01:32But Florida's most famous sea creatures aren't playing ball.
01:36We've been on the boat for about 20 minutes now. No dolphins yet.

01:51Horses are big business in Florida.
01:54Year-round sun and state tax breaks means it's a great place to open the stables.
01:59And that's exactly what Laura and her parents Diane and Huey did near the town of Groveland
02:04after emigrating from Scotland 20 years ago.
02:08We didn't have the stables to start with.
02:10The horses were turned out around the house.
02:14You were sitting drinking your coffee in the morning over here
02:18and you're taking a sip of the coffee and you look and the horse is right up at the window.
02:26It's just grew arms and legs instead.
02:29The stables are now home to 26 horses,
02:32some of them rescues which Laura rehabilitates and trains.
02:36That's it. All done.
02:39As well as their stables,
02:41their 65-acre ranch includes a tiki hut they rent out for parties
02:45and a separate wedding venue.
02:48This is the land of opportunity.
02:50If you can work for yourself,
02:52you can be on your own property and working with your family,
02:56the people you know, you love and you trust.
02:59It's a win-win situation.
03:01It's yet another hot Florida summer's day
03:04and the family are busy preparing for the latest event at their wedding venue.
03:08So we're setting up today for a vow renewal that is happening tomorrow.
03:14Oh, yum, yum.
03:16Not the wedding, the weeding.
03:19Laura and her parents have held 15 wedding events of up to 280 people at their property.
03:26The receptions are usually held in a marquee,
03:29but tomorrow is a smaller affair on the venue's Tuscan patio.
03:34The patio is fabulous for an intimate wedding.
03:37It's a lovely setting.
03:39You're under cover.
03:40You're out of the sunshine.
03:41It's too, too hot to be out in the elements at this heat.
03:47I mean, it's not like Scotland.
03:48You've got the rain, the wind, you've got the snow,
03:51and that's just on a Thursday.
03:55Laura's already prepping tomorrow's reception dinner,
03:58using a larder containing the crown jewels of great British cuisine.
04:03So not just a regular pantry.
04:06It is literally like a walk-in wardrobe.
04:09We do like some of the staples from back home, definitely.
04:12Bovril Bisto, you've got Worcester sauce.
04:15You've got HP sauce.
04:17There are just certain things in life you can't live without.
04:20There's usually some Heinz beans, but they're obviously gone.
04:24Huey's obviously been at them.
04:26They've always used caterers in the past,
04:29but this is a smaller event,
04:30and it's the first time Laura has taken on all the cooking herself.
04:35The main course is beef bourguignon or chicken florentine.
04:39Both of them need to be prepped, marinated, and left overnight.
04:44Laura is a great cook.
04:46I've got the enviable task of being the taster.
04:51I do enjoy cooking.
04:53I don't enjoy cooking under stress.
04:55This is a three-course plated meal for 30 people.
04:59I could burn it.
05:01I've got 30 times the risk.
05:05Mum Diane is working to a tighter deadline,
05:08as another couple's coming to view the estate in just a few hours,
05:12as a potential venue for their own wedding,
05:14and she wants to show it off at its very best.
05:18Cloths will need to come back off to be ironed,
05:20but I just want to cover the tables just now
05:23and put out one place setting so that they can see an idea
05:26of what it's going to look like.
05:27Time is off the essence.
05:29But the muggy conditions mean her efforts are coming unstuck.

05:38It's so hot that the decorations are starting to fall off.
05:42We use a special decor tape.
05:45It's exceptionally sticky, but because of the heat,
05:48literally that tape is melting.

06:15Orlando is a tourist hotspot with a booming entertainment industry
06:19that offers plenty of opportunities for talented Brits.
06:23But that's not what drew Lester-born actor and singer Sarah here in 2001.
06:29What brought me to Florida was a man.
06:32Mr. Doug Dobbs, my husband.
06:35I met Doug in a show in Hastings.
06:38He walked into the dressing room,
06:40and I can honestly say it was like, poof!
06:43Instantly fell in love with him.
06:45He was a ballet dancer.
06:47He'd been in TV shows, commercials, and a singer.
06:50So we had a lot in common.
06:51It was quite a few hours later and after quite a few drinks
06:54that I found out that he actually owned a funeral home.
07:05Of all the dreams that I had growing up, I never dreamed.
07:09I want to marry a mortician.
07:12Never!
07:13It's not very sexy, is it?
07:16It's a gorgeous casket that is.
07:18Next year, this will be my 50th year in the funeral business.
07:23I got into it really young.
07:25I never fit the persona.
07:27All right.

