00:04Today on the show the best campfire potatoes you've ever had. Braving the weather for a few
00:10Gold Coast catches. And later on footy season is back as Cam Rainer joins us for a day on the
00:18green.
00:20First what makes a campground the best hip camp in the country? Let's find out.
00:24I'm Jana and I'm Brian and we're in the beautiful area of Imble. And we're on the hip camp called
00:32Maluka Park.
00:34In 2025 we were lucky enough to win best hip camp in Australia which absolutely you know blew us away.
00:42We were we were really honoured and um quite surprised but yeah. We can't believe it but we did.
00:52Maluka Park is our family farm and we've been here for 34 years
00:57and originally started with um drought master cattle and Arabian horses we're breeding them
01:05and then we progressed to camping 105 acres and we've got a kilometre of Yabba Creek frontage
01:13and uh yeah it's we just love it it's a beautiful spot. Heaps of space between all
01:21the campsites that's them most people love that and the green grass they just love the green grass
01:26and there's no bindis they don't like bindis. We've got a beautiful bush walk up in there and
01:32a lookout on top of the hill you can see all the campsite and all the mountains around
01:37and the kayaks and the kayaks. We select different sites as they book them in for if they've got
01:42caravan or they've got a motorhome or they've just got tents or whatever they've got and we put the
01:48caravans in their positions and the motorhomes in their positions and the tents take whatever
01:53position they want. Now you're not camped on top of each other you've got so much room.
01:59I think also people feel safe here you know we're tucked away down the back uh we greet everyone
02:07that comes in so we meet every single person that comes to camp and we take them to their site
02:12and
02:12we explain a little bit about the campsite and the rules and regulations and I think it's that personal
02:19touch too. You've got Lake Barumba so lots of things to do in the in the local area.
02:32So when I when we do the when we go out training the horses I was going up the roadway
02:38and in summer
02:39it's so hot and I said to Brian I am going to plant a row of trees so that when
02:43we go out riding
02:44we're in the shade especially when we come home.
02:54You do meet all sorts yeah different nationalities here a lot of times and people where they're from
03:00yeah I got another farm up the road and been up there all day and don't see anybody and something
03:05goes wrong real bad and just leave it behind and come home here and walk down there and talk to
03:11some
03:11campers and just completely forget about what I was doing and go back the next day and have another
03:15go at it that's all but that works really good for me too to get out and meet people.
03:20I think I think a lot of people that have actually camped here in summer have said you know we're
03:25coming back in winter um and of course the campfire gets you know they love a campfire it's a bit
03:31hard
03:31in summer when it's 38 degrees and it's the humidity is high but.
03:35winter's just as good as the summer really but the the water's a bit colder that's the only difference.
03:45If you ask us there's not a lot that can cure campsite hunger like a good campfire cook-up.
03:51Cooking over coals just makes everything taste better. Add a camp oven into the mix and you're
03:56really cooking. The key to a good camp oven though is the cow. I'm sure there are plenty of camp
04:02ovens
04:03out there that have stood the test of time as we know if you look after your cast iron it'll
04:08look
04:08after you. After you've used your camp oven for dinner or in my case a damper there's a few things
04:14you should know before launching into cleaning it. All right first tip don't use detergent it actually
04:20eats away at all the oils inside the cast iron and absorbs into the pores so the next curry that
04:25you make
04:25is going to taste like soap. All you need to do is get some water to rinse it out and
04:30a gentle brush or
04:31some paper towel to remove any stuck on bits. Once that's nice and dry get yourself a bit of cooking
04:36oil and a paper towel and lightly coat the inside of the oven. You can also do this with spray.
04:42And that's it easy as that ready for your next trip.

