07:29The foraging people that I know that know how to do really good foraging, they're French.
07:34A lot of it is like a cultural approach.
07:36French cuisine has been developed for a long time.
07:38We don't even call it foraging.
07:40For us, it's just like one activity you do on the weekend with your parents or grandparents.
07:43The main question we have at Farmer's Market is like, is this mushroom is going to kill

08:16So this is a gardening show, but I find foraging and gardening very related.
08:23This is how humans used to get their food.

08:26But people just slowly, with farming, forgot about it.
08:30Like, I go to the farmer's market selling wild blueberries, and people are like, oh, they
08:35almost look like blueberries.
08:37And they say, like, they're the ancestor of the blueberry.
08:39And then people farm them, and they got, like, bigger berries.
08:42We always want to get, like, something better, bigger, faster.
08:47Sometimes bigger doesn't mean better.
08:49I tell that to my wife.

08:59One big difference between farming and foraging is the nutritious value of some of the plants.
09:04For example, a wild blueberry would have probably three or four times more antioxidants than the
09:09farmed ones.

09:24Foraging can be frustrating, but once you find something, it's so rewarding.

09:39A blueberry is from a family called Vaccinium.
09:42Those ones are Vaccinium alaskense, which is Alaskan wild blueberry.
09:46And those ones are the mountain huckleberry.

10:17Here, I would be definitely looking for chanterelles and lobster mushroom, probably.
10:22It's always so much better to start foraging with somebody that already knows.
10:26If you don't have that chance, once again, start with, like, a few basic spaces.
10:31Don't try to go too hard too quick, because that's how there is accidents and poisoning and
10:35stuff.
10:36And get a couple of books, but never rely on any special tip to say if something is edible
10:41or not.
10:42You need to learn it properly.

10:54So this one is a chanterelles.
10:57Mushrooms can't do any photosynthesis, so they need to get their food from somewhere.
11:01They're going to be relying on trees or plants to get the food, because the plants are doing
11:04the photosynthesis.
11:05The mushrooms, they're going to attach themselves to the roots of a tree, with what is called
11:11the mycelium of the mushroom.
11:13The mycelium is actually the main organism of the mushroom.
11:17So here is a good example, actually, of some mycelium that has been, like, developing into
11:22that rotten log.
11:23Most of the mushroom life is mycelium.
11:27Imagine that underneath the soil here in the forest, there is a tree with branches, and
11:33that tree would be, actually, the mycelium.
11:35The mushrooms get food from the tree, and the tree partially get food and water from the
11:39mushroom.
11:40And what we see as a mushroom is a reproduction part of the mushroom, the fruit body, and
11:47that fruit body is going to really spore.
11:51Look at this.

11:54Don't step there.
11:55That's quick mud.
11:59So here, we actually have two different spaces of chanterelle.
12:02So this one is a yellow chanterelle.
12:04This one is a white chanterelle.
12:06You won't find them in supermarkets or anywhere.
12:09You will always find the yellow, because the white tend to bruise orange really quickly.
12:13So the shelf life is not as good.
12:15But the white chanterelle is really, like, firmer and meatier.
12:19And last year, we actually tried to do a vegan pulled pork.
12:22So you basically shred them, and the texture is really fibrous, the same than chicken.
12:27So try this one, you will see.
12:28That's edible.
12:29Yeah.
12:30But it's kind of peppery.
12:32Like...
12:32I like it, though.
12:33Some mushrooms, they find raw.
12:35Some of them are not.
12:36Like, you can't eat a morel raw.
12:38If you eat too many, it's likely you're going to have trouble to digest them.

13:40Many prized edible mushrooms have risky lookalikes, like chanterelles.
13:45And then there's Boss, chanterelles, King Belit.
13:49And then there's Lilac, Brown Belit, Hen of the Woods, and, of course, Berkley's Polypore.
13:57It's important to never consume anything foraged unless you are absolutely certain of its identity
14:03and edibility.