07:30Doug's no regular undertaker.

07:33Because at night he swaps his funeral suit for a pair of blue suede shoes
07:37or a glittering jumpsuit in his Elvis or Neil Diamond tribute acts.
07:42Sometimes he takes little breaks from the funeral home and he will go on tour
07:45and he's also ordained so he can actually marry people as Elvis as well.
07:51Sarah left London's West End and a job as a TV presenter
07:54and followed her heart to Orlando
07:57where she began forging a career in show business, on stage and screen
08:01and in the big theme parks.
08:03It was a big gamble.
08:04It was a risk.
08:05But here I am.
08:0724 years later.
08:08Oh, it's a bit lopsided.
08:12I still do voiceovers, commercials, two to three plays or musicals a year.
08:18I'm also a host of a shopping channel and occasionally I work in a funeral home
08:23and help out with dead people so that is something I definitely didn't do in England.

08:31So I want mine to be real gold.
08:34With mine, it's a diamond.
08:35I can have one ordered and sent to the house if you like.

09:37This morning is the last group rehearsal for a very special charity show that they will be performing later tonight.
09:45I am organising a cabaret. I'm doing it to raise money for families dealing with pediatric cancer.
09:53It's curtain up at 7.30 and Sarah still needs to perfect each student's individual act.

10:01Students are really excited, but I am concerned because we don't have the luxury of time.
10:06You know how much pressure we've got on to get rehearsals done.

10:11But you know what?
10:12The most important thing is you guys have a fabulous time.

10:15This puts me a lot of stress, but it's all going to be worth it if we can make some
10:19good money for the charity.

10:36Conveniently placed just 30 minutes from Orlando, the booming satellite town of Davenport has become a worldwide hotspot for sun
10:44lovers.

10:48And Yorkshire couple Gary and Maria are midway through fixing up a bar they're managing to quench the thirst of
10:54the town's new inhabitants.
10:56Taps and Corks is our new venture. It's a big bar restaurant, 4,500 square feet.
11:01We've got that butcher's block to do today.
11:04There's a lot of new builds in this area, so it's got every potential to make a great success.
11:10We're going to make it an American sports bar, burgers, wings, NFL games, of course premiership and championship games as
11:16well.
11:17For us Hull City fans, yeah, you've got to watch Hull City.
11:20Gary and Maria first came to Florida on holiday from Hull as a young couple in the early 90s.
11:26We met at a bar in town and he asked me if I'd like to dance.
11:30The rest is history, innit?
11:31Yeah, here we are. Married 32 but been together 37 years.
11:36That's why I went grey early on.
11:40Being a long slog.
11:44In 2007, they made the move to the Sunshine State for good with their young daughters, Rhea, 12, and Darcy,
11:51who was just turning six.
11:53It's about having a better life for the girls.
11:56It did take a bit of a suede in that.
11:57Yeah, she got me drunk on absinthe and was looking out at in Florida.
12:01And the next morning when I woke up, I had an email from a realtor.
12:04So off we went on our little travels.
12:08This is all prepped now, ready for its sort of lacquer.
12:12Their daughters are both now married and live locally.
12:16Rhea and Darcy have recently made Gary and Maria grandparents for the third and fourth time, within just days of
12:23one another.
12:24We love our grandkids, love them.
12:26Family is everything to us.
12:29This is the pool room, looking pretty good in here.

12:33Gary's had to be a jack-of-all-trades to provide for his family.
12:37Back in the UK, I used to do a bit of pipe fitting, so I thought this was a good
12:40design.
12:41A bit of an industrial look.
12:42And the couple have been willing to try their hand at almost anything in Florida in search of their American
12:48dream.
12:49Including cleaning, property management, and pool maintenance.
12:53We've all done things what we didn't expect to do over here, but you just get stuck in and do

12:58The benefits are absolutely well worth it.