05:06It's that time of year and the weather's cooling down and that means for me
05:11campfire cooking and I love cooking over the flames. We're going to be doing the world's best
05:16crispy campfire potato. There's a little trick I'll show you in a sec.
05:25Typically you would put your potatoes in cold water and bring them to the boil in cold water
05:30and that's so you're going to even cook throughout your potato. But today we want to make the outside
05:34of our potatoes as soft as possible so we're going to get them into boiling water. A nice pinch of
05:40salt
05:40because you want to season those potatoes really well through the whole cooking stage.
05:45Now the secret ingredient to this dish is bicarb soda and what that does is it makes the water really
05:51alkaline and the alkaline breaks down the starch in the potato on the outside of the potato it makes
05:55like a starch paste and that becomes really really really crispy when you fry them off.
06:05Lid on 10 to 15 minutes.
06:11You can see they've broken up a fair bit. The skin has released itself from the actual potato itself.
06:20And then we're just going to go in with the potatoes. Be careful.
06:24Now you want this quite hot and we're going to go seasoning again. So we season the water, we're going
06:29to season the actual flesh of the potatoes now. Really important part.
06:37The key to cooking your sausages on a skillet is not too hot. You can't really go too low unless
06:44there's no heat at all. But if you go too hot, you're going to burn the outside and you're not
06:47going to cook on the inside and you do not want that.
06:54Always have veggies on hand. So I've just got a few baby capsicons here. I'm just going to throw
06:58them in with the pork sausages. So with canned cooking, it's not always about heat, heat, heat.
07:09You want to be able to modify and temper it your heat a little bit. So that's why we've got
07:13the steak
07:13here. And what that does, it allows us to bring these up and down. We want to give those potatoes
07:17enough time to get really crispy. We don't want them to burn. You can see there now, they're just going
07:23so crispy. Just before you finish cooking into the potatoes, you want chopped parsley,
07:30a bit of rosemary and some garlic cloves just to bring out those flavors.
07:41So they're those skins that I said to leave on. They kind of fall off and they just create
07:44these little bits of extra crispy potato, which is what we want. And that there, ladies and
07:55gentlemen, is the world's best campfire crispy potatoes, pork sausage and a bit of veg. The
08:00perfect winter snack. Gold Coast is known for its glitz and glamour. Big, loud and fun. And that
08:09energy doesn't stop its surface paradise. Water parks, bars, pools. It's a great location across
08:16the road from Movie World, Topgolf and Wet n Wild. Everything's nice and clean. Get dryer, washing
08:22machine, good water parks, good community, good food. It's great. And there's really big slides there too,
08:29so you don't have to go to Wet n Wild. You just have fun in you if you wanted to.
08:33So we've got a 200 series
08:35and then a Lotus Trooper 236. And we bought the caravan about a month ago, just for camping and
08:43and sporting around Australia and just a bit of family activity. So we have a hammock over there.
08:51We have our chairs kind of set up here. This is kind of where we eat dinner at night. We
08:57put a
08:57projector up there sometimes for movies just before bed. Yeah, we like to ride around a lot to the
09:04jumping pillow and pool and things. 21-foot Kokoda caravan. We only came from Brisbane this time,
09:11not far. With the ramp. We're in a camper trailer before that, so it's nice to have the luxury.
09:18And then before that was a tent? Before that was a tent, yes.

09:28Actually, I don't have one. Oh, I know what Millie's is.

10:05The weather may not be ideal, but when has that stopped me?
10:09My man with good mate, Beau Sawyer.
10:13So we've just left Jacob's World. We've traveled 15 minutes. Yeah, a lot very far mate.
10:18Down to the flat here. Now we're going to chase a species today that we both regard,
10:22but I reckon it's the most targeted species. The family's probably chasing the rubbers and pricks.
10:27Yeah, absolutely.
10:27And we're using soft plastics? We are, mate.
10:33We're on the flats targeting, well, flathead.
10:36So what's going to happen, as that tide goes up, all that bait fish,
10:39all those bait fish are going to push up into those mangroves.
10:42So those flathead are going to sit along these mangrove lines.
10:45Yep.
10:46And what's going to happen soon, hopefully, as that tide runs out,
10:49that bait has to move off as well.
10:51Yeah.
10:51And that's when the flathead will feed very hard along that edge,
10:54smacking all the bait that's coming over.
10:55Well, usually you want to try and match the hatch.
10:58So whatever size bait you see flicking, that's the lure you want to throw.
11:01Yeah.
11:01We've been seeing a lot of bait sort of in that size at the moment.
11:04So that's why we're using those little three-inch Z-Mans.
11:06Really good consistent lure in that colour as well.
11:09So motor oil or midnight oil, really good colour.
11:16Oh, yes, that's a monster, mate.
11:23That was an 80-plus, unfortunately, mate.
11:26That was huge.
11:28Unlucky.
11:29What did we do wrong there?
11:31Nothing, mate.
11:32Sometimes they're just better than us.
11:34I guess the timing just has to be right.
11:38In southeast Queensland, we actually prefer those cooler months, mate,
11:41when that water temp's a bit lower.
11:43So that June to July is an excellent time to get plenty of numbers.
11:47Yeah.
11:47And then we get a really good spawning bite around September, October,
11:51when the fish actually head out quite deep.
11:57He's well hooked, bro.
11:58Okay.
11:59Yeah.

12:01Come on, little fella.

12:07Okay, well, I'm going to take that.
12:11Because, yes, it's raining.
12:12I've brought the weather with us.
12:13And as you saw a little bit earlier,
12:16the boat was estimating I may have hooked one in high 80s.
12:20That was a proper fish.

12:22And I haven't been able to get over it.
12:23Disappointment.
12:24So now I've got this nice little one, but I'm still happy.
12:27So we've got two very nasty spikes here on the head.
12:30So you want to keep your hand away from there.
12:32And what we do is we just...
12:33There's a little indent in there I can press on it,
12:36and that will actually subdue the fish a little bit.
12:38We'll get that hook out.
12:41That's it.
12:43That's my little flatty.
12:44So the rough rule of thumb is you want to fish light enough
12:48that you can still get to the bottom.
12:49So we're running 1.6 here, which we'll comfortably get on the bottom
12:53because we're only fishing in about a metre's water.
12:55We could go a bit lighter, mate.
12:56But in that 1.6, especially in this wind,
12:59we want something a tiny bit heavier.
13:01And rain.
13:01Yeah, we're copping it all at the moment.
13:09Mate, we're outfishing me a bit here.

13:28But when you come with a good guy, we just come out at the good stage of the tide
13:32and we've got a lovely flathead.
13:34So Moe's going to give me mid-50s for this one.
13:36But that is a good quality flathead.
13:38Oh, this is a better one.
13:41Excuse me, I'm trying to tilt to the creature case family bone, mate.
13:45Over the top of me.
13:47Oh, he's got a nice big grunter. That'll do.

13:59this is one species you can get.
