other songs.

13:45My goodness.
13:46What a gorgeous part of the world you live in.
13:50Like, it is absolutely stunning.
13:52Yeah, Mapleton's pretty special.
13:54It's on the quieter end of the range, which I quite like.
13:56Pedro, tell me a little bit about Falls Farm.
13:58We've been here 13 years now.
14:00We're a market garden and orchard.
14:02So, we grow annual crops,
14:05meaning things that kind of come and go in the season.
14:07So, we're talking about cabbages, broccolini, cauliflower,
14:11charred kales, carrots and beetroots.
14:14But essentially, you know, we're growing to pick
14:17and send straight away to our restaurants
14:19or to our local supply chains.
14:22So, we pick every single week.
14:25Monday, Tuesday we pack,
14:26and on Wednesday it goes down to Brisbane
14:28as well as the Sunshine Coast.
14:29And how does that work?
14:30So, does the chef order
14:32or you tell them what you've got available?
14:35A little bit of both.
14:36Yeah.
14:36We tell them each week what we have available,
14:38but we work really closely with our restaurants
14:41and our chefs in particular
14:42about what they're kind of looking for.
14:45Yeah.
14:45So, we don't really...
14:46We try not to grow too many normal things.
14:49Yeah.
14:49We try and grow specialty crops and herbs
14:52that chefs kind of find harder to access.
14:55Sure.
14:56Try and keep them excited and engaged
14:58in what's coming out of the ground.

15:19Pedro, everything here looks so lush and healthy.
15:24Like, what are you doing to the soil
15:26to make it look like this?
15:28So, our focus is on soil health.
15:30So, when soil is alive and balanced,
15:33generally, you can grow some pretty good crops.
15:37So, we're always trying to feed the soil
15:39more than we're extracting from it.
15:41And what's really great is with healthy soil,
15:43you're going to get more nutrient-dense vegetables,
15:47which has a direct correlation with flavour.
15:49Exactly.
15:49I was going to say, like, it must be like
15:52everything would taste like what it's supposed to taste like.
15:55Yes.
16:05So, you've got a good relationship with Mapleton Pub?
16:08Yeah, that's correct.
16:10So, Ben and Jess, who own the farm,
16:12they also bought the pub three years ago
16:13and have made some pretty amazing changes there.
16:16So, the whole idea there is that our produce is not just
16:19available for restaurants in Brisbane and the Sunshine Coast,
16:22but also a bit of rain, welcome to the sub-tropics,
16:24but also available to local people who want to eat some pub grub
16:29grown with some really great vegetables.
16:31So, you know, the chef influences a little bit of what we grow,
16:34but majorly what we grow influences what they serve at the pub.
16:38So, it's like a full circle, isn't it?
16:40Even more so because we collect their compost twice a week,
16:44compost it on farm and incorporate it back into our soil.
16:47What a great ethos that is.
16:49Yeah.
16:50Now, I am planning to cook a little bit later on
16:52and I am eyeing on that eggplant right there.
16:56Tell me what kind of eggplant is that?
16:59Yeah, so these are our ping-tong long eggplants.
17:02So, they're actually a beautiful Taiwanese variety
17:04that grows really well in our subtropical climate.
17:09Great for grilling?
17:10Great for grilling and I reckon we could probably spare a few
17:14if you're really after some.
17:15Oh.

19:18end up going through the doors of the MARTA Neonatal Critical Care Unit.
19:22And what they do in there has to be seen to be believed.
19:36So, Dr Birch, how long have you been the Director of Neonatology
19:39here at the MARTA Women's Hospital?
19:41Yeah, so I've been here for eight years at MARTA Mothers.
19:43Yeah.
19:44Here running the Neonatal Critical Care Unit with my nursing colleague.
19:47Yeah.
19:47We're a really big and really busy service.
19:50We have 79 cots here.
19:51Oh.
19:51Of those, we've got 47 intensive care cots.
19:55So, you know, we can have anything up to over 80 babies in our unit at any one time.
20:00We always make sure that we have a bed for every single baby that needs us.
20:03We've got specialised services here at the MARTA that you can't get anywhere else in Queensland.
20:07We are looking after babies as small as 22 weeks gestation.
20:10And last year, our smallest baby was 360 grams.
20:14So, we have a lot of really little, really vulnerable babies here.
20:18But involving the families in that as well, they have to be the centre of the care that we provide
20:21because they go on this journey with us.
20:23Yeah.
20:24And it's such an emotional rollercoaster.
20:26It is.
20:26Obviously, to keep those babies alive, people have no idea just how much equipment is actually
20:31involved and how that has to also be updated, that equipment.
20:35Having to have that equipment specialised for the size of patient that we're dealing with
20:39is very high tech.
20:40So, yeah, there's a lot of R&D.
20:42There's a lot of changes that goes on to ensure that that equipment is maintained,
20:45it is up to date, and that we're using the best equipment at the right time for the right babies.