13:07Maria will be running the bar's food when it eventually opens.
13:11When it gets busy, it's going to be hustle and bustle. It's going to be really hot. But that's just

13:18Maria works two jobs and will be bringing her six years' experience at the nearby Best of British pub to
13:25this new bar.
13:27I'm here most days. I work at the Best of British most evenings.
13:31She's superwoman.
13:33I'm going to try and keep both jobs going, just because I really love it there. You have such a
13:37good banter.
13:38Gary's also got a side hustle.
13:41Too small for my gorilla hands. I don't want to spoil my manicure.
13:46I'm a tour guide as well. I'm doing a couple of tours a week. Clearwater Beach, NASA Space Centre, Crystal
13:52River Swim with the Manities.
13:54Tomorrow, Gary hangs up his tool belt and puts on his tour guide hat to lead a dolphin-spotting boat
14:00trip off the Gulf Coast.
14:03In Florida, hard work pays off, so it's important not only for ourselves, but for the future of the grandkids
14:09and the kids.

14:20An hour north in Groveland, Laura and her parents are still battling Florida's summer heat and humidity as they continue
14:27preparations for tomorrow's wedding vow renewal event.
14:31That is very hot.
14:33If you take a look up, you'll see that the heat is bringing all the decor down.
14:37The family are keen to grow the wedding side of their business.

14:46So, despite the sweltering conditions, Mum Diane is showing the venue to more prospective clients.

15:01Laura can personally vouch for the estate as a setting to tie the knot.
15:05The wedding venue was born out of my own marriage, my own ceremony to Freddie.
15:12Laura's marriage to husband Freddie was the first to be held here seven years ago.
15:18This is the area where you would be married. You can choose anywhere on the estate that this is the
15:24most popular place.

15:27Well, we got married under the oak tree. My husband is over here painting and getting the place ready as

15:35Freddie runs his own painting company, but pitches him at Laura's family business whenever he can.

15:54It doesn't just bring back memories, but it brings a little tear to my eye as well.

17:07She just has a huge heart and we want to give back to her.
17:11I'm making feed so I can be gone tonight, get a little rest for tomorrow and then we'll be all

17:21But before the big day, there's a horse at the stable that needs both Noelle and Laura's care and attention.
17:29Angel has somehow managed to give herself a central coronary ulcer.
17:34Basically, she has a hole right in the centre of her eye and there's treatments that need to happen today.
17:40It's not uncommon to see this type of injury.
17:45She could have poked herself in the eye with a piece of hay.
17:49As her first horse in Florida, Angel holds a very special place in Laura's heart.
17:55Angel and I have been together for 16 years.
17:57She's the reason that I get up in the morning. She is the reason we built the stables.
18:03I have a bond and a connection that I have never felt with any other horse.
18:08This is the affected eye. We are going to treat it by just pushing this appointment directly into her eye.
18:14This is an antifungal.
18:16If we didn't medicate and treat the eye, she has the potential of losing her eye completely.
18:23Laura has a busy 24 hours ahead of her.
18:27As well as Noelle's vow renewal to prepare for, Angel requires around-the-clock care.

18:35There are two medications that must be administered every four hours.

18:42I'm up twice during the night to be able to go and do this.
18:46But it's imperative for her to keep her eye.

22:54to earn a little extra cash as a tour guide on a dolphin-spotting boat trip.

24:14Gary's ability to spot dolphins will be crucial on this trip, as once they are located, Scott
24:20and Miles will maneuver the boat into a position to tempt them to come and play in its wake.

24:28You know, in that time, we have to see quite a few dolphins.
24:31If he doesn't catch sight of a dolphin, not only will the passengers go home disappointed,
24:37but it could also hit Gary's wallet.

24:43Standard 15% to 20% tips are expected in Florida's hospitality industry
24:48and are hugely important to Gary and his wife, Maria.
24:52We get a set pay, but we also rely on tips.
24:55It's just part of how we make a living out here.
24:58And I've got four grandchildren now, so it's going to be expensive.