21:28You can see your darling twin girls here, Sophia and Amelia,
21:31and they're looking great, but that's obviously a long way away from where you started.
21:35Tell us a little bit about your journey.
21:37Yeah, look, it was a long IVF journey to conceive in the first place,
21:41and then the pregnancy was a little bit rocky towards the end.
21:45We had a complication that essentially meant that infection was a real risk.
21:50They came at 24 weeks and five days, which was just past viability.
21:56Yeah, I think the first six weeks was probably the most difficult.
21:59Yeah, obviously with the lung issues with premy babies,
22:04and then battling with infections and things of that nature, it was quite tough.
22:09They were born at 615 grams and 659 grams.
22:13Yes.
22:14I mean, that's hard to wrap your head around.
22:15So tiny, yeah.
22:17What was it like when you looked at them and they're that little,
22:19and you can't really touch them and be with them, you know?
22:22It was scary, to be honest.
22:24Yeah.
22:24Yeah, like, you just don't expect to see your baby looking so vulnerable and small.
22:30And you've obviously been here the entire time, so over a hundred days?
22:33A hundred days today, yeah.
22:34A hundred days today?
22:3539 gestation equivalent, so...
22:38Oh my gosh, so it's not even at the due date.
22:40Yeah, that's right.
22:41The team here have been amazing.
22:44Amelia was quite unwell at Christmas time.
22:47Yeah.
22:48Essentially sepsis, and we didn't know if she was going to make it,
22:51but amazingly she pulled through and the team were so onto it.
22:56But not only that, they're just so kind and supportive to us
23:00and they can see when we're having a hard day
23:02and they know what to say and how to support us
23:05and just the way they talk to the babies too, you know?
23:10What are the milestones that have been where you've started to breathe a bit easier?
23:14I think when they got to a kilo, that felt really big.
23:17Everyone was excited and we brought in some cupcakes to share with the nurses
23:21to say thank you for all that they've done for us.
23:23Yeah.
23:24And I guess the first cuddle was probably the really first one.
23:28Yeah, that skin-to-skin contact, it's just so important.
23:30Well, thank you for sharing your story.
23:33And look, we're so excited and have everything crossed that you get to go home soon
23:37and it's everything that you hope that it will be.
23:40I really appreciate that.

24:03Now, you can see that a lot of work has gone into creating a magnificent entrance to the home.
24:08And when you're working with grand proportions like this,
24:11then why not dress up the area with big, bold pots
24:14and the perfect palette of plants to welcome you home in a big way.
24:23When you're dealing with a large area like this, the quickest way to make a really good impression
24:28is with a big cluster of pots like this.
24:30Now, I call it a family of containers because they've all got the same texture as well as the same
24:36colour,
24:36but they come in different sizes, so it'll really allow me to do some nice layering with the planting.
24:42And I've gone for a dark grey colour to contrast with the white of the home
24:46and I've used this beautiful pebbled texture which just adds a little bit more visual interest.
24:51And then we're going to repeat the pattern on either side so that this will be a lush green entrance.
24:56But now the fun part, the plants.
25:05When you're planting in pots, everything is on display,
25:07so you really want to make sure that those colours and textures work well together.
25:11And one of my favourite things is to go to your local garden centre
25:14and lay out the plants you're thinking of using.
25:17So I put them on a trolley or on the ground like this
25:19and just see how the plants play off each other.
25:22So for example here, we're going for a really lush tropical green look
25:26to go with our modern country feel home.
25:28And I'm choosing shades of green in the foliage that really do complement each other.
25:56Now doesn't that look more inviting already?
25:58So we've made a real feature of that large pot at the back with this beautiful frangipani
26:02because nothing says tropical beauty like this plant.
26:05And this is a variety called Darwin Yellow.
26:08So as the name suggests, bright yellow blooms with touches of creamy yellow
26:11and an exquisite fragrance.
26:13And then in our second largest pot, I've used a combination of flowers and foliage.
26:18So at the back here, I've got a beautiful variegated ornamental ginger.
26:22So it does have a pinky red flower, which is pretty,
26:24but it's that green and gold foliage that I love.
26:27And I've complemented it with a beautiful Ixora Prince of Orange,
26:31which has these really vibrant orange blooms from spring all the way through to autumn.
26:36I've got some splashes of colour in here with some beautiful bromeliads.
26:40And I've planted the front of this pot out with dichondra,
26:42which will cascade down the side and soften the edges of the container.
26:46And then to finish it all off, I've got a beautiful diplodina here.
26:49It's got white trumpet-like flowers with a beautiful yellow centre.
26:52Nice sort of rambling habit, but you can keep it more compact
26:55if you prune it back after flowering.
27:08Well, we started with an impressive entrance,
27:10and now it's even more impressive.
27:13Just look at what the right collection of pots,
27:15some colourful foliage and vibrant blooms can do.

30:19I mean, and we're just a stone's throw
30:21from one of Australia's most picturesque towns.
30:23This place really does have everything.
30:25Outdoor living, terraced areas, basketball, teppanyaki hut, fire pit,
30:31all tied together compositionally with that 25-metre lap.
30:34I can even see you back in it.
30:36I don't think there's much demand for that.
30:37But thankfully, there is a lot of demand for tickets
30:40for this Mater Prize home package worth $6.7 million.

30:44This hinterland hideaway really is a hero of a home.

31:00I love entertaining outdoors.
31:02And look at how perfect this setup is.
31:06Now, when you're entertaining outdoors,
31:07you want to keep it simple
31:09so you can get into the conversation with your guests.
31:12And today, I'm making my Middle Eastern eggplant and halloumi salad.
31:21These are the eggplants I got from Falls Farm.
31:24I love using local produce.
31:27So I'm going to start off with slicing the eggplant.
31:33I've got the grill on a high.
31:36So you want that to really heat up.
31:39Now, before we start grilling them,
31:41I'm going to season them with olive oil, salt and pepper.
31:45While I'm here, I might just make a few incisions.
31:50And the reason why I'm doing this is
31:52I want the olive oil to soak through the eggplant.
31:57Good, good glug of olive oil.
32:01So in that goes.
32:04And now, skin side up onto the grill.
32:11Well, the rain is definitely coming in,
32:15but guess what?
32:16I'm well protected.
32:20While that's cooking,
32:22we're going to now do the halloumi.
32:24With the halloumi,
32:25I'm just putting it straight onto the hot plate.
32:28What I love about halloumi is that it holds its shape
32:32and it turns a beautiful golden crisp brown on the outside
32:37and then a little bit kind of gooey in the inside.
32:43Now, look at that.
32:44That is the chow we want on the eggplant.
32:49The little trick of knowing whether your eggplants are ready
32:53and cooked right through
32:55is when you see the oil seeping out of the eggplant,
33:00that means the eggplant is cooked.
33:02I'm just going to check on the halloumi.
33:04That's nice and golden.
33:06Flip them over.
33:11And this will only take about a minute or so.
33:14I'm going to set this aside.
33:17And I'm giving up my life to this world
33:21only to be told
33:23I can't see
33:24I can't breathe
33:25No, I'm not where we'll be
33:29Now, on to our dressing.
33:32This dressing is punchy.
33:34Zata dressing.
33:36Zata is a blend of spice and herbs.
33:40Here, I'm putting about four to five tablespoons of it.
33:44It's got cumin.
33:46It's got oregano.
33:47It's got sesame seeds.
33:48It's just beautiful, beautiful flavour in this.
33:53Now, in the zata,
33:54there's a little bit of sumac already,
33:55but I want to add a little bit more punch into this.
33:59Sumac has a tanginess to it
34:01and I love that in a salad dressing.
34:05So, I'm going to add an extra teaspoon,
34:08like a heap teaspoon of sumac.
34:10And then I'm going to just add a clove of garlic.
34:15Take about half a cup of olive oil.
34:23Honey for sweetness.
34:26Let's say two or three tablespoons.
34:31Salt and pepper.
34:40And a whole lemon.
34:46I've got some chilli flakes here.
34:49And if you know me,
34:51I like my spice.
34:53But if you don't like spice,
34:56you can just not have it.
34:58Give it a good whisk.
35:04Now, to assemble it.
35:07Oh, that's my cue.
35:10Any chance to cook with you, Clarissa.
35:12I am here with pearls on.
35:13Well, you can help me assemble it.
35:16Yeah, great.

35:18This is a Middle Eastern-inspired dish.
35:21Yeah.
35:21So, herbs is the hero of the dish.
35:25Also, we've got chopped capsicum.
35:27And then we're using the cucumber
35:29that we got from False Farm.
35:31I love a little bit of red onions in it as well.
35:34So, that's going to sort of give a nice bite to it.
35:38Yum.
35:39And here I've got some chopped parsley
35:43and chopped basil as well.
35:46Lots of flavours in here.
35:47Perfect.
35:48Yeah, we're almost done.
35:49We can go in with the halloumi.
35:52I do love halloumi.
35:55To be honest, there's not much I don't like.
35:59Let's put the parsley on
36:02and then some basil.
36:05Then, for crunch,
36:07I've got Lebanese fried bread.
36:11So, with the Lebanese fried bread,
36:12a little bit of oil in a pan.
36:14Yep.
36:14Pull it apart.
36:15And a couple of minutes, you have fried bread.
36:18Yeah, it doesn't take long at all, does it?
36:19No.
36:20But look at that.
36:21Even listening to you put that into the salad,
36:23you can hear how crunchy it is.
36:24You can put the dressing.
36:26Okay.
36:27So, drizzle it all up.
36:28Yep.
36:29Drizzle.
36:29Go.
36:31And then we're good.
36:32One more.
36:33There we go.
36:34And here, this is just because I had dukkah available.
36:39Now, if you don't have dukkah,
36:41you can use chopped almond or some pine nuts.
36:44See, dukkah's a great one for salads
36:45for people who are gluten-free as well.
36:47Also, last but not least,
36:50some pomegranate.
36:51Just when you thought you couldn't add
36:52any more colour to this salad, you have.
36:54Let's dig in.

40:35of using native plants.

40:38which is just great.
